RED HOT MARGARITA
Steps:
- For the Mexican simple syrup: Bring the sugar, cinnamon sticks and 1 cup water to a boil in a small pot and cook for 2 minutes. Turn off the heat, then allow to cool to room temperature. Strain. (Makes approximately 1 cup.)
- For the red hot ice cubes: Add the cinnamon candies, sugar and 1/2 cup water to a small saucepan over low heat. Cook until completely melted, then pour over ice cubes in a small rimmed baking sheet and freeze, stirring and scraping up the ice every 30 minutes, until completely frozen.
- For the rim: Combine the salt, sugar, cinnamon and chile-lime seasoning in a shallow dish. Set aside.
- For the margarita: Add 3 ounces Mexican simple syrup to a cocktail shaker, then add the lime juice, orange juice, tequila and a pinch of salt. Add plain ice cubes, then cover and shake.
- Rub the cut side of the lime half along the rims of 4 rocks glasses, then dip the glasses into the rim mixture. Fill with the red hot ice. Strain the margarita into the glasses. Garnish with orange slices and serve.
SPICY N' SWEET RED CHILE-GUAVA MARGARITA
My favorite Mexican restaurant in Baltimore has a spicy/sweet margarita that is very similar to this one; in honor of Cinco de Mayo, I am posting it here! I like the idea of rimming the glass with a salt-sugar combo... Prep time is infusion time for the tequila.

Steps:
- Make the tequila at least 48 hours in advance: Place red chiles in tequila. Allow to infuse for 2 days or more.
- Combine tequila, Triple Sec, guava nectar, orange juice, and lime juice in a pitcher and reserve in the refrigerator until ready to use.
- To serve, rim a rocks glass with salt by rubbing a lime wedge around the outside and then dipping the glass in salt.
- Fill the glass with ice, add the margarita mixture, and garnish with a skewered chile pepper (if using).

- Run the edge of a rock glass with lime, then dip in a shallow dish of Chile-Lime Rub. Fill the glass with ice.
- To a cocktail shaker with ice, add the tequila, lime juice, poblano liqueur and triple sec. Shake well. Pour into the glass and garnish with a lime wedge.
- Mix together the chile powder, salt, cumin, cayenne, coriander, sugar and lime zest in a shallow dish.

Steps:
- Place each slice of veal between 2 sheets of wax paper, and with the flat side of a meat mallet, pound the meat very thin.
- Sprinkle veal with salt and pepper, and then dredge in flour.
- Dip veal in beaten eggs and dredge again in flour, and then in the bread crumbs.
- Saute veal in the 1/2 cup melted butter in a large skillet over medium-high heat for 2 or 3 minutes on each side, until a light golden brown.
- Remove the veal, reserving the drippings in the skillet, and set the veal aside and keep warm.
- In the skillet that has the reserved drippings, add the chicken broth, wine, 1/4 cup butter, lemon juice, parmesan cheese and heavy cream.
- Stir well.
- Over medium heat, bring to just to a boil, stirring frequently.
- Return the reserved veal to the skillet and place the prosciutto slices on top of the veal slices, and reduce the heat, and simmer uncovered for 5 minutes.
- Remove veal and mixture to a serving platter, placing lemon slices either on or around the veal.
- Sprinkle with the parsley flakes and serve immediately.
