These Spicy Collard Greens are slow cooked in a bacon-flavored broth until tender and spiced up with some red pepper flakes and hot sauce.

2 pounds collard greens, (rinsed)
5 slices think bacon, (diced)
1 large onion, (diced)
3/4 cup chicken broth
3 tablespoons cider vinegar
1 tablespoon dark brown sugar
1 teaspoon red pepper flakes
1/4 to 1/2 teaspoon tabasco sauce or other hot sauce
salt and pepper

Steps:

  • Use a knife to cut on either side of the large rib running up each collard green leaf. Remove it and discard it. You don't need to go all the way up the leaf, just remove the thickest part. For smaller leaves, just remove the stem. Stack about 4 to 5 leaves, roll them up, and cut into 1/2-inch strips. Repeat with remaining leaves.
  • Cook bacon in a large pot over medium heat until crisp. Remove with a slotted spoon to a paper towel lined plate.
  • Add onion to bacon fat and cook over medium heat, stirring occasionally, until softened.
  • Add broth, vinegar, sugar, red pepper flakes, and tabasco sauce to pot. Stir to combine.
  • Add collard greens and use tongs to turn and mix them until they reduce in size some. Cover, turn heat to low and cook for 1 hour, stirring occasionally.
  • Before serving, sprinkle bacon on top and season to taste with salt and pepper.

6 cups water
6 slices bacon, chopped

1/2 teaspoon seasoned salt
1/2 teaspoon pepper

Steps:

  • In 4-quart Dutch oven, heat water to boiling. Add collard greens to water; heat to boiling. Boil 30 minutes; drain.
  • Meanwhile, in 12-inch skillet, cook bacon over medium-high heat, stirring occasionally, until crisp. Remove bacon with slotted spoon, reserving 1 tablespoon bacon fat in skillet. Drain bacon on paper towels.
  • In same skillet, heat reserved bacon fat over medium heat. Cook remaining ingredients in bacon fat 5 minutes, stirring frequently. Stir in collard greens and bacon; reduce heat to low. Cover and cook about 15 minutes longer, stirring occasionally, until collard greens are very tender.

2 cups water
4 ounces smoky bacon, sliced crosswise into 1/4-inch strips
8 pounds collard greens, stems and tough inner ribs discarded
2 large onions, chopped
3/4 cup coarse dry bread crumbs
1/4 cup plus 2 tablespoons freshly grated Parmesan
1 tablespoon minced parsley leaves
1 teaspoon minced sage leaves
1 garlic clove, minced
1 tablespoon extra-virgin olive oil
Butter, for greasing dish
2 cups heavy cream
Salt and freshly ground black pepper
3 large eggs, lightly beaten

Steps:

  • In a large stockpot, add the water and bacon and bring to a boil over high heat. Add the collard greens by handfuls, stirring until each batch is wilted before adding more. Bring to a boil and add the onions. Cover and simmer over moderate heat until the collards are very tender, about 40 minutes. Remove from the heat and let cool, then squeeze the water out of the collards until almost dry. Place collards on a cutting board and coarsely chop.
  • Meanwhile, in a food processor, combine the dry bread crumbs with the Parmesan, minced parsley, sage, garlic and extra-virgin olive oil. Pulse until just blended.
  • Preheat the oven to 350 degrees F.
  • Generously butter a shallow 4-quart casserole. In a large bowl, mix the collards with the cream and season with salt and pepper. Stir in the eggs until blended and spread the collards into the prepared casserole. Cover with foil and bake for 30 minutes. Remove from the oven and sprinkle the Parmesan crumbs over the collards. Return to the oven and bake for about 20 minutes longer, or until the crumb topping is golden. Preheat the broiler and broil the collards 10 inches from the heat until the bread crumb topping is golden brown and crisp. Serve hot. Tastes great with fried chicken.

1/2 red onion, sliced

3 each ham hocks
2 tablespoons salt
2 bunches collard greens - rinsed, trimmed and chopped
1 cup white sugar
2 tablespoons red pepper flakes

Steps:

  • Combine water, ham hocks, and salt in a large pot; bring to a boil. Boil for 30 minutes. Remove from heat. Remove ham hocks from the water and discard.
  • Add collard greens, sugar, and red pepper flakes to the water. Simmer over low heat until greens are tender, 2 1/2 to 3 hours. Serve immediately.

These Instant Pot Collard Greens with bacon are so delicious and easy to make!

4 slices of bacon, uncooked and chopped up
Oil (I used Avocado Oil, but Olive oil would work just fine)
1 cup diced sweet onion
1 pound collard greens, washed and sliced into 2-3 inch pieces
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon black pepper
Pinch of red pepper flakes (optional)
3 cups chicken broth
White vinegar (optional)

Steps:

  • Add a little bit oil to the pot of your Instant Pot and set to medium saute.
  • Yes, this bacon is not chopped up - but it cooks a lot faster and easier when it is ???? I ended up chopping it up after I took this picture.
  • Once the oil is heated, add bacon and cook until done. Remove and put in a bowl.
  • Remove and cook onions in the bacon grease and oil for about five minutes. Add garlic at the end and cook for about one minute - stir the entire time to prevent burning.
  • Remove onion and garlic and deglaze the bottom of the pan with a couple of splashes of water
  • Add the collards into the pot along with the bacon, onion, garlic and a little extra oil and saute until wilted
  • Add salt and pepper.
  • Add chicken broth and stir with the wilted collards.
  • Put the lid on the pot, seal it, and set to five minutes on the steam setting.
  • Once the timer goes over, quick pressure release all the pressure
  • Serve immediately - use a slotted spoon to serve. There will be a lot of liquid, so the slotted spoon is essential!
  • Save
  • Add a little vinegar if you desire!

Collard greens don't have the cachet of popular greens like black kale and rainbow chard. This is probably because collards have a stronger flavor and tougher leaf than many other greens. They do stand up to longer cooking, but they don't require it. In this stir-fry, they stood in for more traditional greens like Chinese broccoli or bok choy and cooked up crunchy. As a bonus, collards are a great source of calcium. According to the Harvard School of Public Health, a cup of cooked collard greens has more calcium than a glass of skim milk.

2 tablespoons chicken broth, vegetable broth or water
1 tablespoon soy sauce
2 tablespoons peanut oil, rice bran oil or canola oil
2 teaspoons minced ginger
2 garlic cloves, minced
1/4 teaspoon ground toasted Sichuan pepper or red pepper flakes
2 cups shredded red or green cabbage
1 pound collard greens, stemmed and roughly chopped
salt to taste

Steps:

  • In a small bowl or measuring cup, combine the rice wine or sherry, the broth or water and the soy sauce. Have all the ingredients within arm's reach from your pan.
  • Heat a 14-inch flat-bottomed wok or 12-inch steel skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add the garlic, ginger and pepper and stir-fry for no more than 10 seconds.
  • Swirl in the remaining oil and add the cabbage and collard greens. Turn the heat to high and stir-fry for 1 minute, or until the greens begin to wilt. Add the salt, toss together and add the soy sauce mixture. Stir-fry for 2 minutes, until the collard greens and cabbage are crisp-tender. Remove from the heat and serve.
