SPäTZLE (AKA SPAETZLE)



Spätzle (aka Spaetzle) image

Apparently spätzle translates to little swallows in German, which makes a lot of sense when you consider their shape. These micro-dumplings cook in a just a few minutes, and are great plain with browned butter or topped with slowly braised meat.

½ cup all-purpose flour, plus more as needed
1 large egg
½ teaspoon kosher salt
1 pinch cayenne pepper
1 tablespoon creme fraiche, sour cream, or plain yogurt
3 tablespoons milk, or as needed

Steps:

  • Place flour, egg, salt, cayenne, cream fraiche, and milk in a mixing bowl. Whisk together until batter drips slowly off the whisk. If batter seems too thin, add a bit more flour; if too thick, add a bit more milk. You can test the thickness using the smooth side of a cheese grater with fairly large holes. If a dollop of the batter does not drip through the grating holes, it's the right consistency.
  • Bring a pot of salted water to a simmer over medium-high heat. Use a spatula to push a spoonful of batter through the holes of the smooth side of the grater into the simmering water.
  • When dumplings rise to the surface of the water, they are done. This will take just a few minutes. Remove dumplings with a slotted spoon, and repeat in batches with remaining batter.

PRETZEL SPIDER WEBS

80 pretzel sticks
2 cups white candy melting wafers
1/2 cup Halloween sprinkles
Chocolate spiders, optional

Steps:

  • Line two sheet pans with parchment paper.
  • In sets of 8, arrange the pretzel sticks into the spokes of 10 webs, with the centers touching and the outer edges spaced.
  • Melt the melting wafers according to the package instructions, approximately 2 minutes in a microwave or 3 to 5 minutes over a double boiler. Transfer to a piping bag and cut the tip to create a small hole.
  • Pipe a small amount of the melted candy onto the center of each web where the pretzels meet; this will hold the webs together. Then pipe a web pattern by starting in the center and spiraling out to the edges. Go around the outer edges a couple times to create a firm border. Carefully spoon over the sprinkles. Repeat with the remaining webs.
  • Place chocolate spiders in the center, if using. Let set 1 hour.

¼ oz packet dry active yeast
2 tsp sugar
1 cup warm water
1 tsp salt
3 cups all-purpose flour ((plus more for surface))
2 Tbsp unsalted butter

3 Tbsp baking soda
Deep (wide cooking pan filled with water ⅔ or the way)
__
Abot 1/4 cup poppy seeds
Coarse salt
Sliced black olives (you will need 8 slices)

Steps:

  • Mix yeast and sugar in a bowl. Add warm water and whisk until sugar dissolves. Let yeast bloom for about 10 minutes.
  • Mix flour and salt in a bowl of an electric mixer. Mix chopped, cold butter into flour on low speed until mixture starts to resemble coarse crumbs.
  • Slowly pour yeast mixture into flour mixture, while still mixing on low, until just combined. Using your hands, gather dough together. Turn dough out onto a lightly floured surface, and knead until no longer sticky, for a couple of minutes. Place in a medium bowl and cover with plastic.
  • Let dough rise in a warm, dry place for about an hour.
  • Line a large baking sheet with parchment paper.
  • Roll the dough into a log and divide it into 4 equal pieces.
  • Divide each piece into two more pieces, one a little bigger than the other. The piece that is a little bigger, roll it into a log and divide into 8 equal pieces. That will be the spider's legs. The piece that is a little smaller, roll into an oval and then twist the top of it one time, to form the head and body of the spider.
  • Repeat with remaining 3 dough pieces. Let all the pieces of the spiders rest while heating up the water and preheating the oven.
  • Preheat the oven to 450 and line a large baking sheet with parchment paper.
  • Bring a large, deep cooking pan of water to a boil and add baking soda, stir well. Turn the heat down to medium-high. Boil pretzel pieces in batches until puffed, about 30-45 seconds.
  • Take them out with a slopped spatula onto the baking sheet.
  • Gently press the legs of the spider into the body, so that they are touching each other at the base. Press very gently.
  • Generously sprinkle with poppy seeds. Sprinkle a little coarse salt over the top.
  • Gently press in olives for spider's eyes.
  • Bake until golden brown, 10 minutes.

1 (12 ounce) bag semi-sweet chocolate chips
1 cup creamy peanut butter, divided
1/3 cup powdered sugar
3 cups kelloggs Rice Krispies

Steps:

  • Heat chocolate chips and 3/4 cup peanut butter in small, heavy-duty saucepan over low heat, stirring constantly until smooth.
  • Remove from heat.
  • Add sugar, stir vigorously until smooth.
  • Put cereal in a large bowl.
  • Add 1 cup melted chocolate mixture to cereal, stir to coat well.
  • Place on ungreased baking sheet.
  • Using a small spatula, shape into a 10-inch circle with slightly raised, 1-inch wide border.
  • Pour remaining chocolate mixture in center of circle; spread to border.
  • FOR SPIDERWEB: place remaining peanut butter into small plastic bag.
  • Cut tiny hole on one corner of bag, squeeze to pipe concentric circles on top of chocolate.
  • Using wooden pick or tip of sharp knife, pull tip through peanut butter from center to border.
  • Refrigerate for 30 minutes or until firm.
  • Cut into wedges.
