SPINACH-RICOTTA PINWHEEL LASAGNA WITH SIMPLE TOMATO SAUCE



Spinach-Ricotta Pinwheel Lasagna with Simple Tomato Sauce image

8 ounces ripple-style oven-ready lasagna noodles
8 garlic cloves, minced, divided
3 tablespoons olive oil, divided
2 cans (28 ounces each) crushed tomatoes
2 teaspoons dried basil leaves
1 bag (16 ounces) frozen chopped spinach, thawed and squeezed dry
Salt and ground black pepper
2 cups part-skim ricotta
¾ cup grated Parmesan
1 cup fontinella (or fontina) cheese

Steps:

  • Adjust oven rack to upper-middle position and heat oven to 400 degrees. Add lasagna noodles to 2 quarts of piping hot salted tap water in the 13- by 9-inch baking dish for the lasagna. Add noodles; soak until soft, about 10 minutes. Drain, stack, and halve lengthwise to create 24 strips.
  • Meanwhile, add 5 of the garlic cloves and 2 tablespoons of the oil to a Dutch oven; turn burner to medium-high. When garlic starts to sizzle, add tomatoes and enough water (1/2 cup or so) to make a sauce that is neither gloppy nor thin. Bring to a simmer, reduce heat to medium-low, and continue to simmer to blend flavors, about 10 minutes.
  • While sauce simmers, add basil and remaining 3 garlic cloves and 1 tablespoon of oil in a large skillet. Turn burner to medium-high. When garlic sizzles, add spinach; sauté until warmed through, seasoning with salt and pepper to taste. Stir in ricotta and ½ cup of the Parmesan cheese; adjust seasonings.
  • When ready to assemble, spread 2 cups of the tomato sauce in a 13- by 9-inch pan. Working 6 noodles at a time put a generous 2 tablespoons of spinach filling down each of the lasagna strips. Roll up to create a pinwheel shape; Place pinwheel-side down in the prepared pan. Repeat with remaining noodles and filling to make 4 rows of 6 noodles. Drizzle another 2 cups of sauce over dish, sprinkle with fontinella and remaining ¼ cup of Parmesan. Cover with a vegetable cooking spray-coated sheet of aluminum foil.
  • Bake until bubbly, 30 to 35 minutes. Remove foil, and leaving pan on upper-middle rack, broil until golden, 3 to 5 minutes longer. Remove from oven; let rest 5 minutes. Serve with remaining warm tomato sauce served alongside.

12 uncooked lasagna noodles
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cartons (15 ounces each) fat-free ricotta cheese
1 large egg
1 large egg white
1 cup grated Parmesan cheese, divided
1 garlic clove, minced
1 teaspoon dried basil
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
3 cups shredded part-skim mozzarella cheese
2 cans (15 ounces each) tomato sauce

Steps:

  • Cook noodles according to package directions. Rinse in cold water; drain well., In a large bowl, combine the spinach, ricotta cheese, egg, egg white, 1/4 cup Parmesan cheese, garlic, basil, pepper and nutmeg. Combine mozzarella cheese and remaining Parmesan cheese., In a 13x9-in. baking dish coated with cooking spray, layer three noodles, 3/4 cup tomato sauce, 1 cup spinach mixture and 3/4 cup cheese mixture. Repeat layers three times., Bake, uncovered, at 375° for 45-50 minutes or until bubbly. Let stand for 10-15 minutes before cutting.

20 lasagna noodles
2 tablespoons olive oil
1 cup chopped fresh mushrooms
1 cup chopped onion
1 tablespoon minced garlic
2 cups fresh spinach
3 cups ricotta cheese
⅔ cup grated Romano cheese
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil leaves
½ teaspoon ground black pepper
1 egg
3 cups shredded mozzarella cheese
3 cups tomato pasta sauce
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
  • In a skillet over medium-high heat, cook mushrooms, onions, and garlic in olive oil until onions are tender. Drain excess liquid and cool. Boil spinach for 5 minutes. Drain, then squeeze out excess liquid. Chop spinach.
  • Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl. Add cooled mushroom mixture. Beat with an electric mixer on low speed for 1 minute. Lay 5 lasagna noodles in bottom of a 9x13 inch baking dish. Spread one third of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and 1/3 cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese. Repeat layering 2 times.
  • Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool 15 minutes before serving.

2 cups part-skim ricotta cheese
3/4 cup grated parmesan cheese
1 cup shredded fontinella cheese or 1 cup Fontina cheese

Steps:

  • Heat oven to 400 degrees F. Add lasagna noodles to 2 qts of piping hot salted tap water in a 9x13 baking dish. Soak until soft, about 10 minutes. Drain, stack and halve lengthwise to create 24 strips.
  • Add 5 garlic cloves and 2 tbsp oil to a Dutch oven on medium-high heat until garlic startes to sizzle. Add tomatoes and 1/2 C water (more or less for a sauce that is neither gloppy nor thin). Bring to a simmer, reduce heat to medium-low and continue to simmer to blend flavors, about 10 minutes.
  • Put basil and remaining 3 garlic cloves and 1 tbsp of oil in a large skillet on medium-high heat. When garlic starts to sizzle, add spinach. Saute until warm, seasoning with salt and pepper to taste. Stir in ricotta and 1/2 C Parmesan.
  • To assemble -- spread 2 C tomato sauce in the 9x13 baking dish. Working 6 noodles at a time, spread a generous 2 tbsp of spinach filling on each lasagna strip. Roll up lengthwise to create a pinwheel shape. Place folded end down in dish. Repeat to make 4 rows of 6 noodles. Drizzle remaining 2 C of sauce over all, sprinkle with fontinella and remaining 1/4 C of Parmesan. Cover with a cooking-spray-coated sheet of aluminum foil.
  • Bake until bubbly, 30 to 35 minutes. Remove foil, and leaving pan on upper-midde rack, broil until golden, 3-5 minutes longer. Remove from oven; let rest 5 minutes. Serve with remaining tomato sauce.

1 pound peeled and seeded pumpkin, cut into pieces
1 tablespoon butter, softened
1 teaspoon ground cinnamon
sea salt and ground black pepper to taste
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
2 bay leaves
1 tablespoon olive oil
1 onion, thinly sliced
1 fennel bulb, thinly sliced
4 cloves garlic, minced
1 (10 ounce) bag baby spinach
1 (16 ounce) container low-fat ricotta cheese
1 ½ teaspoons ground nutmeg
1 tablespoon olive oil
½ pound lean ground beef
2 tablespoons tomato paste
1 (14.25 ounce) can tomato puree
12 dry lasagna noodles
⅓ cup freshly grated Parmesan

Steps:

  • Fill a saucepan with 1/2 inch of water, then add pumpkin pieces. Bring to a boil over high heat, then reduce heat to medium-low, cover, and steam until the pumpkin is very tender, 10 to 15 minutes. Drain pumpkin, then mash with 1 tablespoon butter, cinnamon; salt and pepper to taste, then set aside.
  • Melt 2 tablespoons butter in a saucepan over medium heat. Whisk in flour and cook, stirring constantly, until the paste just begins to turn golden, about 2 minutes. Whisk in milk gradually so that no lumps form. Bring to a gentle boil. Add the bay leaves, and reduce heat to low or warm. Allow to gently cook for 10 to 15 minutes, stirring frequently, then remove from heat.
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Stir in onion, fennel, and garlic; cook until the onion has softened and turned translucent, about 5 minutes. Add spinach and cook until wilted. Scrape mixture into a large bowl, and mix well with ricotta cheese and nutmeg.
  • Using the same skillet, heat another 1 tablespoon olive oil over high heat. Brown ground beef in oil, mixing thoroughly to break into small pieces. Once browned, reduce heat to medium-low and pour off excess grease. Stir in tomato paste and tomato puree. Gently simmer until thickened, about 10 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch lasagna dish.
  • Line the bottom of the lasagna dish with 4 noodles, do not overlap. Spread the ricotta mixture evenly over noodles, then sprinkle with 1/3 of the Parmesan cheese. Place another 4 noodles on top of the ricotta, then spread with evenly with the mashed pumpkin. Place the remaining 4 noodles on top of the pumpkin and top with the tomato sauce; sprinkle with another 1/3 of the Parmesan cheese. Stir the white sauce until smooth, then discard the bay leaves; pour the sauce over top of the lasagna. Sprinkle with remaining Parmesan cheese.
  • Place lasagna dish onto a foil-lined baking sheet (to catch any spills). Bake in preheated oven until the noodles have softened, and the white sauce has turned bubbly and golden brown, about 30 minutes.
