1 1/2 cups all-purpose flour (see Cook's Note)
1 3/4 teaspoons baking powder
1 cup granulated sugar
1 stick (8 tablespoons) unsalted butter
1 1/2 teaspoons vanilla extract
2 large eggs
1/2 cup milk
Cooking spray
Red food coloring, as needed
Blue food coloring, as needed
1 1/2 cups all-purpose flour (see Cook's Note)
1 3/4 teaspoons baking powder
1 cup granulated sugar
1 stick (8 tablespoons) unsalted butter
1 1/2 teaspoons vanilla extract
2 large eggs
1/2 cup milk
Cooking spray
2 cups unsalted butter (4 sticks), softened
5 to 6 cups confectioners' sugar
1/4 teaspoon table salt
1 tablespoon vanilla extract
1 tablespoon heavy cream
Red, white and blue sprinkles, for decorating

Steps:

  • Preheat the oven to 350 degrees F. Coat a half sheet pan or jelly roll pan with cooking spray.
  • For the red-and-blue cake: Combine the flour and baking powder in a medium bowl. Beat the sugar and butter with an electric mixer in a large bowl until smooth. Beat in the vanilla. Beat in the eggs, one at a time. Gradually add the flour mixture, mixing until fully incorporated. Stir in the milk until the batter is smooth.
  • Divide the batter between two medium bowls. Use food coloring to tint one bowl red and the other blue. Transfer each of the colored batters to plastic piping bags or resealable plastic bags. Snip the end of each bag, and pipe your batter into the half sheet pan or jelly roll pan in 1/2-inch-thick rows, alternating colors.
  • Bake the sheet cake until a toothpick inserted into the center comes out clean, 12 to 15 minutes. Let the cake cool to room temperature. Once cool, use a star-shaped cookie cutter to cut out shapes from the striped cake.
  • For the white cake: Combine the flour and baking powder in a medium bowl. Beat the sugar and butter with an electric mixer in a large bowl until smooth. Beat in the vanilla. Beat in the eggs, one at a time. Gradually add the flour mixture, mixing until fully incorporated. Stir in the milk until the batter is smooth. Transfer the batter to a piping bag or resealable plastic bag. Coat an 8 1/2-by-4 1/2-inch loaf pan with cooking spray. Pipe a thin layer of the white batter, about 1 inch deep, into the bottom of the pan.
  • In the loaf pan, stand the star cakes upright and press them into the batter, creating two rows, side by side. Pipe the remaining white batter into the pan, covering the stars.
  • Bake the loaf for 35 to 40 minutes, until a toothpick inserted into the center of the cake comes out clean. Cool the cake in the pan on a wire rack for 5 minutes, then unmold it and cool to room temperature.
  • For the buttercream frosting: Beat the butter until it is light and fluffy, preferably in a stand mixer with the paddle attachment on medium speed. With the mixer on low speed, gradually add the confectioners' sugar, 1 to 2 cups at a time, allowing each batch to incorporate with the butter. (Use less confectioners' sugar for a slightly more buttery, looser frosting; use more confectioners' sugar for a slightly sweeter, stiffer frosting.) Increase the speed to medium, and add the salt, vanilla extract and cream. Beat until smooth, an additional 3 minutes.
  • Use a serrated knife to level the cake and to carve off any dark brown spots. Place the cake on a serving plate.
  • Frost the cake with an initial thin layer of buttercream. Place the cake in the refrigerator for at least 15 minutes to allow the frosting to harden. (Note: This first layer doesn't need to look perfect, as the next layer of buttercream will cover it up.)
  • Using an offset spatula, and working in an upward direction around the cake, add a second layer of frosting, approximately 1/2 inch thick. Add the remaining buttercream to a piping bag or resealable plastic bag fitted with a star tip (such as a Wilton #32 tip). Working in rows, pipe small dollops of frosting onto the top of your cake.
  • Sprinkle with the red, white and blue sprinkles.

Water, vegetable oil and eggs called for on cake mix boxes
2 containers Betty Crocker™ Whipped vanilla frosting
2 cups M&M's® chocolate candies
1 cup M&M's® minis chocolate candies
3/4 cup assorted Betty Crocker™ candy sprinkles

Steps:

  • Heat oven to 350°F. Grease or spray two 8-inch round cake pans; place 8-inch round piece of cooking parchment paper in bottom of each pan. Grease or spray parchment paper. In large bowl, beat 1 box cake mix and ingredients called for on box with electric mixer on low speed 30 seconds, then on high speed about 2 minutes or until smooth. Spread in pans. Bake as directed on box. Cool 10 minutes; run knife around sides of pans to loosen cakes. Gently remove from pans to cooling rack; remove parchment paper. Cool completely, about 30 minutes. Meanwhile, repeat to make 2 more layers.
  • Flatten cake layers by trimming off rounded tops. In 2 layers, cut small round out of center, using 4-inch round cutter.
  • To assemble cake: Place 1 uncut cake layer on cake stand or serving platter; spread 1/3 cup frosting on top. Top with 1 layer with center removed; spread 1/3 cup frosting on top. Top with second layer with center removed; spread 1/3 cup frosting on top.
  • Fill cake with candies and candy sprinkles. Gently press candies to level; top with full cake layer. Frost side and top of cake with remaining frosting.

1 pouch Betty Crocker™ sugar cookie mix
1/3 cup butter, softened
1 tablespoon Gold Medal™ all-purpose flour
1 egg
1 box Betty Crocker™ Super Moist™ red velvet cake mix
Water, vegetable oil and eggs called for on cake mix box
1 jar (7 oz) marshmallow creme
1 cup butter, softened
1 to 2 tablespoons milk
3 cups powdered sugar

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, 1/3 cup butter, the flour and egg until soft dough forms. On floured surface, roll dough 1/4 inch thick. Cut with 1- to 1 1/4-inch star cookie cutter, making 92 stars. Place 1 inch apart on ungreased cookie sheets.
  • Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.
  • Reduce oven temperature to 350°F. Place paper baking cup in each of 23 regular-size muffin cups (make a small cut in each baking cup to mark the front of the cupcake).
  • Make cake batter as directed on box. Spoon batter into 1 baking cup, three-fourths full (this cupcake will be crumbled and used as a garnish). Spoon 1 heaping tablespoonful remaining batter into each of remaining 23 baking cups. Place 3 cookie stars, standing up in center of batter, in each of the 23 baking cups. Carefully spoon 2 heaping tablespoonsful remaining batter on top of cookie stars in each, taking care not to tip them over.
  • Bake at 350°F 22 to 27 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pans to cooling rack. Cool completely, about 25 minutes.
  • In large bowl, beat marshmallow creme, 1 cup butter and 1 tablespoon of the milk with electric mixer on medium speed until well blended. Beat in powdered sugar on low speed, adding 1 teaspoon milk at a time as needed, until fluffy and spreadable.
  • Pipe or spread frosting over top of each cupcake. Place remaining cookie stars on tops of cupcakes, facing front of cupcake where small cut is. In small bowl, crumble remaining cupcake without star cookies inside; sprinkle on cupcakes.

This is a cheater's short cut as it uses a cake mix. However what is special is the addition of pudding and a bunch of eggs. It is rich and tasty.

5 star fruit, ribs and ends trimmed then slice 1/4-inch thick
1 cup sugar
1 cup water
1/2 cup butter
1 cup brown sugar
1 signature pineapple supreme cake mix (Yellow will do, if you use that add pineapple and use pineapple juice instead of water)
1 (3 1/2 ounce) package instant vanilla pudding
4 large eggs
1 cup water
1/2 cup vegetable oil (I use canola)

Steps:

  • Preheat oven to 350°F.
  • Bring sugar and water to a gentle boil in a wide (12 inch or more) saute pan. Add the star fruit in a single layer and allow to simmer for 5 minutes, turning over halfway.
  • Remove with a slotted spoon and drain in a large sieve or paper towels.
  • Melt butter over a low heat in a 12 inch cast iron skillet or other oven proof pan with a handle.
  • Remove from heat.
  • Stir in the brown sugar and spread it to evenly cover the bottom of the skillet.
  • Arrange the star fruit in a single layer on the brown sugar/butter mix.
  • Combine the cake mix, pudding mis, eggs, water and oil. Beat for 2 minutes.
  • Pour batter gently over the star fruit and bake in the center of the oven for an hour or until toothpick comes out clean.
  • Invert over a serving plate as soon as the cake comes out of th oven.

2 pints fresh strawberries, hulled and sliced
½ cup white sugar
1 (.25 ounce) envelope plain unflavored gelatin
2 pints fresh blueberries
½ cup white sugar
1 (.25 ounce) envelope plain unflavored gelatin
2 (10.75 ounce) loaves angel food cake, sliced 1 inch thick
2 (8 ounce) tubs frozen whipped topping, thawed

Steps:

  • Mix half of the strawberries, 1/2 cup of sugar, and 1 envelope of gelatin in a bowl. Set aside at room temperature to allow the juices to develop and the sugar and gelatin to dissolve, about 15 minutes. Heat in the microwave for 2 minutes on full power, or until gelatin has dissolved. Stir to blend in the gelatin and then mix in the remaining strawberries.
  • In a separate bowl, mash 1 cup of the blue berries with the back of a fork. Stir in 1/2 cup of sugar, and 1 envelope of gelatin. Set aside at room temperature to allow the juices to develop and the sugar and gelatin to dissolve. Heat in the microwave for about 2 minutes to melt the gelatin, then stir to blend. Mix in the remaining blueberries.
  • Cover the bottom and sides of a springform or a tall, removable bottom tube pan tightly with aluminum foil to keep the juices from seeping out.
  • Pour all of the strawberry mixture into the bottom of the cake pan, cover completely with slices of angel food cake, tearing or cutting pieces to fit in a tight layer. Spread 1 container of whipped topping over the first cake layer. Make a second layer of angel food cake, like the first, and pour the blueberry mixture evenly over the top. Arrange the angel food cake in a third layer on top of the blueberries, spread the remaining container of whipped topping on top. Finish the dessert with a final layer of angel food cake.
  • The layered cake will be higher than the edges of your pan. Carefully lay a large piece of aluminum foil over the cake and place a baking sheet on top. Invert the cake, press the cake firmly onto the baking sheet. Weigh down the mold, using pie weights or bags of dry beans or rice; refrigerate 8 hours, or overnight.
  • Soak a kitchen towel in very hot water, wring out excess water, and wrap the towel around the cake pan; let stand for 1 minute. Remove the towel. Holding the pan and plate together, shake the cake back and forth to release it from the sides of the pan. Open the springform ring carefully, or pull back the sides of the tube pan. Do not force the cake to release. If it continues to stick, repeat the procedure with the hot towel.

20cm fruitcake , see 'Goes well with'
5 tbsp apricot jam (optional)
750g golden marzipan
750g white ready-to-roll icing
three 5-pointed star cutters - small, medium and large
30g pack small gold balls
approx 65cm length of wide ribbon

Steps:

  • Lift the cake onto the cake board or a plate and cover with jam, marzipan and - brushing with water around the sides of the cake only - ready-to-roll icing. Trim at the base.
  • Press star cutters gently into the icing, stopping when you get to the marzipan. Pull the star shapes out with the cutter, or ease it out with the tip of a knife. Stamp out a couple of small stars from re-rolled trimmings of icing (from icing the cake) and sit them inside the large star-shaped spaces.
  • Sprinkle the gold balls into the gaps and tie the ribbon around the cake. Can be decorated up to a week ahead.

INSIDE OUT GERMAN CHOCOLATE CAKE

I recently made this for a co-worker's birthday and it is out of this world. The cake layers are nice and chocolatey..not too dense. The German chocolate filling is amazing and the frosting is super easy to work with as long as you cool everything completely. I toasted the nuts along with the coconut for a little extra nutty oomph.

1 1/2 cups all-purpose flour
1/2 cup unsweetened dutch cocoa, plus

3/4 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon salt
3/4 cup whole milk
6 tablespoons unsalted butter, melted
1 large egg
1 large egg yolk
3/4 teaspoon vanilla
1/8 teaspoon almond extract
3/4 cup boiling-hot water
7 ounces sweetened flaked coconut
4 ounces coarsely chopped pecans (1 cup)
14 ounces sweetened condensed milk
1 tablespoon vanilla
1 1/4 cups unsalted butter
10 ounces good quality semisweet chocolate, finely chopped
3 tablespoons light corn syrup

Steps:

  • Make cake layers:
  • Preheat oven to 350°F and oil 3 9 inch cake pans. Line bottoms of pans with rounds of parchment or wax paper. Sift together sugar, flour, cocoa powder, baking powder, baking soda, and salt into a large bowl. Whisk together whole milk, butter, whole egg, yolk, vanilla, and almond extract in another large bowl until just combined. Beat egg mixture into flour mixture with an electric mixer on low speed, then beat on high speed 1 minute. Reduce speed to low and beat in water until just combined (batter will be thin). Divide batter among cake pans (about 1 1/2 cups per pan) and bake in upper and lower thirds of oven, switching position of pans and rotating them 180 degrees halfway through baking, until a tester comes out clean, 20 to 25 minutes total.
  • Cool layers in pans on racks 15 minutes. Run a thin knife around edges of pans and invert layers onto racks. Carefully remove parchment or wax paper and cool layers completely.
  • Make filling:
  • Reduce oven temperature to 325°F
  • Spread coconut in a large shallow baking pan and pecans in another. Bake pecans in upper third of oven and coconut in lower third, stirring occasionally, until golden, 12 to 18 minutes. Remove pans from oven.
  • Increase oven temperature to 425°F
  • Pour condensed milk into a 9-inch deep-dish pie plate and cover tightly with foil. Bake milk in a water bath in middle of oven 45 minutes. Refill baking pan with water to reach halfway up pie plate and bake milk until thick and brown, about 45 minutes more. Remove pie plate from water bath.
  • Stir in coconut, pecans, and vanilla and keep warm, covered with foil.
  • Make glaze while milk is baking:
  • Melt butter in a 3-quart saucepan. Remove pan from heat and add chocolate and corn syrup, whisking until chocolate is melted. Transfer 1 cup glaze to a bowl, reserving remaining glaze at room temperature in pan. Chill glaze in bowl, stirring occasionally, until thickened and spreadable, about 1 hour.
  • Assemble cake:
  • Put 1 cake layer on a rack set over a baking pan (to catch excess glaze). Drop half of coconut filling by spoonfuls evenly over layer and gently spread with a wet spatula. Top with another cake layer and spread with remaining filling in same manner. Top with remaining cake layer and spread chilled glaze evenly over top and side of cake. Heat reserved glaze in pan over low heat, stirring, until glossy and pourable, about 1 minute. Pour glaze evenly over top of cake, making sure it coats sides. Shake rack gently to smooth glaze.
  • Chill cake until firm, about 1 hour. Transfer cake to a plate.
  • Cooks' notes:
  • • Cake keeps, covered and chilled, 3 days. Bring to room temperature before serving.
  • • For easier handling when assembling cake, place bottom layer on a cardboard round or the removable bottom of a tart or cake pan.

20cm/8inch round fruitcake (see goes well with)
3 tbsp apricot jam , warmed
icing sugar , for dusting
750g natural-coloured marzipan
750g white ready-to-roll icing
500g white ready-to-roll icing
icing sugar , for dusting
gold or silver edible lustre
star cutters of your choice
approx 65cm 65cm ribbon

Steps:

  • Cover the cake and set aside. Knead the 500g icing for the stars and roll out to 5mm thick on a surface dusted with icing sugar. Dust with edible lustre, then rub it in with your fingertips. Stamp 20 stars out of the icing using one 6cm cutter, or use two different-size cutters if you have them. Leave to dry overnight.
  • If you're putting a ribbon around the cake, do this now. Start building up the hardened stars - start with three in a triangle shape, pushing the points into the icing on the cake for stability. Build on this basic frame, letting the stars support each other. Lay a few stars around the base of the stack. Cake can be iced up to a week ahead.

Steps:

Beat together butter and granulated sugar with a mixer on medium speed until combined, 1 to 2 minutes. Add eggs and beat well, scraping down sides of bowl as necessary. Reduce speed to low and gradually add flour mixture, beating until combined. Add milk and vanilla and beat until just combined.
  • Divide batter between pans; smooth tops with an offset spatula. Bake until golden and a toothpick inserted into centers comes out clean, 33 to 35 minutes. Let cakes cool in pans on wire racks 15 minutes. Turn out cakes onto racks to cool completely.
  • Beat together butter and cream cheese with a mixer on medium-high speed until pale and creamy, about 1 minute. Reduce speed to medium. Add confectioner's sugar, 1 cup at a time, beating well after each addition. Add salt, milk, and vanilla and beat until fluffy, about 3 minutes. If not using immediately, cover surface of frosting with plastic wrap. Frosting can be refrigerated in an airtight container up to 1 week. Before using, bring to room temperature, then beat on low speed until smooth.
  • Place 1 cake layer on a cake plate and spread 1 cup frosting on top. Place remaining cake layer on top. Spread top and sides of cake with remaining frosting, swirling to coat in a decorative fashion. (If frosting becomes too soft, refrigerate to firm up.) Cake can be covered with a cake dome and refrigerated overnight. Bring cake to room temperature before serving.
