SPINACH AND STRAWBERRY SALAD



Spinach and Strawberry Salad image

This healthy spinach and strawberry salad recipe from Paula Deen is a vegetarian dish. Ingredients include sliced almonds, baby spinach, fresh strawberries, poppy seeds and cucumbers. Prep time is about 15 minutes ad cooking time is 15 minutes.

1 (10-12 oz) package washed and dried baby spinach
1/3 cup toasted sliced almonds
1 quart hulled and quartered strawberries
1 whole peeled, seeded, and finely diced cucumber
1/2 juiced lemon
2 tablespoons white wine vinegar
1/3 cup sugar
1 tablespoon vegetable oil
1 teaspoon poppy seeds

Steps:

  • In a large salad bowl, toss together the spinach, almonds, strawberries, and cucumber. In a small glass dish or jar with a tight-fitting lid, combine the lemon juice, vinegar, sugar, oil and poppy seeds. Whisk in the glass dish or shake if using a jar.
  • Dress the salad right before serving.

1/3 cup cider vinegar
3/4 cup sugar
2 tablespoons fresh lemon juice
1 teaspoon salt
1 cup vegetable oil
1/2 small red onion, grated
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 1/2 lbs fresh spinach, washed and torn intp pieces
1 (4 ounce) can hearts of palm, drained and chopped
2 cups strawberries, stemmed and sliced
1 cup chopped walnuts

Steps:

  • For the dressing, combine the vinegar, sugar, lemon juice, and salt in a small non-reactive saucepan and heat over medium heat until the sugar dissolves, stirring frequently. Remove pan from heat and let cool to room temperature. When cooled, whisk in the oil, onion, poppy seeds, dry mustard and paprika until thoroughly combined. Set dressing aside.
  • In a salad bowl, combine the spinach, hearts of palm, strawberries, and walnts. When ready to serve, add some of the dressing, and toss gently. Serve the remaining dressing alongside the salad so diners may add more, if desired.

Steps:

  • For the dressing, combine the vinegar, sugar, lemon juice, and salt in a saucepan and heat until the sugar dissolves, stirring frequently. Cool to room temperature. Whisk in the oil, onion, poppy seeds, dry mustard, and paprika, and set aside. Combine the spinach, hearts of palm, strawberries, and walnuts in a salad bowl. Add a little of the dressing at serving time and toss gently. Serve the remaining dressing alongside, so guests may help themselves.
