1-1/2 teaspoons olive oil
1-3/4 cups sliced fresh mushrooms
3 green onions, sliced
3 cups fresh baby spinach
2 tablespoons chopped pecans
4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon rotisserie chicken seasoning
2 slices reduced-fat provolone cheese, halved

Steps:

  • Preheat grill or broiler. In a large skillet, heat oil over medium-high heat; saute mushrooms and green onions until tender. Stir in spinach and pecans until spinach is wilted. Remove from heat; keep warm., Sprinkle chicken with seasoning. Grill, covered, on an oiled grill rack over medium heat or broil 4 in. from heat on a greased broiler pan until a thermometer reads 165°, 4-5 minutes per side. Top with cheese; grill or broil until cheese is melted. To serve, top with mushroom mixture.

Sauteed mushrooms and spinach served on baked chicken and topped with Munster cheese--easy, tasty and healthy!

2 boneless skinless chicken breasts
8 ounces washed mushrooms, chopped
1 cup washed fresh spinach, chopped
3 tablespoons butter
2 slices muenster cheese
seasoning salt, to taste

Steps:

  • Preheat oven to 375 degrees.
  • Remove all fat from chicken and sprinkle with the seasoned salt. Place the chicken in a casserole dish and cover with foil. Bake the chicken in the oven for 1 hour.
  • After 30 minutes, begin chopping the spinach, removing the stems. Saute the mushrooms in two Tablespoons of butter until softened and set aside. Saute the spinach with the remaining butter, until wilted.
  • Mix the spinach with the mushrooms.
  • Remove chicken from pan and place on each plate while still very warm.
  • Top each piece of chicken with 1/2 of mushroom and spinach mixture plus 1 slice of cheese.

8 ounces boneless skinless chicken breasts
4 ounces mushrooms, quartered
2 green onions, sliced on diagonal
1 cup grape tomatoes
1/2 cup white wine
1/2 tablespoon lemon juice (use zest too)
3 garlic cloves, sliced
1 lb spinach, precleaned
2 teaspoons parmesan cheese, fresh grated
salt
pepper

Steps:

  • Season chicken breast with whatever seasoning you like. I use McCormick Grill Seasoning.
  • Spray nonstick pan and saute chicken until no longer pink. Remove and keep warm. Slice into strips if desired.
  • Spray pan again if needed and sautee mushrooms, lemon rind, green onion, garlic and tomatoes just until soft and beginning to brown. (Tip- grate rind from lemon before cutting in half).
  • Add wine, lemon juice and enough water to equal one cup liquid. Deglaze pan and reduce to make a thin sauce.
  • Add fresh spinach and cook til wilted.
  • Season with fresh pepper and salt.
  • Plate veggie saute and place chicken on top.
  • Garnish with fresh parmesan on top!

Creamy spinach and mushroom chicken with a silky sauce flavored with fresh lemon and garlic is a simple, delicious dinner recipe.

4 Chicken breasts ((approximately 500g/1lb))
1 tbsp Olive oil
1 tbsp Butter
3 Fresh garlic cloves
2 tsp Dried oregano
250 g (1lb) Mushrooms
150 g (7oz) Baby spinach
1 cup Cream
1-2 tsp Fresh lemon juice
Salt and pepper (to taste)
½ cup Parmesan cheese (grated)

Steps:

  • Place the chicken breasts on a cutting board in front of you. With a sharp knife, carefully slice the chicken breasts in half horizontally to create two thin cutlets.
  • Drizzle the olive oil over the chicken then season with salt and pepper on both sides.
  • Heat a large skillet or deep frying pan over medium-high heat.
  • Add the chicken and allow to sear for 2-3 minutes per side until golden brown. Remove and set aside.
  • In the same pan, melt the butter then cook the garlic and oregano for 30 seconds.
  • Add the mushrooms and cook until golden brown. Add the spinach and allow to cook for a few minutes until wilted.
  • Pour in the cream then bring to a simmer. Allow to gently cook for 5 minutes until the mushrooms are cooked and the sauce has reduced slightly.
  • Season the sauce with lemon juice, salt and pepper and stir in the Parmesan cheese.
  • Place the chicken back in the pan and cook for another 5 minutes then serve.

1 (18 ounce) package gnocchi
1 tablespoon unsalted butter
½ cup sliced fresh mushrooms
4 cloves garlic, minced
¼ cup heavy whipping cream
4 cups baby spinach
1 (5.2 ounce) package garlic and herb cheese spread (such as Boursin®)
¾ cup reserved pasta water

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes.
  • Meanwhile, melt butter in a heavy skillet over medium-high heat. Add sliced mushrooms and sauté until softened, about 3 minutes. Add garlic and sauté until fragrant, about 30 seconds. Reduce heat, and pour in cream.
  • Scoop out 3/4 cup of pasta cooking water and set aside. Place spinach in the bottom of a colander and drain the gnocchi over the spinach to wilt it.
  • Stir cheese into the skillet and add reserved cooking water; keep stirring until cheese is melted.
  • Add gnocchi and wilted spinach to the skillet and stir until well combined. Serve immediately.

1 package boneless, skinless chicken breasts - 5 per package
1 carton sliced mushrooms, finely chopped
11 oz diced white onion
bag of baby spinach, roughly chopped
3 Tbsp Adams Reserve Sun-Dried Tomato Bread Dipper
1/4 cup grated parmesan cheese
2 Tbsp olive oil
1 jar Orti Di Calabria Vodka Sauce

Steps:

  • Preheat oven to 350 degrees F. Butterfly each chicken breast. Place between two pieces of plastic wrap and pound until 1/4 inch in thickness. Coat breasts in Sun-Dried Tomato Bread Dipper. In a large skillet, heat the olive oil over medium high heat. Add the onions and saute for 7-8 minutes or until tranlucent. Add the mushrooms and saute for an additional 7-8 minutes or until the mushrooms have reduced by half. Add the spinach and saute for 4-5 minutes. Remove from heat and add in the parmesan cheese. Divide the mushroom, onion, spinach, and cheese mixture equally on top of each chicken breast. Roll chicken breasts up to form tight rolls. Place chicken rolls in a greased baking dish and pour the Vodka sauce on top and bake for 35-40 minutes, or until they reach an internal temperature of 165 degrees F.
