SPICY PIMENTóN POPCORN
Using more oil than popcorn, a technique developed by Jessica Koslow of Sqirl in Los Angeles, yields a particularly crisp and rich popcorn. Here, the kernels are popped, then tossed while still hot with a combination of sweet and hot smoked paprikas, and bit of earthy cumin. It's a complex mix that can be as hot as you can take it.

- In a large Dutch oven or heavy-bottomed pot set over medium-high heat, heat oil and 3 popcorn kernels. When kernels pop, add remaining kernels, lower heat to medium-low, and cover almost all the way with a lid, leaving a tiny crack open for steam to escape (face the crack away from where you are standing).
- Cook, shaking occasionally, until popping stops.
- Transfer popcorn to a bowl, and immediately toss with salt, cumin, sweet paprika and pimentón, if using. For the utmost crunch, let popcorn settle for 5 to 7 minutes before eating.
SPICY POPCORN

- Stir the confectioners' sugar, paprika, salt, garlic powder, cumin and cayenne together in a small bowl. Heat the coconut oil in a very large pot with a lid over medium heat. Add the popcorn and half of the sugar mixture, cover the pot and shake to coat. Add the remaining sugar mixture and continue to shake until well coated. Serve immediately.

- Heat oil and a few popcorn kernels in a large, heavy-bottomed pot over high heat. When kernels pop, add remaining kernels and cover. Remove from heat; let stand 30 seconds. Return to heat and cook, shaking pot frequently, until popping stops, 1 to 2 minutes. Toss with desired seasonings (adding more to taste), transfer to a bowl, and serve immediately.
- SEA SALT-PEPPER: Stir together salt and pepper.
- CHILI-LIME: Combine chili powder, cumin, salt, and lime zest in a large bowl. Add hot popcorn, and squeeze juice from 1 large lime wedge into bowl. Toss until evenly coated.
- SESAME-PEPPER: Grind sesame seeds, salt, and pepper in a spice grinder until seeds are coarsely ground. Toss hot popcorn with butter until evenly coated, then toss with sesame mixture.
- PECORINO-ROSEMARY: Stir together cheese and rosemary.
- SMOKED PAPRIKA: Season with salt to taste, then add paprika.
- SPICY-SWEET: Combine sugar, salt, garam masala, and cayenne pepper in a small bowl. Toss hot popcorn with butter until evenly coated, then toss with brown-sugar mixture.
SPICY POPCORN
Don't worry if you don't have a popcorn maker -- you can achieve the same results in a 4-quart pot.

- Heat a 4-quart pot with a tight-fitting lid on the stove top. Add the oil and swirl it around to coat the bottom of the pot. Get it hot enough to sizzle when the kernel hits the oil. Pour the corn in all at once, cover, and shake. Swirl the pot over the top of the burner once or twice until you hear the first few kernels pop. Once the corn is popping, swirl the pot continuously until the popping stops. Or, use a popcorn maker if you want to. Dump the popcorn in a large bowl.
- Pour the melted butter over the corn and toss well to fully coat the kernels. Sprinkle the spices over the popcorn and toss until everything is well combined.
CAJUN-SPICED POPCORN
Popcorn is roasted with butter and a blend of spices to make an addictive snack. I make this for watching movies or even sports.

- Preheat the oven to 350 degrees F (175 degrees C). Place the popped popcorn in a large roasting pan.

This recipe is for the person who likes everything spicy hot!! I learned about this trick from a coworker who is a hot food freak! The spicy oil can be used for a varitiey of foods; different types of oils can be used as well. Peanut oil is the best overall choice, since it withstands higher temperatures.

- Put the vegetable or peanut oil in a pot suitable for popping corn.
- Warm the oil gently and place sliced habanero in the oil (be careful to wash your hands after handling, and don't touch your eyes or nose!) Stir occasionally for 3 minutes.
- Be careful not to heat the oil too much; the smoke from the oil will cause your lungs and eyes to burn.
- Remove the sliced habanero from the oil and discard.
- Pop your popcorn like you normally would in the spicy oil.
- Add your favorite popcorn condiments, such as melted butter, salt, cheese flavoring, or my favorite, butter flavored sprinkles, and enjoy!

SPICY POPCORN WITH PIMENT D'ESPELETTE AND MARCONA ALMONDS
This spicy upscale popcorn combines two international ingredients: ground French peppers and Spanish almonds.

- Mix 1/2 teaspoon piment d'Espelette and 1/2 teaspoon salt in small bowl and reserve.
- Melt butter in small saucepan over medium heat. Remove from heat; stir in remaining 1/2 teaspoon piment d'Espelette and 1/2 teaspoon salt.
- Combine popcorn kernels and peanut oil in large deep pot with lid. Heat over medium-high heat, occasionally swirling pot so that popcorn kernels are coated with oil. Cover pot. When popcorn kernels start popping, rotate pot over burner until all kernels have popped. Remove popcorn from heat. Immediately add melted butter mixture and Marcona almonds to pot. Cover pot. Using oven mitts, firmly hold pot and lid together and shake until popcorn and Marcona almonds are well coated with melted butter mixture. Transfer popcorn mixture to serving bowl. Sprinkle with reserved piment d'Espelette-salt mixture and serve.
