Springtime Pea Salad image

This salad is nice a change from a usual lettuce salad. It's the perfect side salad for a spring or summer day.

10 ounces frozen peas, thawed
2 stalks celery, thinly sliced
1 cup fresh small cauliflower floret
3 green onions, thinly sliced
1/4 cup low-fat ranch dressing
1/8 cup nonfat sour cream
1/4 cup sunflower seeds

Steps:

  • Combine vegetables (to thaw peas quickly, run warm water over them).
  • Combine dressing.
  • Pour over salad and mix well.
  • Add sunflour seeds.

1 package (10 ounces) frozen peas, thawed
2 celery ribs, thinly sliced
1 cup small cauliflowerets
3 green onions, thinly sliced
1/2 cup ranch salad dressing
1/4 cup sour cream
4 bacon strips, cooked and crumbled
1/4 cup sunflower kernels

Steps:

  • In a large bowl, combine peas, celery, cauliflower and onions. Combine dressing and sour cream; pour over salad and mix well. Cover and refrigerate for 1 hour. Just before serving, stir in bacon and sunflower kernels.

1 can of chickpeas
1/2 cucumber
10 baby carrots
1 red pepper
1/2 cup feta cheese
2 tablespoons olive oil
1 teaspoon greek seasoning (or a seasoning of your choice)
3 tablespoons balsamic vinegar

Steps:

  • Chop your vegetables and mix them in a bowl. Add in the feta cheese.
  • In a small bowl, mix olive oil, balsamic vinegar and seasoning.
  • Mix dressing and vegetables and let sit in the fridge overnight.
