1 teaspoon Butter
3 cloves of Garlic
1 package of Frozen Spinach, thawed and water squeezed out
1/2 cup Finely Chopped Fresh Basil
1/2 teaspoon Salt
1/4 teaspoon Pepper
1 (5.3 ounce) tub of fat-free Greek Yogurt
4 ounces 1/3 fat Cream Cheese
1/2 cup grated Parmesan
1 can Quartered Artichokes
4 large Chicken Breasts
8 slices of Prosciutto

Steps:

  • Heat your oven to 300 degrees.
  • Heat the butter in a skillet over medium heat. Use a garlic press to crush the garlic, and then saute it in the oil for 1 minute. Then add the spinach. Saute until hot, about 3 minutes.
  • Add the basil, salt, pepper, yogurt, cream cheese, Parmesan, and artichokes. Stir until the cheese has melted. Set aside.
  • To prepare the chicken breasts, butterfly them by slicing through the side of the chicken breasts and towards the center of the chicken breasts, but not all the way through. Fold the chicken breasts open and pound them flat with a meat mallet or a cast iron pan.
  • Place about 3 tablespoons of the spinach artichoke dip in the center of each of the chicken breasts. Fold the chicken breasts around the artichoke dip, and then wrap two pieces of prosciutto around the chicken breasts, sealing the chicken breasts closed.
  • Place the chicken breasts on a parchment-lined baking sheet.
  • Bake at 300 degrees for 45 minutes. Then serve.

4 skinless, boneless chicken breasts (about 8 ounces each)
Half of one 5-ounce package soft garlic-and-herb cheese
1 canned artichoke heart, chopped
1 1/2 tablespoons chopped fresh parsley
1 1/2 tablespoons chopped fresh dill
1 teaspoon grated lemon zest plus 2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil, plus more for the grill
Kosher salt and freshly ground pepper
2 cups spinach leaves, stemmed

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the filling: Mash the garlic-and-herb cheese, artichoke heart, parsley, dill and lemon zest in a bowl. Whisk the lemon juice and olive oil in a separate bowl; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with half of the lemon oil; top with the spinach. Spoon the filling over the top, leaving a 1-inch border around the edges. Roll up the chicken toward the pointy end; tie with 3 pieces of kitchen twine. Brush with the remaining lemon oil.
  • Brush the grill grates with olive oil. Grill the chicken breasts, turning, until cooked through, 18 to 20 minutes. Transfer to a cutting board and let rest 5 minutes, then remove the twine and slice.

4 boneless skinless chicken breasts
12 slices bacon
1 Tablespoon Italian seasoning
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
4 oz cream cheese (softened)
1/2 cup marinated artichokes with the brine (chopped)
1/4 cup cooked spinach
1/4 cup Parmesan cheese (grated)
1/2 cup mozzarella cheese (shredded)

Steps:

  • Preheat your smoker or grill to 350 degrees F for indirect cooking.
  • In a medium bowl, combine all of the ingredients for the spinach artichoke filling.
  • In a small bowl,combine all of the ingredients for the spice seasoning. Sprinkle liberally on all sides of the chicken breasts.
  • On a large cutting board, slice the chicken breasts open, without slicing all of the way through the breasts. Spoon a couple of tablepoons of the filling mixture into each breast and fold them closed.
  • Wrap each chicken breast with about 3 slices of bacon. Secure the bacon ends with toothpicks, if necessary.
  • Place the chicken breasts on the smoker or grill, close the lid and cook until the internal temperature reaches 165 degrees F. This will take about 30-45 minutes depending on the thickness of your chicken.

One 14-ounce jar marinated artichoke hearts, drained and chopped
2 cups baby spinach, chopped
1 cup sour cream
1 cup grated fontina
1/4 cup grated Parmesan
Salt and pepper
8 slices rye bread
2 grilled boneless skinless chicken breasts, sliced thin on the bias
1 cup jarred roasted red peppers, sliced
Olive oil, for brushing

Steps:

  • Stir together the artichokes, spinach, sour cream, fontina and Parmesan in a bowl. Season the mixture with salt and pepper to taste.
  • Preheat a grill pan or panini press on medium heat.
  • Spread the artichoke mixture on all the slices of bread. Place 1 layer of chicken on 4 of the bread slices, then top each with a couple of layers of roasted red peppers. Top with the remaining bread. Brush the outside of each sandwich with some olive oil.
  • Place the sandwiches on the grill pan or in the panini press. If using a grill pan, place a cast-iron skillet or brick wrapped in foil on top of the sandwiches to weigh them down. Cook, flipping halfway through, until golden brown and the cheese is melted and gooey in the center, 3 to 5 minutes per side. If using a panini press cook 6 to 10 minutes total.

1 jar (6 oz) Progresso™ marinated artichoke hearts, drained, patted dry and chopped
1/2 cup shredded mozzarella cheese (2 oz)
4 boneless skinless chicken breasts (about 1 1/2 lb total)
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup Gold Medal™ all-purpose flour
2 eggs
1 1/4 cups Progresso™ plain panko crispy bread crumbs
1/4 cup vegetable oil
3/4 cup Progresso™ chicken broth (from 32-oz carton)
1 tablespoon lemon juice

Steps:

  • Heat oven to 400°F.
  • In 12-inch skillet, heat olive oil over medium heat. Add spinach; cook 2 to 3 minutes, stirring frequently, until spinach is wilted. Remove from heat; transfer to colander. Press with spoon to drain. Chop spinach finely.
  • In medium bowl, mix spinach, cream cheese, Parmesan cheese and garlic. Reserve 1 1/4 cups mixture. Add artichoke hearts and mozzarella cheese to remaining cream cheese mixture.
  • Season chicken breasts with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. In thick side of each chicken breast, cut 3-inch-long pocket to within 1/4 inch of opposite side of breast. Spoon about 1/4 cup artichoke mixture into pocket in each chicken breast. Secure with toothpicks.
  • In shallow dish, stir together flour, remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. In another shallow dish, beat eggs with whisk. Place bread crumbs on sheet of waxed paper. Dip chicken into flour mixture, coating well; shake off excess. Dip into egg mixture, then coat with bread crumbs.
  • In 12-inch skillet, heat vegetable oil over medium-high heat. Cook chicken in oil 2 to 3 minutes on each side, or until golden brown. Transfer to ungreased rimmed pan; bake 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove toothpicks.
  • In 1-quart saucepan, heat broth to boiling over medium heat; add reserved 1 1/4 cup cream cheese mixture. Reduce heat to low; cook until smooth and hot, stirring occasionally. Remove from heat; stir in lemon juice.
  • Serve chicken with sauce.

1 teaspoon liquid smoke flavoring

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the spinach, artichokes, chicken, mayonnaise, cheese, garlic, and liquid smoke in a large bowl; mix well. Spoon mixture into a glass baking dish.

¾ cup artichoke heart, drained, rinsed and roughly chopped
1 teaspoon garlic powder
¼ cup cream cheese
⅓ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice into the chicken several times, about ½ cm (¼ inch) apart, but only cut about 85% of the way through, leaving the bottom intact.
  • Cook the spinach on a medium heat until it is slightly wilted, then add the artichoke.
  • Stir in the garlic powder and cream cheese, and cook for a minute or two.
  • Sprinkle over the mozzarella and stir until melted.
  • Allow to cool to the touch and then fill each segment of the chicken breast with about 1 teaspoon of the mixture.
  • Bake in the centre of the oven for 18-22 minutes until the chicken is cooked through and the juices run clear.
  • Enjoy!

  • In the large skillet you wilted the spinach in, over medium heat, add cream cheese and soften. Once the cheese is soft and creamy, add spinach, artichoke hearts and the remainder of ingredients. Stir until combined then pour into a bowl to cool a bit.
  • Starting with the thick part of each chicken breast, slice in half horizontally to produce 2 thin pieces. Cover the chicken breast pieces with a sheet of plastic wrap and pound with a meat mallet or the bottom of a small skillet until all of the pieces are about ¼" thick.
