PORK TENDERLOIN TOWERS ON THE GRILL



Pork Tenderloin Towers on the Grill image

These are really not at all difficult, and they look so impressive. If you don't have a bbq grill, just broil them in the oven, but be careful not to get them too close to the flame. You don't want to burn these. From Southern Living, March 1986.

8 slices bacon
4 slices onions
1 (3/4 lb) pork tenderloin, cut into 4 (1-inch)
salt
pepper
1 slice tomatoes (1/2-inch thick)
4 slices swiss cheese

Steps:

  • Layer 2 slices bacon to form an X.
  • Place 1 slice of onion in center of bacon; top with 1 slice tenderloin.
  • Sprinkle with salt and pepper. B.
  • ring ends of bacon over tenderloin, and secure with a wooden pick.
  • Repeat procedure with remaining bacon, onion, and tenderloin.
  • Place meat on grill over medium heat, and grill 40 minutes, turning frequently.
  • Turn meat wooden pick side up; remove wooden picks.
  • Top each with a slice of tomato and cheese, and grill an additional 10 minutes.

These are perfect for potlucks, get togethers, or as snacks for the kids. Everyone loves them! You may want to quadruple the recipe. Use toothpicks to keep the creamy towers from tumbling.

2 slices white bread
2 tablespoons butter
4 tablespoons peanut butter
1 teaspoon white sugar
1 slice whole wheat bread

Steps:

  • Butter a slice of white bread. Spread peanut butter on the bread over the layer of butter. Sprinkle sugar over the top of the peanut butter layer.
  • Place a slice of wheat bread on top of the white bread and repeat the layering of butter, peanut butter and sugar. Top the wheat bread with a slice of white bread.
  • Cut the layered slices into 9 pieces. Insert toothpicks into the pieces and serve.
