BLACK BEAN TURKEY BURGERS
This recipe makes mouth-watering burgers that even the beef lovers in my family can't pass up! Try it with spinach leaves in place of the lettuce on the bun and goat cheese as a topping! Delish!

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix black beans, ground turkey, Parmesan cheese, bread crumbs, egg, and onion soup mix with your hands in a large bowl. Divide into 6 portions and shape into patties.
- Cook on preheated grill until no longer pink in the middle, 5 to 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Heat a grill or grill pan over medium-low heat.
- In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
- Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
- Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

- Place turkey, onion, jalapeño, and spices together in a large bowl and mix together until all the ingredients are incorporated.
- Lightly wet your hands and use them to shape 4 circular patties about 4 inches (10 cm) in diameter.
- Heat up about 2 tablespoons of vegetable oil in a pan over medium heat.
- Cook burgers for 2 minutes on the first side, then flip, lower heat to low, and cook them for an additional 5-6 minutes. Top with pepper jack cheese during the last minute.
- NOTE: The turkey burgers must be cooked through. Use a meat thermometer to check each patty for an internal temperature of at least 165˚F (75˚C) before removing from pan.
- Assemble the burgers as desired with bun, chipotle mayonnaise, lettuce, tomato, avocado, and preferred condiments.

- Mash black beans in a separate bowl until they reach a paste-like consistency.
- Stir jalapeno pepper, corn, and garlic through the black bean paste.

- In a large mixing bowl, add black beans and mash by hand using a potato masher (it's fine to leave bean chunks throughout). Toss the remaining ingredients into the bowl with beans and mix thoroughly. - Place the black beans in a large bowl and smash them slightly with the back of a fork. Add the ground turkey, red onion, Jalapeño pepper, breadcrumbs, salt, chili powder and cayenne pepper. Mix with your hands to combine all the ingredients and then shape them into 2 patties. Brush both sides of the burger patties with a little olive or vegetable oil.

- While the burgers are cooking, make the cumin avocado spread. Place the avocado, lime juice, cumin and salt in food processor and process until smooth.
