- Heat oven to 350°F. Grease bottom and sides of 9x5-inch loaf pan with shortening.
- In large bowl, stir together all ingredients except spinach thoroughly; beat with spoon 1 minute. Stir in spinach. Pour into pan.
- Bake 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 20 minutes; remove from pan to cooling rack.

SPINACH CHEDDAR HOLIDAY ROLLS
We layer spinach, sharp Cheddar and scallions on a sheet of refrigerated crescent dough, and stud it with roasted red peppers for a festive pop of color. Rolled into a log, sliced into rounds and baked until golden, these pinwheels resemble holiday wreaths, and will be a welcome addition to your holiday breadbasket without laboring over time-consuming dough.

Steps:
- Preheat the oven to 350 degrees F and line an 18-by-13-inch baking sheet with parchment paper.
- Unroll the crescent dough (do not separate into individual pieces) and pat into an 8-by-12-inch rectangle, gently pressing the seams closed. Brush evenly with the mustard and then then top with the spinach, Cheddar, scallions and peppers, leaving a 1/2-inch border all the way around. Sprinkle with 1/2 teaspoon salt.
- Starting with a short side, roll the dough sheet into a log. Slice into 8 pinwheels and transfer to the prepared baking sheet. Bake until golden, 18 to 20 minutes.
SPINACH AND CHEESE BREAD DUMPLINGS RECIPE BY TASTY

- Combine breadcrumbs, grated parmesan, ricotta, cooked spinach, olive oil, egg, salt and milk until it forms a dough that sticks together.
- Divide the dough into balls. Take one ball, flatten and place a cube of fontina cheese in the center, wrap the dough around the cheese. Dust with flour and set aside. Repeat with remaining dough balls.
- Cook the bread dumplings in boiling water. They are ready when they float to the surface. Remove with a slotted spoon and set aside.
- Heat olive oil in a large pan over medium high heat. Add the bread dumplings and cook until golden brown on all sides.
- Add butter and sage, toss to coat. Plate the bread dumplings. In the same pan with butter and sage, carefully add the balsamic vinegar and remove from heat.
- Spoon the balsamic butter sage sauce over the bread dumplings.
- Garnish with shredded parmesan and enjoy!

- Thaw bread dough according to package directions; let rise until doubled. Meanwhile, in a skillet, saute onion and garlic in oil until tender. Stir in spinach. , On a lightly floured surface, roll dough into a 14x10-in. rectangle. Spread the spinach mixture to within 1/2 in. of edges; sprinkle with cheese. Roll up jelly-roll style, starting with a long side; pinch seam to seal. - Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with non-stick cooking spray.
- Heat olive oil in a skillet or frying pan over medium heat. Add garlic and saute until soft, about two minutes. Add spinach and cook until liquid has evaporated. Stir in salt, pepper, Parmesan and garlic powder. Remove from heat and let cool.

The dough for this recipe must have had it's first rise and punched down. Prep time does not include preparing the dough. Mozzarella or provolone cheese can be subbed for the Monterey Jack.

- Spray 15 muffin tins with nonstick cooking spray.
- Roll out prepared dough on a very lightly floured surface into a 15x9-inch rectangle (if the dough is difficult to handle, cover with a clean towel and let rest for 5-8 minutes).
- Position your dough so the long edge runs parallel to the edge of your work surface.

- If using a store bought bread dough, allow the bread to thaw according to the package directions. Spray a standard Muffin Pan with nonstick spray. Roll out dough lightly with flour to 15X9 inch rectangle.
- Combine spinach, cheeses, green onions, and seasonings in a large bowl. Mix Well.
- Sprinkle spinach mixture evenly over the dough to within 1 inch of the edeges. Starting with long edge, roll the dough up snugly, pinching the seam close. Place the seam side down, and cut with serrated knife into about 15 slices. Place slices, cut side up, in to the prepared muffin pan.
- Bake the rolls at 375* for 20-25 minutes or until golden. Seve warm or at room temperature.
- The rolls can be stored in an airtight container for up to 2 days.

- Coat a 10 inch (25cm) oven-safe skillet with olive oil. Place the dinner roll dough balls in a ring around the skillet. Cover and let rise until thawed and doubled in size.
