Made with mozzarella cheese and Italian seasoning, this is a different twist on everyday meatloaf! Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
- Bake in the preheated oven approximately 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).

ITALIAN MEATLOAF WITH GARLIC HERB GLAZE

- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
- Combine the meatloaf mix, breadcrumbs, mozzarella, sundried tomatoes, Parmesan, parsley, basil, oregano, Worcestershire, eggs, onion, 1/4 cup of the ketchup, half of the garlic, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands and mix together until combined well.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5-inches. Bake the meatloaf for 30 minutes.
- Meanwhile, stir together the vinegar, brown sugar, Italian seasoning, the remaining 1/4 cup ketchup and garlic in a small bowl. Brush the top and sides of the meatloaf all over with the garlic-herb glaze. Continue to bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

SPICY ITALIAN-FLAVORED MEATLOAF
This is a cheesy Italian-flavored meatloaf with a little bit of a kick to it... so if you like full-flavored food, this is one for you!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch (or larger) loaf pan with nonstick spray.
- Mix together ground beef, bread crumbs, mozzarella cheese, Parmesan cheese, ketchup, eggs, hot sauce, garlic salt, thyme, salt, and pepper until well combined. Press mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, about 1 hour 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Remove from the oven and drain any fat from the pan. Let stand for 15 minutes before serving.

BEST EVER ITALIAN-STYLE MEATLOAF
This is the only meatloaf recipe I use. The cheese makes the meatloaf very moist and tasty! The herbs impart a wonderful flavor as well! I freeze this after slicing in a container and reheat in the microwave for a quick dinner.

- Preheat oven to 350°F.
- Combine all ingredients in a large bowl, mix well.
- Press into a 9x5 inch loaf pan, and cover with foil.
- Bake for 1 hour, uncover and pour extra sauce out.
- Return to oven and bake for 5-10 minutes.
- Leave in pan for 10-20 minutes, this will prevent the meatloaf from falling apart when cut.

- In a large bowl, mix the first five ingredients (preferably by hand).
- In a baking dish 9"x5"x2", layer 1/2 of the mixture.
- Put 1/2 of the Mozzarella cheese and all the mushrooms on top of this layer, and 1/2 of the sauce.
- Put the other 1/2 of the meat mixture on top of this and then cover with the remaining sauce and Mozzarella.
- Place in the oven at 350 degrees for 1 hour.
- At the last 5 minutes or so, place the Provolone cheese on top.
- Let stand for 5 minutes to settle and cool.

- Preheat oven to 375°. In a large bowl, combine the eggs, 3/4 cup pizza sauce, bread crumbs, onion, green pepper, oregano, garlic, salt and pepper. Crumble beef and sausage over mixture and mix well., On a piece of parchment, pat beef mixture into a 12x10-in. rectangle. Layer the ham, 1-1/2 cups cheese and mushrooms over beef mixture to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling parchment away as you roll. Seal seam and ends. Place seam side down in a greased 13x9-in. baking dish; brush with remaining pizza sauce., Bake, uncovered, 1 hour. Sprinkle with remaining cheese. Bake until no pink remains and a thermometer reads 160°, 15-20 minutes longer. Using 2 large spatulas, carefully transfer meat loaf to a serving platter. Freeze option: Securely wrap and freeze cooled baked meat loaf in foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

- Place the breadcrumbs and milk in a large mixing bowl and let the bread soak while you prepare the rest of the ingredients.
- Pre-heat a skillet over medium-high heat. Add 1 tablespoon of olive oil, and cook the onion and garlic until tender but not browned – about 4 to 5 minutes. Transfer the onions and garlic to the bowl with the breadcrumbs and milk.
- Add the ground meats, roasted red pepper, spices, parsley, eggs and Worcestershire sauce to the bowl and mix everything together with your hands just until everything is combined. Transfer the mix to a meatloaf pan or baking sheet. If you like a meat loaf with soft sides, leave the mix in the loaf pan, ideally one with a perforated bottom and a pan below to catch the drippings. If you prefer a harder crust on the sides of your meat loaf, invert the mix onto a baking sheet. Overlap the tomato slices on the meatloaf and drizzle the remaining tablespoon of olive oil on top.
