SPINACH AND POACHED EGG MUFFINS (LOW-CALORIE)



Spinach and Poached Egg Muffins (Low-Calorie) image

A delicious and satisfying recipe that is healthy and tasty; the calorie count per serving is 220 calories, but if using a crumpet in place of a muffin half, then reduce the calories by 20 to 200 calories per portion. (Based on a crumpet of 77 calories per unit) Suitable for the 5:2 diet and has 3 points per serving for anyone following the Weight Watchers diet. (pre pro-points)

2 tablespoons vinegar
1 medium muffin, halved (or 2 crumpets)
200g frozen spinach (or 400g fresh spinach leaves, stems removed)
freshly grated nutmeg
2 tablespoons low-fat creme fraiche
2 medium eggs
salt and freshly ground black pepper

Steps:

  • Out a pan of water on to boil and add the vinegar.
  • Toast the muffin halves or the crumpets until lightly browned. Meanwhile, heat the spinach through on a saucepan, season to taste and add some freshly ground nutmeg with the crème fraîche.
  • When the water is at a boil, break the eggs into a small cup and then carefully slide them into the water. Turn the heat down and simmer for 3 minutes until the white has set and it firm, but the yolks are still soft and runny.
  • Remove the eggs from the water with a slotted spoon. Spoon the warm, cooked spinach on top of the muffin halves or crumpets and then put the eggs on top of the spinach. Season with salt and freshly ground black pepper and serve straight away.
  • 220 calories with the muffin and 200 calories with the crumpets.

18 slices deli turkey
12 large egg whites
1/2 cup salsa
1/4 cup mexican cheese
2 cups fresh spinach or 5 ounces frozen spinach
2 tablespoons Molly McButter (optional)

Steps:

  • Preheat oven to 350 degrees. Spray regular sized muffin tin or use foil liners. Recipe makes 12 regular muffins filled all the way to the top or 24 mini muffins. Chop turkey and spinach or use food processor. I prefer larger pieces so I use a knife. Separate egg whites into bowl saving egg yolks for Cheesy Bacon Egg Muffins(for DH and kids) Mix all ingredients together and pour into muffin tin. Bake at least 20 minutes at 350 degrees for moist squishy muffins or up to 30 minutes for a dryer more solid texture.

  • Preheat the oven to 350°F and grease a 12-cup muffin tin. (If you have a silicone muffin tin I would suggest using it as it is easier to remove the muffins.)
  • In a large bowl, crack eggs, whisk together and season with salt and pepper. Add chopped spinach and whisk again to combine.
  • Divide egg mixture evenly across the muffin tins, filling them halfway, and sprinkle with crumbled feta cheese. Depending on the size of your eggs you may have a little extra of the mixture, so you can make a few more.
  • Transfer the muffin tin to the oven and bake for 18-20 minutes until the centre of each egg muffin is set.
