Why serve chicken salad on ordinary rolls when you can make these spooky sandwiches? -Taste of Home Test Kitchen

2 cups cubed cooked chicken breast
1/2 cup dried cranberries, optional
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/4 cup chopped celery
1/4 teaspoon salt
1/4 teaspoon pepper
12 dinner rolls, split and toasted
1 jar (15 ounces) process cheese sauce
24 pimiento-stuffed olives
12 pimiento strips
6 whole baby dill pickles, cut in half lengthwise

Steps:

  • In a large bowl, combine the chicken, cranberries if desired, mayonnaise, onion, celery, salt and pepper. Fill rolls with chicken mixture. , Heat cheese sauce to soften; drizzle or pipe over top of each sandwich to resemble hair. For each monster sandwich, attach olives for eyes, pimiento strips for noses and pickles for fangs.

Turn your boring sandwich into a spooky lunchtime surprise!

2 tablespoons natural peanut butter
2 tablespoons all-fruit spread
OR
4 ounces lean turkey deli meat
2 slices reduced-fat Cheddar cheese
4 slices whole-grain bread
Halloween cookie cutters

Steps:

  • Prepare sandwiches, adding additional condiments if desired.
  • Use cookie cutters to trim into desired shapes.
  • To eliminate waste, arrange cookie cutters so you can get at least two shapes from each slice of bread.
  • Or, you can use a cookie cutter just on the top slice of bread.
  • For lunch, press the cookie cutter down and don't remove the cut-out. Your little ones will get a fun middle section of the sandwich, and the outside bits won't go to waste (we hope!).

Head to the deli and buy cured Italian meats and fresh mozzarella to make this Bostonian favorite sandwich at home.

1 loaf freshly-baked Italian bread roll ((locally known as spucadella))
25 grams fennel salami
25 grams hot capicola
25 grams mortadella
1 pack fresh mozzarella
1 tablespoon extra-virgin olive oil
2-3 pieces carrots
¼ piece Iceberg lettuce
1 can Italian mixed olives ((any jar/can of mixed olives will do))

Steps:

  • Shred ¼ of the lettuce into ⅛-inch thick shreds
  • Peel 1-2 carrots and slice them into long and thin slices
  • Pit the olives and make sure no stones are left
  • Mix into a fresh salad, season to taste
  • Slice open the Italian bread roll lengthwise with a sharp knife
  • Brush the insides with extra-virgin olive oil
  • Layer the fennel salami, hot capicola, and mortadella meats
  • Tear the fresh mozzarella by hand into small chunks and layer on top of the sandwich
  • Add some of the fresh salad to your spuckie and close the sandwich

2 slices white bread
2 tbsps peanut butter
1 tbsp jelly or preserves

Steps:

  • Fill each paper cup with 2 tablespoons milk. Stir a few drops of food color into each cup until well blended.
  • Paint Halloween pictures and designs on one of the bread slices using new paint brushes and tinted milks. Lightly toast to set the design.
  • Spread remaining bread slice with peanut butter and jelly. Top with painted bread slice to make a spooky sandwich.

8 slices of bread
48 pretzel sticks
16 candy eyes
1 cup strawberry jelly
1 cup peanut butter

Steps:

  • Place bread on a cutting board. Use the biscuit cutter to cut out the center of the bread into circles. Do this for all the slices and set aside.
  • Put peanut butter on four of the slices of the bread. Put jelly on four slices of bread. Place the pieces together. You can use other ingredients for the center of the sandwiches.
  • Stick three pretzels on each side of the sandwich for legs. Place two candy eyes on top of each sandwich.

  • Line 2 baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugars. Optional add black food coloring to get a deeper shade of black in the cookies. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Blend in the egg and vanilla, scrape down the bowl if needed.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients into the wet ingredients in the mixer on low speed just until incorporated. Mix in the milk on the lowest speed and fold in the chocolate chips.
  • Roll about 2 tablespoons of dough into balls and place on the baking sheets. Flatten slightly. Top cookies with candy eyeballs. Place cookie sheet in freezer for 10-15 minutes. (Alternately you can chill the dough for at least 2 hours or up to 36.)
  • Bake at 350˚ F for 10-11 minutes. Let cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely.
