QUICK CURRY KETCHUP

- In a large saucepan, heat oil over medium-high heat. Add onion; cook and stir until tender. Stir in tomatoes; cook, uncovered, over medium heat 25-30 minutes or until tomatoes are softened., Press tomato mixture through a fine-mesh strainer; discard solids. Return mixture to pot; bring to a boil. Cook, uncovered, until liquid is reduced to 1-1/2 cups, about 10 minutes., Place cinnamon, celery seed, mustard seed and allspice on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string. Add to tomatoes. Stir in sugar and salt; return to a boil. Reduce heat; simmer, uncovered, 20-25 minutes or until thickened., Stir in vinegar, paprika and, if desired, chili sauce; bring to a boil. Simmer, uncovered, 10-15 minutes longer or until desired consistency is reached, stirring occasionally. Discard spice bag., Transfer to a covered container; cool slightly. Refrigerate until cold. Store in refrigerator for up to 1 week.

This spiced ketchup is ubiquitous in Germany, where it's slathered onto currywurst (sausage). It's popular in cities with German roots like Philadelphia and Portland, OR.

- Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring frequently, until softened without browning, about 5 minutes. Stir in the garlic and cook until softened, about 1 minute. Add the curry powder, paprika, mustard powder and salt and stir to evenly coat. Add the cider vinegar and Worcestershire, stirring with a wooden spoon to scrape up any browned bits. Stir in the ketchup and sugar, then bring to a boil and remove from the heat.
- Transfer the ketchup mixture to a blender along with 2 tablespoons water and blend until smooth, adding 1 more tablespoon water if too thick.
HOMEMADE SPICY KETCHUP
This is not as sweet as commercial ketchup; but it's great with our Vegetarian Burger.

- Pass tomatoes and their juice through a food mill or large-holed strainer into a bowl. Discard solids, and set tomatoes aside.
- Heat olive oil in a large heavy saucepan over medium-low heat. Add onion, jalapeno, and garlic, and cook until translucent, about 15 minutes. Add tomatoes and brown sugar, and stir to combine.
- Cut a double thickness of cheesecloth into a 7-inch square. Place cloves, mace, cardamom, peppercorns, star anise, bay leaf, and cinnamon stick in the center. Fold the sides of the cheesecloth around the spices, roll up, and tie with kitchen string. Add sachet and mustard to the tomato mixture, and cook over medium-low heat until mixture is reduced by two-thirds, about 25 minutes.
- Stir in vinegar, cayenne, lime juice, and salt. Reduce heat to low, and cook for 10 minutes. Remove sachet of spices, squeeze out into ketchup, and discard.
- Transfer ketchup to a bowl, and let cool. Cover, and refrigerate until ready to serve.
SPICY KETCHUP
Steps:
- Place the raisins in a small cup, cover with boiling water and let soak for 20 minutes. Drain the raisins and place them in the container of a blender. Add all the remaining ingredients and blend until smooth.
- Transfer the mixture to a small saucepan and simmer until thickened, about 20 minutes. Serve warm or at room temperature with ijeh.

CURRIED SQUASH FRIES WITH SPICY KETCHUP
You MUST give these fries a try. They are a low calorie fix for when you are really craving some salty fried goodness. Simple to make, they require a little TLC for crispiness but it is soo worth the effort. Serve with anything, but especially turkey burgers and sandwiches. You can dip them in anything you like and each serving of fries has ONLY 75 calories! Yum yum! Tips for crispy fries: 1. Soak the cut fries in salted water for at least an hour. I have no scientific reason as to why this works, but it does. The soaked batches crisped much better than the unsoaked batches. 2. Space fries at least 1″ apart on all sides. Overcrowding leads to sogginess 3. Flip fries halfway through the cooking time. Unfortunately, this has to be done by hand. Be careful cause they're hot. 4. Cook fries on a cooling rack. That way air circulates around them as they cook. 5. If you don't have a cooling rack or (like me) only own a small one, cook the fries on parchment paper. Again, I have no explanation for this except it works. The batch I baked on tin foil did not come out well. 6. Pat fries completely dry before tossing with olive oil. - Preheat oven to 350.
- Soak fries in water for at least an hour.
- Pat fries completely dry.
- Place fries in a gallon sized Ziplock container.
- Add olive oil and curry powder to the bag.
- Shake until the fries are evenly coated with oil and curry powder.
- Arrange fries on a parchment lined cookie sheet approx 1″ apart.
- Bake for 15 minutes.
- Flip all the fries over and then bake another 15 minutes.
- To make the ketchup, whisk together ketchup, cayenne, turmeric and coriander.
- Serve fries hot with ketchup.

- Heat the oil in a small saucepan and cook the onions just until soft and translucent. Do not brown them. Add the garlic and cook for another minute. Add the curry powder, paprika, cloves and cinnamon and cook for 30 seconds. Add all remaining ingredients and bring to a simmer. Reduce the heat to medium, cover and simmer for 15 minutes, stirring occasionally. Use an immersion blender or transfer to a blender and puree until smooth. Let the mixture cool completely and then refrigerate for a day before using to allow time for the flavors to meld.
- If the sausages are not pre-cooked, first poach them in lightly simmering water. The next step is to grill/fry them to finish them off. You can either grill or pan-fry the sausages.The important thing is to cook them until they develop a thick and crispy browned outer crust. (So if you're pan-frying, be sure to use enough oil.) Some curry wurst stands also cut vertical slits along the currywurst to prevent them from bursting open while cooking and then the sausages are sliced along the lines into bite-sized chunks before serving.
