SPICY CHICKEN WITH RICE & BEANS



Spicy chicken with rice & beans image

A simple chicken casserole with paprika, cumin and coriander served in a tomato sauce with basmati rice and kidney beans

515g pack skinless, boneless chicken thigh (6 thighs)
1 tsp paprika or smoked paprika
1 tsp ground cumin
1 tsp ground coriander
generous pinch of chilli flakes
2 tbsp olive oil
1 onion , halved and thinly sliced
2 garlic cloves , finely chopped
1 tbsp sugar
250g passata
100ml chicken stock or water
1 tbsp white wine vinegar
1 red, orange or yellow pepper , deseeded and roughly chopped
175g basmati rice
400g can kidney bean , drained and rinsed
few tbsp low-fat natural yogurt , to serve

Steps:

  • Cut 2-3 slashes in each chicken thigh, sprinkle the spices over and turn to coat. If you have time, cover and leave to marinate at room temperature for 2 hrs, or overnight in the fridge.
  • Heat half the oil in a large pan. Add the onion and cook for 4 mins. Stir in the garlic and cook for 30 secs more. Remove with a slotted spoon and set aside.
  • Add the remaining oil to the pan and sprinkle over the sugar. Cook over a medium heat until the sugar begins to caramelise. When it turns dark brown, add the chicken and cook for 4 mins, turning. Pour in the passata, stock and vinegar, then add the pepper, onion and garlic. Season and stir. Bring to the boil, reduce the heat, cover and simmer for 25 mins, stirring occasionally.
  • Meanwhile, put the rice in a saucepan, cover with water and add salt. Bring to the boil and cook for 10-12 mins. Drain and return half to the pan with half the kidney beans, then cover. (Run the other half of the rice under cold water, drain and leave until cold, then mix with the remaining kidney beans. Chill in a container for Thursday's recipe.).
  • Serve the chicken with the rice and beans, and spoonfuls of natural yogurt.

I think this spicy chicken noodles dish is perfect for using up leftover chicken, assuming it wasn't horribly overcooked in the first place. If you did want to use raw chicken, go ahead and chop it up, and stir-fry it for a minute or two before adding your vegetables.

1 large carrot, finely sliced or shredded
2 cups shredded green cabbage
1 red bell pepper, thinly sliced
2 jalapeno pepper, seeded and minced
½ cup chopped green onions
3 cloves garlic, finely crushed
½ cup chicken broth
¼ cup seasoned rice vinegar
1 tablespoon hoisin sauce
1 tablespoon soy sauce, plus more to taste
1 tablespoon ketchup
1 tablespoon brown sugar
1 tablespoon sriracha hot sauce, or more to taste
1 teaspoon red pepper flakes
1 (8 ounce) package dried rice noodles
1 pinch salt
8 ounces cooked chicken breast, torn into bite-size pieces
1 tablespoon sesame oil
1 tablespoon vegetable oil
½ cup freshly chopped cilantro

Steps:

  • Place carrots, cabbage, bell pepper, jalapeno pepper, green onions, and garlic in a mixing bowl.
  • Mix chicken broth, rice vinegar, hoisin sauce, soy sauce, ketchup, brown sugar, sriracha sauce, and red pepper flakes together in a separate mixing bowl.
  • Place dry rice noodles in a large mixing bowl. Cover with about 6 cups boiling water; add a pinch of salt. Stir from time to time until noodles are soft, about 10 minutes. Drain; cool with cold water. Drain thoroughly. Transfer to a mixing bowl. Add shredded chicken; drizzle with sesame oil. Toss to coat.
  • Heat large skillet over high heat; drizzle in vegetable oil. When oil is hot (almost but not quite smoking), add the vegetable mixture. Cook and stir until vegetables are hot and steamy, 1 or 2 minutes. Pour in sauce; cook and stir over high heat until sauce starts to bubble, about 1 minute. Add noodles and chicken. Cook and stir to blend ingredients and ensure ingredients are hot, about 1 minute. Remove from heat. Add chopped cilantro; stir.

16 oz refried bean, 1 can
1 cup spanish rice, cooked
1 cup rotisserie chicken, shredded
1 cup shredded mexican cheese blend

Steps:

  • Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked rice, rotisserie chicken, and cheese.
  • Fold in the left and right sides of the tortilla and roll it up from the bottom, tucking the bottom edge under the filling. Wrap in parchment paper and label. Freeze up to 1 month.
  • To reheat from frozen, wrap the burrito in a damp paper towel and microwave for 2-3 minutes, flipping halfway or until the center is hot. Let stand 1 minute before eating.

This maybe the the best chicken I've ever made. The recipe is very flexible to your tastes. I preferred mine to be spicy but you can easily change to suite your tastes. I love using the Dutch Oven because you don't have to worry about scratching a coating off and the heat is continual and gentle on the food.

8 chicken legs
2 tablespoons canola oil
fajita seasoning mix
1 (14 1/2 ounce) can chili beans
1/2 cup salsa
1 cup chicken broth
1 cup long grain white rice

Steps:

  • Start your baking oven preheating to 250 degree Fahrenheit.
  • Heat a Dutch Oven on your stove burner with the Canola Oil over a low flame.
  • Dry 2-3 the Chicken Legs with a paper towel.
  • Coat the Chicken Legs with the Fajita Spice Mix in a pie tin or similar container. The heavier the coating the spicier the chicken.
  • Place the coated Chicken Legs in the Dutch Oven and cover. Brown both sides of the chicken for 3-5 minutes. Don't crowd the chicken or the chicken will burn. Also the Dutch Oven will get hotter as you go so watch your browning time.
  • Remove the browned Chicken Legs and set aside.
  • Repeat the process until all the chicken is browned. You'll need to keep a thin coat of oil on the bottom of the Dutch Oven so add Canola Oil as needed between brownings.
  • Wipe out the hot Dutch Oven with a paper towel to remove the oil and unwanted spices. Leave some extra spice if you want the dish to be hotter.
  • Place the ingredients into the Dutch Oven in this order: Chili Beans, Salsa, Chicken Broth, Long Grain White Rice, and then the Chicken Legs.
  • Cook for 1 hour and 10 minutes or until the rice is cooked and the chicken's juices run clear. Don't peak if your can avoid it.

2 onions, sliced
2 red peppers, chopped
150 g hot chorizo sausage, sliced (optional)
3 teaspoons ground cumin

820 g canned tomatoes
1/4 cup tomato paste
1 cup chicken stock
620 g canned red kidney beans, drained and rinsed
