TEX-MEX CORNBREAD SALAD

1 package cornbread mix, prepared as directed
2 (15 ounce) cans pinto beans or 2 (15 ounce) cans kidney beans, drained
3 tomatoes, seeded and chopped
1 bunch green onion, chopped
1 small green pepper, diced
2 jalapeno peppers, seeded and diced
12 strips bacon, cooked crisply and crumbled
2 cups monterey jack cheese, shredded
34 ounces whole kernel corn, drained
1 cup sour cream
1 cup salsa
1 cup mayonnaise
1 package dry ranch dressing mix

Steps:

  • Use a deep glass bowl or small punch bowl.
  • Crumble half of the baked cornbread in the bottom of the bowl.
  • Top with half of the beans.
  • In a small bowl, combine the tomatoes, onions, green pepper, and jalapeno peppers.
  • Spread half of the tomato mixture over the beans, then sprinkle with half the bacon, half the cheese and half of the corn.
  • In another small bowl, stir together the sour cream, salsa, mayonnaise and Ranch dressing mix.
  • Spread half of the sour cream mixture ofer the corn (drop by spoonfuls and spread gently).
  • Repeat the process with the remaining ingredients.
  • Cover and chill for several hours before serving.
  • Garnish with a little shredded Cheddar cheese if desired.

Memphis in May is a barbecue competition that takes place the third weekend of May at Tom Lee Park on the Mississippi River. It is the largest pork cookoff in the world and is often called "The Super Bowl of Swine." The Big Bob Gibson Competition Cooking Team has attended this contest since 1997 and to date we have never finished out of the top ten. We've won the pork shoulder category six times, won first place in sauce three times, and won the Grand Championship twice. But it is not our success in the competition that stirs the fondest memories of this event; it is the time spent with friends and family while enjoying the relaxing atmosphere. It is a tradition for us to put on a big feed the Friday night before the most serious part of the competition begins. Our menu changes year to year but almost always includes pork tenderloin, bean salad, homemade pies, and this stacked cornbread vegetable salsa salad. I am not sure where this recipe originally came from, but my mother-in-law, Carolyn McLemore, and her friend Joyce Terry always treat us to a big batch at this annual event. It's good and it goes really well with smoked pork tenderloin.

Yield serves 8 to 10

Number Of Ingredients 18

1 tablespoon vegetable oil
3 cups buttermilk
2 eggs
2 cups yellow cornmeal
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
4 ounces chopped Jalapeño pepper, seeds and ribs removed (optional)
1 pound bacon
1 package ranch-style dressing mix
8 ounces sour cream
1 cup mayonnaise
3 tomatoes, chopped
1/2 cup chopped green bell pepper
1/2 cup chopped green onions
2 16-ounces can pinto beans, drained and rinsed
3 cups shredded cheddar cheese
1 15-ounces can whole kernel corn, drained

Steps:

  • Preheat the oven to 450°F. Coat the bottom and sides of a 10-inch cast-iron skillet with the vegetable oil and place in the oven to heat. In a medium bowl, combine the buttermilk and eggs and stir. Add the cornmeal, baking soda, baking powder, salt, and jalapeño pepper while stirring briskly. Pour the batter into the hot skillet. Bake for 15 minutes, or until lightly browned. Let cool.
  • While the cornbread bakes, fry the bacon in a skillet over medium-high heat until crisp. Drain well on paper towels. When cool, crumble into small pieces.
  • In a medium bowl, combine the ranch dressing mix, sour cream, and mayonnaise and mix well. In another bowl, combine the tomatoes, bell pepper, and green onions to form a chunky salsa. Crumble the cooled cornbread and place half in the bottom of a large serving bowl. Top with half of the pinto beans. Layer half of the salsa mixture over the beans. Follow with half of the cheese, bacon, and corn, and top with half of the dressing. Make a second layer, ending with the dressing. Cover and chill for at least 2 hours before serving.

Everytime I serve this its a hit, I have used regular pinto beans and added my own chilies, and I used blacked eyed peas/with jalapeno instead of the pinto beans.

1 (9 ounce) package cornbread mix
1 cup mayonnaise
1 cup sour cream
1 (1 ounce) envelope ranch dressing mix
2 (11 ounce) cans mexicorn, drained
2 (16 ounce) cans pinto beans with jalapeno peppers, drained
2 medium tomatoes, chopped
1 green bell pepper, chopped
1 bunch green onion, chopped
2 cups shredded cheddar cheese

Steps:

  • Prepare and bake the cornbread using package directions. Let stand until cool.
  • Combine the mayonnaise, sour cream, and dressing mix in a bowl; mix well.
  • Toss the tomatoes, bell pepper, and green onions in a bowl.
  • Crumble 1/2 of the cornbread into a large salad bowl or rectangular cake pan. Layer with 1 can of the pinto beans, 1/2 of the tomato mixture, 1 cup of the cheese and 1 can of the corn. Spread with 1/2 of the mayonnaise mixture. Repeat the layers with the remaining ingredients. Chill, covered for two hours.

1 package (8-1/2 ounces) cornbread/muffin mix
1 cup sour cream
1 cup mayonnaise
1 envelope ranch salad dressing mix
3 large tomatoes, seeded and chopped
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
1 cup thinly sliced green onions, divided
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cups shredded cheddar cheese
10 bacon strips, cooked and crumbled
3-1/2 cups frozen corn, thawed

Steps:

  • Prepare and bake cornbread mix according to package directions, using an 8-in. square baking dish. Crumble when cool., Mix sour cream, mayonnaise and salad dressing mix until blended. In a separate bowl, combine tomatoes, peppers and 1/2 cup green onions. , In a 3-qt. glass bowl, layer half of each: cornbread, beans, tomato mixture, cheese, bacon, corn and dressing. Repeat layers. Top with remaining green onions. Refrigerate 3 hours.

1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
fresh ground pepper
3 large eggs, lightly beaten
1/2 cup buttermilk or 1/2 cup equivalent dry buttermilk
1 tablespoon butter, melted
1 tablespoon honey
1/2 cup drained canned corn kernel
1 small onion, diced
1/2 cup chopped tomato
1 garlic clove, minced
1 jalapeno pepper, seeded and minced
1/2 cup grated cheddar cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Place a 9-inch cast-iron skillet (or similar ovenproof skillet, see Tip) in the oven to heat.
  • Whisk all-purpose flour, whole-wheat flour, cornmeal, baking powder, salt and pepper in a large mixing bowl.
  • Whisk eggs, buttermilk, butter and honey in a medium bowl.
  • Add the egg mixture to the dry ingredients; mix with a rubber spatula.
  • Stir in corn, onion, tomato, garlic and jalapeno.
  • Remove the skillet from the oven and coat it with cooking spray.
  • Pour in the batter, spreading evenly.
  • Sprinkle cheese over the top.
  • Bake the cornbread until golden brown and a knife inserted into the center comes out clean, 20 to 25 minutes.
  • Serve warm.
