ST. PATRICK'S COLCANNON

St. Patrick's Colcannon image

This is an 'Irish' way to deal with the leftover corned beef after the American corned beef and cabbage feast. My husband considers this a wonderful part of the corned beef cycle. I use red potatoes with skins on, substitute ham for the corned beef, and leeks for the green onions, depends on what's in the fridge.

Provided by Lisa Deutsch Harrigan

Categories     Main Dish Recipes     Beef     Corned Beef Recipes

Yield 8

Number Of Ingredients 9

3 pounds red potatoes, quartered
1 head cabbage, cored and shredded
2 tablespoons butter
½ cup butter
1 teaspoon minced garlic
4 green onions, sliced, white parts and tops separated
white pepper to taste
1 ¼ cups hot milk
1 pound leftover corned beef, cut into pieces and warmed

Steps:

  • Place potatoes in a large saucepan and add water to cover by 1-inch. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Stir in cabbage along with 2 tablespoons of butter; cover, and simmer until the cabbage has softened. Drain.
  • Melt 1/2-cup butter over medium heat. Stir in garlic and the white parts of the green onions. Cook until the garlic has softened and mellowed.
  • Drain the potatoes and mash with white pepper to taste. Fold in melted butter, milk, cabbage, and corned beef. Sprinkle with green onion tops to serve.

CHEF JOHN'S COLCANNON

Chef John's Colcannon image

Colcannon is probably my favorite St. Patrick's Day recipe. It combines the lovely, spring-is-finally-here-greenness of kale and leeks with the always alluring comfort of buttery mashed potatoes.

Provided by Chef John

Categories     Side Dish     Potato Side Dish Recipes     Mashed Potato Recipes

Time 35m

Yield 6

Number Of Ingredients 10

3 large russet potatoes, peeled and quartered
2 tablespoons butter at room temperature
4 ounces kale, trimmed and chopped
1 leek, light parts only, rinsed and chopped
1 bunch green onions, chopped, white and green parts separated
2 tablespoons butter at room temperature
salt and ground black pepper to taste
¼ cup heavy whipping cream
2 tablespoons butter, for serving
¼ cup green onions to garnish

Steps:

  • Boil potatoes in a large pot of salted water until tender, about 10 minutes. Drain and transfer potatoes to a large bowl. Add 2 tablespoons butter and lightly mash the potatoes.
  • Boil kale and leeks in a large pot of water until tender, 5 to 7 minutes. Drain and transfer kale and leeks to a blender. Add white parts of the green onions and 2 more tablespoons butter; blend until smooth, scraping down sides as needed, 1 to 3 minutes.
  • Stir pureed kale mixture into the bowl of potatoes and continue to mash. Season with salt and black pepper to taste. Add cream and stir until desired texture. Top with 2 tablespoons butter and green parts of the green onions.

Top Asked Questions

Can vegans eat colcannon for St Patrick's Day?
Looking for a St. Patrick's Day meal vegans can enjoy, or just longing for a wee taste of Ireland? Colcannon is a traditional Irish side dish made with potatoes and cabbage, and this Irish colcannon recipe puts a vegan twist on the classic Irish dish.
What are some recipes to cook for St Patrick's Day?
A classic St. Patrick's Day feast involves corned beef and cabbage and maybe a swig or two of beer—but there are many more delicious recipes to cook up. Whether your family has been observing St. Patrick's Day for generations or you just love an excuse to entertain friends, a St. Patrick's Day celebration is in order.
Do you have to be Irish to eat colcannon?
But you certainly don't have to wait until St. Patrick's Day, and you don't have to be Irish—or even vegan for that matter—to enjoy this healthier and reduced-fat version of Irish colcannon anytime you like! Place potatoes in a large pot and add enough water to cover the potatoes.
What is colcannon and how do you make it?
This can be made with kale in place of cabbage but I personally prefer the softer sweeter flavor of cabbage. Colcannon is traditionally topped with melted butter (and we all know that mashed potatoes and butter are a match made in heaven).
