Rach's spinach-artichoke stuffed baked potatoes are a creamy, cheesy take on spuds that you'll want to make over + over.

4 russet potatoes
scrubbed and pricked with fork
coated with cooking spray and seasoned with salt and pepper
Salt and pepper
3 tablespoons extra-virgin olive oil (EVOO)
1 shallot
finely chopped
4 cloves garlic
grated or finely chopped
1 16-ounce bag chopped spinach
defrosted and wrung dry in a kitchen towel
About ¼ teaspoon freshly grated nutmeg
2 teaspoons lemon juice and juice of 1 lemon
1 ½ cups grilled artichokes or grilled baby artichokes or drained canned or defrosted frozen artichokes
chopped
1 5-ounce package soft cheese (Rach likes Boursin) or 4 ounces cream cheese
softened
About ½ cup Greek yogurt or sour cream
About ¾ cup grated Parmigiano-Reggiano cheese
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 425˚F
  • Bake potatoes about 45 to 50 minutes, then cool to handle
  • Heat a skillet over medium heat with EVOO, 3 turns of the pan, add shallots and garlic and swirl a minute or 2, add spinach and heat through, add salt and pepper and nutmeg, lemon zest and juice, add artichokes and combine, then add Boursin cheese or cream cheese and melt, stir in sour cream and ¼ cup Parmesan and remove from heat
  • Halve the potatoes lengthwise, scoop the center of flesh into a bowl, carefully protecting the skins and about ¼ inch of potato flesh
  • Add spinach and artichokes to potato flesh in bowl, combine and refill potato shells or skins
  • Top stuffed potatoes with mozzarella and remaining Parm, and bake to browned and cheese is melted

8 ounces spinach and artichoke dip
4 ounces crumbled feta
1/2 teaspoon caraway seeds
4 large boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper

Steps:

  • Mix together the spinach and artichoke dip, feta and caraway in a bowl until very smooth and uniform. Transfer the mixture to a piping bag (or use a ziptop bag and cut off the tip to create a 1/2-inch-wide opening).
  • Lay the breasts on a cutting board. Using a sharp boning knife, cut a pocket in the thickest part of each breast. Gently swipe the knife back and forth without making the hole larger or piercing the underside or top of the chicken.
  • Pipe some filling into each pocket. Tuck the tip of each breast under and secure with one long piece of butcher twine tied into a cross, making sure to seal the pocket hole with the twine. Sprinkle with salt and pepper. Refrigerate the chicken for 1 hour to firm up.
  • Prepare a grill for a 2-stage fire (one hot side, one cool side).
  • Set the chicken on the cool side of the grill top-side down. Cover and cook, flipping and rotating halfway through, until the thickest part of the meat registers 160 degrees F, about 15 minutes. Move to the hot side of the grill and cook until both sides are charred, 2 to 3 minutes a side.
  • Transfer the chicken to a cutting board, loosely tent with foil and let rest for 5 minutes. Remove the twine and slice into medallions.

If you have a little spinach-artichoke dip leftover, snack on it hot or cold with pita chips, or use it to fill a sandwich or an omelet.

1 1/4 cups/295 milliliters whole milk
5 cups/600 grams all-purpose flour
1/4 cup/50 grams granulated sugar
1 large egg, plus 1 large egg yolk
3 tablespoons/45 grams unsalted butter, at room temperature, plus more for greasing
1 tablespoon instant yeast
1 teaspoon kosher salt
14 ounces/395 grams canned artichoke hearts, drained and chopped
10 ounces/285 grams frozen chopped spinach, thawed and squeezed to remove excess liquid
8 ounces/225 grams cream cheese, at room temperature
3/4 cup/85 grams finely grated Parmesan
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 egg
Sesame seeds, for finishing

Steps:

  • In a medium pot, heat the milk over medium-low until just warm to the touch (about 95 degrees).
  • In the bowl of an electric mixer fitted with the dough hook attachment, combine the flour, sugar, egg and egg yolk, butter, yeast, salt and the warm milk. Mix on low speed for 4 minutes, then increase the speed to medium and mix until smooth, about 2 minutes.
  • Transfer the dough to a lightly greased bowl. Cover with plastic wrap and let rise in a warm place for 1 hour.
  • Divide the dough into 9 even pieces (about 120 grams each), and shape them into balls using your hands. Cover with plastic wrap and let rest for 15 minutes while you make the filling.
  • Make the filling: In a medium bowl, stir together the artichoke hearts, spinach, cream cheese, Parmesan, salt and pepper. Line a baking sheet with parchment paper.
  • Use the palm of your hand to flatten each ball of dough to about 1/2-inch thick and about 4 1/2 to 5 inches wide. Scoop 3 tablespoons of filling into the center. Wrap the dough around the filling and pinch firmly to seal. Use your hands to shape the dough into balls. Repeat with the remaining dough.
  • Transfer rolls seam side down to the prepared baking sheet, spacing them evenly and staggering slightly. Cover with plastic wrap and let rise for 30 to 35 minutes in a warm place.
  • Heat the oven to 375 degrees. In a small bowl, beat the remaining egg. Brush the surface of each roll with the beaten egg and sprinkle generously with sesame seeds. Bake until the rolls are golden-brown, 25 to 30 minutes. (They may spread and touch while baking, which is O.K.)
  • Let cool for 10 to 15 minutes before serving. Wrap leftover rolls tightly in plastic wrap and store at room temperature.

2 tablespoons brown sugar
½ cup warm water, (110°-115°F) 40-46°C
20 ½ cups all purpose flour
4 tablespoons melted butter
vegetable oil
4 oz cream cheese, softened
½ cup mozzarella cheese, shredded
½ cup grated parmesan cheese
½ cup feta cheese, crumbled
1 tablespoon garlic, minced
½ teaspoon crushed red pepper flake
½ teaspoon onion powder
½ teaspoon fresh parsley
½ cup frozen chopped spinach, thawed, squeezed dry
185 g marinated artichokes, 6.7 oz
salt and pepper, to taste
⅔ cup baking soda
1 egg
coarse salt, or pretzel salt

Steps:

  • PRETZELS: Proof yeast with brown sugar and warm water. Let sit for about 10 minutes until foamy and bubbly.
  • Add flour and melted butter; mix until combined. Knead until the dough is smooth and elastic.
  • Remove the dough ball, oil the bowl with vegetable oil, and return the dough to the bowl. Cover loosely and let rise until doubled, about one hour.
  • FILLING: Combine cream cheese, mozzarella, parmesan, feta, garlic, red pepper flakes, onion powder, and parsley in a bowl until smooth.
  • Add spinach, artichokes, and salt and pepper to taste.
  • TO ASSEMBLE: Preheat the oven to 450°F. Line two sheet pans with parchment paper.
  • Bring about 10 cups (2.4 L) of water to a boil with 2⁄3 cups (85 G) baking soda.
  • In the meantime, divide the dough into 8 equal pieces. Roll each piece of dough into a long rope, and then flatten each rope into a rectangle. Spoon a little under 2 tbsp of the spinach filling along the length of each piece. Roll the dough over the filling and pinch the seams together, forming a log.
  • Fold into a pretzel shape: make a U-shape with each rope, cross the ends once or twice, and bring the ends down, sealing against the bottom of the U-shape.
  • Place each pretzel onto the lined baking sheet.
  • Use a large slotted spoon to gently place each pretzel into the boiling baking soda bath, one at a time. Boil for about 30 seconds each, flipping halfway.
  • Remove them with the slotted spoon and replace them onto the sheet pan.
  • Beat the egg in a small bowl with 1 tbsp water. Brush the top of each pretzel with the egg wash and sprinkle with coarse sea salt. Bake for about 15 minutes until dark golden brown.
  • Serve and enjoy!

¼ cup mayonnaise

2 cloves garlic, minced
kosher salt and freshly ground pepper to taste
3 (8 ounce) tubes refrigerated butter-flavored crescent rolls
½ cup fine Italian bread crumbs

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.

2 teaspoons canola oil
1 ½ teaspoons kosher salt, divided
2 tablespoons unsalted butter
2 tablespoons olive oil
½ large yellow onion, diced
3 cloves garlic, minced
½ teaspoon freshly ground black pepper
¼ teaspoon red pepper flakes
1 can artichoke heart, drained and roughly chopped
3 ½ cups frozen spinach, thawed and well-drained
8 oz cream cheese, cubed, room temperature
4 oz sour cream
2 cups shredded mozzarella cheese, divided
½ cup freshly grated parmesan cheese

Steps:

  • Rub the potatoes all over with the canola oil and season on all sides with ½ teaspoon salt.
  • Preheat the air fryer to 400°F (200°C). Working the batches if needed, nestle the potatoes inside of the air fryer basket and set the timer for 45 minutes. Cook, flipping halfway through, until the potatoes have crispy skin and can easily be pierced with a fork.
  • Meanwhile, make the spinach and artichoke dip: In a medium skillet over medium heat, melt the butter and olive oil together until the butter begins to bubble. Add the onion, garlic, remaining teaspoon of salt, the black pepper, and red pepper flakes. Cook for 2-3 minutes, until the onions are translucent and the garlic is fragrant. Add the artichoke hearts and spinach and cook until the spinach is well incorporated, 1-2 minutes. Stir in the cream cheese and sour cream until fully incorporated, 1-2 minutes. Add 1 cup of mozzarella and the Parmesan cheese and stir until just combined and melted, 1-2 minutes more.
  • Using tongs, remove the potatoes from the air fryer and cut in half lengthwise. Use a fork to fluff the insides of the potatoes. Top each potato with a heaping ½ cup of the spinach and artichoke dip, then top each with 2 tablespoons of mozzarella cheese.
  • Working in batches of 2-4 at a time, set the filled potato halves in the air fryer basket. Cook for 5 minutes, until the edges of the potato are browned and the mozzarella is melted and browning.

1-1/2 cups mayonnaise
1 package (8 ounces) cream cheese, softened

1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 cup chopped sweet red pepper

Steps:

  • Place a 6-in. cake pan or small ovenproof saucepan in the center of a 10-in. cast-iron skillet. Cut each roll into thirds; roll each piece into a ball. Place along outer edge of skillet. Gently stack remaining balls on top of bottom layer, leaving some space between them. Cover and let rise until almost doubled, about 30 minutes., Preheat oven to 400°. Microwave butter, garlic powder and red pepper flakes, covered, until butter is melted. Brush half of butter mixture over dough. Reserve remaining butter mixture., Bake until dough balls are set and beginning to brown, 15-18 minutes. Remove cake pan from skillet. Meanwhile, in a small skillet, heat butter over medium-high heat. Add mushrooms; cook and stir until tender, 5-7 minutes. Add garlic; cook 1 minute longer., In a large bowl, combine the mayonnaise, cream cheese, 3/4 cup mozzarella cheese and 1/2 cup Parmesan cheese. Add the mushroom mixture, artichokes and spinach., Spoon dip into center of skillet; sprinkle with red pepper and remaining 1/4 cup mozzarella. Brush rolls with remaining butter mixture; sprinkle with remaining 2 tablespoons Parmesan. Bake until dip is heated through and rolls are golden brown, 10-15 minutes. If desired, sprinkle with additional red pepper flakes.
