1 ½ cups white sugar
1 cup butter, softened
3 eggs, at room temperature
½ cup sour cream, at room temperature
2 teaspoons vanilla extract
2 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt
1 cup milk, at room temperature
1 (8 ounce) package cream cheese, softened
½ cup white sugar
1 teaspoon vanilla extract
2 cups heavy whipping cream
2 cups sliced fresh strawberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 11X17-inch baking pan with 1-inch high sides.
  • Beat 1 1/2 cups sugar and butter together in a large bowl with an electric mixer on medium speed until light and fluffy. Beat one egg at a time into the butter mixture; beat in sour cream and 2 teaspoons vanilla extract.
  • Sift flour, baking powder, baking soda, and salt together in a bowl. With mixer at low speed, add flour mixture to butter mixture alternately with milk just until combined. Scrape sides and bottom of bowl and finish mixing with a rubber spatula. Pour batter into prepared pan; spread to corners of pan and smooth top with a spatula.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 20 minutes. Cool cake completely, about 30 minutes. To remove cake from pan, run a paring knife between cake and pan. Cover cake pan with plate or cooling rack; invert to transfer cake onto plate.
  • Beat cream cheese, 1/2 cup sugar, and 1 teaspoon vanilla extract together in a bowl with an electric mixer on medium speed until fluffy, about 2 minutes. Reduce mixer speed to low; slowly pour in cream. Once cream is incorporated, turn mixer speed to medium-high; beat until stiff peaks form, about 2 minutes.
  • Spread cream cheese mixture evenly over top and sides of cake, smoothing the top. Place 2 to 3 rows of overlapping strawberry slices parallel to short sides of cake for the two red stripes of the Canada flag. Trace out a maple leaf shape in center of cake with a toothpick; use points of strawberry slices to create points of maple leaf. Cut a strip of strawberry for the leaf stem; fill in the area of the maple leaf with sliced strawberries. Refrigerate cake until ready to serve.

2¾ cups all-purpose flour, spooned into measuring cup and leveled-off
½ teaspoon salt
½ teaspoon baking soda
2 sticks (1 cup) unsalted butter, softened
2 cups sugar
2 teaspoons vanilla extract
4 large eggs, at room temperature
1 cup buttermilk (see note)
8 oz cream cheese, at room temperature
1 stick (½ cup) unsalted butter, at room temperature
1 teaspoon vanilla extract
Pinch salt
About 5½ cups confectioners' sugar, divided
1 half-pint (6 oz) blueberries (see note)
4 half-pints (24 oz) raspberries (see note)

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Butter and flour a 9x13-in metal pan, or use nonstick cooking spray with flour in it, such as Baker's Joy or Pam with Flour.
  • In a medium bowl, whisk together the flour, salt and baking soda. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment (or beaters), beat the butter and sugar on medium speed until light and fluffy, about 5 minutes. Beat in the vanilla, then beat in the eggs, one at a time, scraping down the sides of the bowl as necessary. (Don't worry if the batter looks a little curdled at this point.)
  • Reduce the speed to low, then beat in one-third of the flour mixture, followed by half of the buttermilk. Scrape down the sides and bottom of the bowl, then add another third of the flour, followed by the remaining buttermilk. Beat in the remaining flour, then scrape down the bowl and beat again until the batter is evenly combined. Do not overmix.
  • Scrape the batter into the prepared baking pan and bake for 30 to 35 minutes, until the cake is set and lightly golden around the edges, and a toothpick inserted into the center comes out clean. Set the cake on a wire rack to cool completely.
  • In the bowl of a stand mixer fitted with the paddle attachment (or large bowl if using a hand mixer), combine the cream cheese, butter, vanilla and salt. Mix on low speed until combined, then increase the speed to medium-high and beat until aerated and light, about 2 minutes. Gradually add 4 cups of the confectioners' sugar, mixing on low speed to combine. Once the confectioners' sugar is mixed in, increase the speed to medium-high and beat until fluffy, about 1 minute. Set aside 1 tablespoon of the frosting (you'll need it for the blueberry "stars.")
  • When the cake is completely cool, use an offset spatula to spread the frosting evenly over top. The frosting won't show so no need to fuss over making it perfect.
  • Outline the "stars" section on the upper left corner of the cake with a toothpick (or skip this step and just eyeball it) and fill with a generous layer of blueberries. Dip a small handful of the remaining blueberries in the reserved frosting, and then in the remaining 1½ cups of confectioners' sugar to make white "stars." Evenly scatter the "stars" over the section of blueberries. Arrange 1 row of raspberries across the top of the cake, laying them sideways, like a red stripe. Gently roll the next row of raspberries in the confectioners' sugar to make a white stripe, and alternate until the flag is completed. (I suggest using one hand for rolling and one for placing; if any powdered sugar accidentally gets on the red "stripes," use your fingertip to dab the berries lightly with water and it will come right off. )
  • Cut the cake into squares and serve directly from the pan.
  • Note: If you'd like to make your own buttermilk, check out the easy method here.
  • Note: The berries should be dry before decorating the cake. (In general, I don't rinse raspberries because they are so delicate.)
  • Make-Ahead Instructions: The cake itself can be made one day ahead of time. Cover with plastic wrap and store at room temperature. Frost and decorate the cake before serving.

1 pkg. (3 oz.) JELL-O Cherry Flavor Gelatin, or any red flavor, divided
1 pkg. (3 oz.) JELL-O Berry Blue Flavor Gelatin, divided
1 cup boiling water, divided
1 pkg. (2-layer size) white cake mix
1 container (16 oz.) ready-to-spread vanilla frosting
1-1/2 cups thawed COOL WHIP Whipped Topping
2 Tbsp. multi-colored sprinkles (red, white and blue)

Steps:

  • Heat oven to 350ºF.
  • Reserve 3 Tbsp. of each flavor of dry gelatin mix. Add 1/2 cup boiling water to remaining cherry gelatin mix in medium bowl; stir 2 min. until completely dissolved. Repeat in separate bowl with remaining boiling water and berry blue gelatin mix. Pour each flavor gelatin into separate 9x5-inch loaf pan. Refrigerate 3 hours or until firm.
  • Meanwhile, spray 2 (13x9-inch) pans with cooking spray; cover bottoms with waxed paper. Spray with additional cooking spray. Prepare cake batter as directed on package; spread 2 cups batter onto bottom of one prepared pan. Measure 2 cups of the remaining batter into medium bowl; stir in reserved dry cherry gelatin mix until blended. Spread onto bottom of remaining prepared pan. Place both pans in oven.
  • Bake 15 to 17 min. or until tops of cake layers are lightly browned and cakes begin to pull away from sides of pans. Cool 15 min.; remove cakes from pans to wire racks. Discard waxed paper. Cool cakes completely.
  • Meanwhile, spray 8x4-inch loaf pan with cooking spray; line with waxed paper. Spray with additional cooking spray. Stir reserved dry berry blue gelatin mix into remaining cake batter; pour into prepared loaf pan. Bake 25 to 28 min. or until toothpick inserted in center comes out clean. Cool 15 min.; remove from pan to wire rack. Discard waxed paper. Cool cake completely.
  • Assembly
  • Dip bottoms of gelatin-filled pans in warm water about 15 sec.; cut gelatin into small stars. Reserve trimmings for snacking or another use. Spoon frosting into medium bowl; whisk in COOL WHIP until blended. Cut each 13x9-inch cake layer lengthwise in half. Cut rounded top off loaf cake; reserve top for snacking or another use. Cut remaining loaf cake lengthwise in half.
  • Reserve 1-1/3 cups frosting for icing final assembled cake. Place 1 red cake layer on platter; spread with some of the remaining frosting. Cover with 1 white cake layer; frost. Arrange blue cake strips, end-to-end, down 1 long side of frosted white cake layer, trimming as necessary to fit top of cake. Frost inside edges of blue cake strips. Cut remaining red and white cake layers lengthwise in half; place 1 red cake piece next to blue cake strips. Frost. Top with 1 white cake piece. Reserve remaining cake pieces for snacking or another use. Frost top and sides of cake with reserved frosting. Decorate with sprinkles and JIGGLERS stars.

1 tablespoon vanilla
2 eggs
2 2/3 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
3 tablespoons seedless blackberry jam or grape jelly
3/4 cup seedless strawberry jam or red currant jelly
Powdered sugar, if desired

Steps:

  • Heat oven to 350°. Grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with shortening. Mix granulated sugar, butter, vanilla and eggs in medium bowl with spoon. Stir in flour and baking powder until dough forms. Reserve 1/4 cup dough; cover and refrigerate. Pat remaining dough evenly in pan, using floured hands.
  • To make flag design, mark a 6x5-inch outline in upper left corner of pan, using toothpick, for "star" area. Spread blackberry jam over 6x5- inch area. Starting 1/4 inch from top of "flag" (long side of pan), mark stripes by pressing 1/2-inch-wide and 1/4-inch-deep groove into dough with end of wooden spoon or finger. Make 7 more grooves, each about 3/4 inch apart. Place strawberry jam in resealable plastic food-storage bag; cut off tip. Squeeze jam into grooves.
  • Pat reserved dough to 1/8-inch thickness on lightly floured surface. Cut with small star-shaped cutter. Place stars on blackberry jam.
  • Bake 18 to 22 minutes or until golden brown. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 8 rows by 7 rows.

1 cup water
⅓ cup vegetable oil
3 eggs
1 (3 ounce) package strawberry-flavored Jell-O® mix
½ cup boiling water
1 (3.5 ounce) package instant vanilla pudding mix
1 ½ cups milk
1 cup frozen whipped topping, thawed
½ cup fresh blueberries
2 cups frozen whipped topping, thawed
½ cup fresh blueberries
1 ½ cups sliced fresh strawberries
½ cup miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Stir yellow cake mix, 1 cup water, vegetable oil, and eggs in a mixing bowl until moistened; beat with a mixer on medium speed for 2 minutes. Pour batter into prepared baking pan.
  • Bake cake in the preheated oven until lightly browned and a toothpick inserted into the center comes out clean, about 35 minutes. Cool completely on a wire rack. Poke holes about 1 inch apart all over the cake with a fork.
  • Dissolve strawberry gelatin in boiling water in a bowl and pour gelatin slowly over the cake, letting gelatin seep into holes. Refrigerate cake until gelatin sets, about 1 hour. Transfer cake to a serving platter and cut in half horizontally.
  • Mix instant vanilla pudding mix with milk in a bowl and whisk until thickened, about 2 minutes; stir in 1/2 cup blueberries. Spread blueberry filling onto bottom of cake and place top of cake over the filling. Spread 2 cups whipped topping smoothly over top and sides of cake and arrange 1/2 cup blueberries in a square in the upper left corner of the cake for stars. Yield Makes one ring plus four extra stars

Number Of Ingredients 12

4 cups all-purpose flour
1 cup plus 2 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, cut into pieces
3 1/2 cups plus 2 to 3 tablespoons heavy cream
1 large egg
1 pint raspberries
1 pint blueberries
2 pints strawberries, cut in half or quarters, depending on size
1/2 pint red currants (optional)
Confectioners' sugar (optional)

Steps:

  • Combine flour, 3/4 cup sugar, baking powder, and salt in a medium bowl. Add butter; use a pastry cutter or two knives to incorporate butter until mixture resembles coarse meal.
  • Blend 2 cups heavy cream into flour mixture using a fork. Turn out onto a clean work surface; press away from you with the heel of your hand just to combine dough. Add 1 tablespoon cream if the dough is too dry to combine.
  • Prepare egg wash: Place egg and 2 tablespoons cream in a small bowl, and whisk to combine. Set aside.
  • Press dough into a 7-by-10-inch rectangle, 1 inch thick. Use a 3 1/2-inch star cutter to cut out six biscuits. Press three of the stars to flatten slightly. Form into a ring on a parchment-lined baking sheet, alternating flattened stars with unflattened stars, using egg wash to join them along common edge. Gather remaining dough; cut out four more stars for additional servings, if desired. Preheat oven to 400 degrees. Refrigerate for 1 hour. Remove dough from refrigerator. Brush top of star ring and individual stars with egg wash, and sprinkle with 2 tablespoons sugar.
  • Bake for 5 minutes, then reduce heat to 350 degrees; continue baking until golden brown, about 25 minutes. Transfer to a wire rack to cool.
  • Combine raspberries, blueberries, strawberries, red currants (if using), and remaining 1/4 cup sugar in a large bowl, and toss to combine. Allow berries to macerate for at least 30 minutes, until very juicy. Whip remaining 1 1/2 cups cream to soft peaks.
  • Use a serrated knife to cut star ring in half crosswise. Cut the four extra stars as well. Use two large offset spatulas to carefully lift the top half of the ring, and set aside, leaving the spatulas in place. Set aside tops of stars as well. Transfer bottom of ring to a serving platter. Transfer bottoms of stars to plates, if desired. Spoon macerated berries, juices, and whipped cream over star ring and additional stars. Place the tops on the star ring and stars using the spatulas, and dust with confectioners' sugar, if using. Serve immediately.

Family favorite for 4th of July barbecues. The combination of fresh berries and creamy vanilla pudding mix makes for a wonderful refreshing dessert.

1 ½ cups cold milk
1 (5.1 ounce) package instant vanilla pudding mix
1 (8 ounce) package cream cheese, softened
1 ½ cups frozen whipped topping (such as Cool Whip®), thawed
2 cups graham cracker crumbs
½ cup unsalted butter, melted
4 cups fresh blueberries
2 cups fresh raspberries
3 cups sliced fresh strawberries

Steps:

  • Beat cold milk and instant pudding in a bowl until no lumps remain. Beat cream cheese in a separate bowl until creamy. Gradually add in milk-pudding mixture and mix until smooth. Mix in whipped topping.
  • Mix graham cracker crumbs and melted butter in a bowl until crumbs are completely moistened. Spread into a 9x13-inch baking dish and push down to create an even crust.
  • Set aside 45 blueberries and 60 raspberries for topping. Mix remaining blueberries, raspberries, and strawberries together in a bowl and pour on top of the graham cracker crust. Spread pudding mixture evenly over the berries, making the top as smooth as possible. Top with reserved blueberries and raspberries to make a flag design.
