Steps:
- 1.Mix all of the ingredients, except for the sour cream, in a large bowl.
- 2.Microwave on low heat, stirring often, until the cheese melts and the mixture is smooth.
- 3.7-10 minutes before serving, stir in the sour cream.

- In a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil for 3-5 minutes or until wilted. Drain well and chop., In a large skillet, saute onion in oil until tender. Stir in tomatoes and cream cheese until blended. Stir in the spinach, cheese blend, chilies, vinegar and pepper sauce. , Transfer to an 8-in. square baking dish. Bake, uncovered, at 350° for 30-35 minutes or until bubbly and lightly browned. Serve warm with chips.

- Preheat oven to 400 degrees F (200 degrees C).
- Saute onion in skillet over medium heat in oil until softened, about 4 minutes. Stir in tomatoes and chiles, let cook 2 minutes.
- Transfer the mixture to a large bowl and stir in spinach, cheese, cream cheese, half and half, and vinegar. Season with salt and pepper to taste. Spoon mixture into shallow baking dish like a 9 inch quiche dish or pie plate.
- Bake in the preheated oven until the dip is bubbly and the top is light brown, about 35 minutes.
