  • Simmer 1 cup ketchup, 1/2 cup cider vinegar, 3 tablespoons each molasses and brown sugar, 1 tablespoon each dried mustard and soy sauce, 2 teaspoons Worcestershire sauce, 1 cup water, and kosher salt and pepper to taste until thickened, about 30 minutes. Preheat a grill to medium-high on one side. Season 4 bone-in, skin-on chicken breast halves with salt and pepper. Grill over direct heat until golden and crisp on both sides, about 5 minutes. Transfer to a bowl and toss with 1 cup of the sauce. Place on the cooler side of the grill; cover and cook, basting once, until the meat is glazed and reaches 165, 25 to 30 minutes.

4 thin-cut chicken breasts (chicken cutlets)
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
1 teaspoon cayenne pepper
1 large egg, lightly beaten
1/4 cup buttermilk
1 tablespoon plus 1 cup Louisiana-style hot sauce
1 cup panko breadcrumbs
6 tablespoons salted butter, melted
1/4 cup olive oil
4 toasted buns
1/2 cup pickle chips, drained

Steps:

  • Sprinkle the chicken breast with salt and pepper and set aside. Mix the flour and cayenne in a shallow dish or bowl. Stir together the egg, buttermilk and 1 tablespoon hot sauce in a second shallow dish or bowl. Add the breadcrumbs to a third shallow dish. Coat each chicken breast by dredging in the flour mix, then dipping in the egg/buttermilk mixture and then finally in the breadcrumbs. Set aside.
  • To a bowl, add the remaining cup of Louisiana hot sauce and 2 tablespoons of the melted butter. Mix together and set aside.
  • Heat the olive oil and remaining 4 tablespoons butter in a large skillet over a medium heat. When the oil is hot and the butter has melted, add the chicken pieces to the skillet and fry until golden and cooked through, about 4 minutes per side. Remove and set aside. One by one dip the crisp chicken into the Louisiana hot sauce and butter mixture, turning to coat completely.
  • Serve on the toasted buns with tons of pickles.

COOKING PREPERATION

1 bunch(es) green onions

SWEET TANGY BBQ SAUCE
2 tablespoon(s) olive oil
1 - yellow onion, diced

3/4 cup(s) reserve pineapple juice from can

Steps:

  • For spicy chicken rub add all spices into a bowl and stir well. Pull skin off chicken legs. Cover both sides of chicken with spicy rub and set aside. Turn oven on to 350 degrees.
  • In large heavy oven proof pot heat up oil on med-high heat. After oil is transluscent add marinated chicken to pan. Allow to brown on both sides about 8 minutes each side. Move chicken around pan occasionally. Add the green onions, sweet and spicy peppers, and thyme to pan. Stir vegetables around pan for 5 minutes. Add orange juice, lime juice, and pineapple chunks to pan. Stir bottom of pan to de-glaze. Cover with foil and lid and allow to cook in oven for 45 minutes or until chicken is 180 degrees.
  • While Chicken is cooking, heat sauce pot on medium with olive oil to begin bbq sauce. When oil is transluscent add yellow onion and garlic. Season with salt and pepper. Stir occasionally and allow onion and garlic to sweat in pan for 3 to 5 minutes. When garlic and onions have changed color add the rest of ingredients to pot. Turn heat up to high and bring to a boil stirring frequently. When it comes up to a boil turn down heat to low-med and allow to simmer for 30 to 45 minutes. Stir occasionally. The finished product should be thick. When sauce has finished leave chunky or blend in food processor if you prefer a smoother bbq sauce.
  • When chicken is done cooking allow to cool. Start pulling chicken meat off the bone into a large bowl. Shred the pineapple also and mix with chicken. Then serve chicken and pineapple on hearty roll with bbq sauce.

1 cup Hawaiian style marinade
6 pineapple rings
6 slices provolone cheese
6 onion rolls, split
6 tablespoons thousand island salad dressing
6 leaves romaine lettuce
6 slices tomato

Steps:

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.
  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.
  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.
  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

1/4 cup packed brown sugar
2 tablespoons butter
1 tablespoon cider vinegar

2 tablespoons buttermilk
2 tablespoons mayonnaise

4 green onions, sliced
2 jalapeno peppers, seeded and chopped
1/3 cup lemon juice
1/4 cup honey

  • Prepare spicy marinade by mixing together all ingredients.
  • Wash chicken and pat dry.
  • Pour marinade over chicken to coat.

1/4 cup vegetable oil
2 tablespoons lime juice
1 teaspoon garlic, minced
1/4 teaspoon crushed red pepper flakes

1/4 cup red pepper, diced
1/4 cup red onion, minced
1 small jalapeno pepper, minced
2 tablespoons cilantro, chopped
salt and pepper, to taste

Steps:

  • Drain pineapple juice into a 1-cup measuring cup. Add oil, lime juice, garlic, red pepper flakes and sugar. Mix well to make the marinade. Place chicken in a large resealable food storage bag. Pour all but 1 tablespoon of marinade over the chicken. Seal bag. Refrigerate 30 to 45 minutes.

½ cup teriyaki marinade sauce
2 tomatoes, seeded and chopped
½ cup chopped onion
2 teaspoons minced jalapeno pepper

1 ½ tablespoons white sugar
1 tablespoon vegetable oil

Steps:

  • In a small bowl, mix the mustard, honey, sugar, oil, vinegar, and lime juice. Cover dressing, and refrigerate.
  • Preheat the grill for high heat.
  • Lightly oil grill grate. Place chicken on the grill, and discard marinade. Cook for 6 to 8 minutes on each side, or until juices run clear.
  • Arrange mixed salad greens on plates. Spoon some of the salsa over each salad, and sprinkle with 1/4 of the pineapple chunks. Break tortilla chips into large chunks, and sprinkle over salads. Lay some of the grilled chicken strips on each salad. Finally, drizzle dressing over each salad, and serve.
