10 -12 ounces steak, porterhouse, filet mignon, flank
2 teaspoons safflower oil
1 small red onion, sliced
4 cups butter lettuce, washed, dried, and broken into bite-size pieces
2 cups spinach, stems removed
3 large mixed mushrooms, sliced or cut into matchsticks

Steps:

  • Prepare Garlic string beans. While beans are cooking, broil steak according to taste (we preferr grilled). Cut into thin diagonal strips and set aside. Heat oil in small skillet. Saute` onion in oil until tender tender and beginning to crisp. Place lettuce and spinach in large bowl. Add steak, string beans, onion, and mushrooms.

1 loaf ciabatta bread, split in half horizontally
6 slices provolone cheese
6 slices mozzarella cheese
18 slices thinly sliced ham
8 slices thinly sliced salami
8 thin slices coppa ham
2 slices prosciutto
10 slices pepperoni
2 tablespoons mayonnaise
1 clove garlic, minced
1 tablespoon red wine vinegar
½ teaspoon dried oregano
½ teaspoon red pepper flakes
1 tablespoon sliced pepperoncini peppers
salt and ground black pepper to taste
½ head lettuce, shredded
¼ red onion, thinly sliced
1 tablespoon sliced black olives
½ tomato
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place ciabatta cut side-up on a baking sheet and layer one piece of the bread with slices of provolone and the other with mozzarella.
  • Bake on the top rack of the preheated oven until the cheese melts, 3 to 4 minutes. Remove from the oven and increase the temperature to broil.
  • Layer both sides of the sandwich with folded slices of ham, then alternate between the two sides with a layer of salami, coppa ham, prosciutto, and pepperoni. Broil in the oven until the meats crisp up, 2 to 3 minutes.
  • Stir mayonnaise, minced garlic, red wine vinegar, oregano, red pepper flakes, pepperoncini peppers, salt, and pepper together in a large bowl. Add the lettuce, red onion, and black olives, and toss to combine.
  • Thinly slice the tomato and salt on each side.
  • On one side of the sandwich, layer the tomato slices. Pile a large portion of the lettuce salad on top, then top with grated Parmesan cheese. Carefully fold the two bread slices together to form the sandwich. Cut into 4 triangular portions and serve immediately.

1 ¾ pounds beef sirloin steak
⅓ cup olive oil
3 tablespoons red wine vinegar
2 tablespoons lemon juice
1 clove garlic, minced
½ teaspoon salt
⅛ teaspoon ground black pepper
1 teaspoon Worcestershire sauce
¾ cup crumbled blue cheese
8 cups romaine lettuce - rinsed, dried, and torn into bite-size pieces
2 tomatoes, sliced
1 small green bell pepper, sliced
1 carrot, sliced
½ cup sliced red onion
¼ cup sliced pimento-stuffed green olives

Steps:

  • Preheat grill for high heat.
  • Lightly oil grate. Place steak on grill and cook for 3 to 5 minutes per side or until desired doneness is reached. Remove from heat and let sit until cool enough to handle. Slice steak into bite size pieces.
  • In a small bowl, whisk together the olive oil, vinegar, lemon juice, garlic, salt, pepper and Worcestershire sauce. Mix in the cheese. Cover and place dressing in refrigerator.
  • Onto chilled plates arrange the lettuce, tomato, pepper, onion and olives. Top with steak and drizzle with dressing. Serve with crusty grilled French bread. Enjoy!

2 hearts romaine lettuce, torn
1 avocado, halved, pitted, peeled, and diced
1/2 English cucumber, peeled and diced small
6 small tomatoes, cut into wedges
1 small red onion, thinly sliced
1 to 2 canned chipotle chiles in adobo, minced
3 tablespoons fresh lime juice
2 teaspoons honey
1/4 cup extra-virgin olive oil

Steps:

  • Heat a large skillet over medium-high; cut steak into 4 pieces and season with salt and pepper. Cook 2 1/2 minutes per side for medium-rare. Transfer to a plate and cover loosely with foil. Let rest 5 minutes, then thinly slice.

I'm a big salad eater and am always looking for new thinks to put in them. I came up this this recipe when I had leftover flank steak. The sour gerkins give it the tang that I love. It is now one of our favorite salads. Any kind of steak can be used for this recipe.

8 ounces skirt steaks, leftover (sliced)
6 cups salad greens
1 onion (thinly sliced)
2 potatoes (cooked cut in cubes)
2 celery ribs (sliced)
6 sun-dried tomatoes (chopped)
6 sour gherkins (chopped)
1/2 English cucumber (peeled, halved & sliced)
parmesan cheese, freshly grated
3/4 cup light olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
1 teaspoon herbes de provence
1 pinch sugar
salt
pepper

Steps:

  • Reheat the leftover steaks in aluminium foil in oven.
  • Meanwhile, place all the salad ingredients in a large bowl.
  • In a blender or food processor, place all the ingredients for the dressing and mix well until creamy.
  • Pour half (or to taste) of dressing over the salad, mix well.
  • Arrange salad in plates and top with warmed steak.
  • Spoon some of the leftover dressing over the meat.
  • Sprinkle with freshly grated parmesan cheese.
  • Enjoy!
