STEAKHOUSE STYLE BAKED POTATO
This is the very best steakhouse style baked potato you will ever have! The skin of the baked potatoes are coated with olive oil and salt for a crispy and flavorful skin and baked in the oven until it is creamy and fluffy.

- Preheat your oven to 425 degrees with the oven rack in the middle. Line a baking sheet with parchment paper.
- Rub the potato with olive oil until it is well coated and sprinkle with salt and transfer to the parchment lined baking sheet. Roast the potato whole (don't poke any holes in it) until it is soft when you squeeze it with your hand. The baking time will depend on the size of your potato, but usually 45 minutes - 1 hour.
- When you take the baked potato out of the oven, drop it onto a plate or cutting board from 10" up. By dropping it, you loosen the inside of the potato so it is light and fluffy inside when you cut into it.
- Cut a slit down the length of the baked potato, pinch the edges together to make the opening bigger, and fill the baked potato with desired amount of the fillings.

- Preheat oven to 400°. Scrub potatoes; pierce several times with a fork. Bake until tender, 50-75 minutes., Meanwhile, sprinkle steak with salt and pepper. In a large skillet, heat oil over medium-high heat. Add steaks; cook until meat reaches desired doneness, 5-8 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 10 minutes; cut into bite-sized pieces. Transfer to a large bowl. Drizzle with butter; toss to coat. , With a sharp knife, cut an X in each potato. Fluff pulp with a fork; season with salt and pepper. Divide steak evenly over potatoes. Top with arugula, salad dressing, sour cream and blue cheese.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Place a potato between 2 wooden spoons. Slice potato crosswise at 1/8-inch intervals, cutting until you hit the spoon handles, being careful not to cut all the way through. Repeat with remaining potatoes and transfer to a baking sheet.
- Combine olive oil, garlic, paprika, and salt in a small bowl. Brush mixture over the top and in between the slits of potatoes.
- Bake in the preheated oven until potatoes have fanned out a bit, and are cooked through on the insides but a bit crispy on the outsides, about 45 minutes. Sprinkle 2 tablespoons Parmesan cheese over top and bake until melted, 2 to 3 minutes.

I only had steak and potatoes on hand and did not feel like driving to the store to pick up any more food. This came out so good! I found a few recipes online that used similar ingredients so that's how I came up with this. Hope you enjoy!

- Preheat oven to 375 degrees fahrenheit.
- Cube the steak and the potatoes.
- Place steak and potatoes into large mixing bowl.
- Season with salt, pepper, garlic, and onion to taste. I use about a pinch of everything.
- Pour in balsamic vinagerette.
- Stir everything together and then put into baking dish.
- Use a baking dish that is large enough that the salad dressing covers the steak and potatoes completely. Otherwise the steak on top will come out hard and the potatoes will not be cooked all the way through.
- Cook for 1 and 1/2 hours.

- Wash and chop the potatoes. Transfer them to a bowl of water to prevent browning.
- Heat a skillet over medium high heat.
- Add the bacon, and cook until crisp. When cooked, remove the bacon to a paper towel to drain.
- While the bacon is cooking, wash and cut the green onions on the bias, making sure to use both the whites and the greens.
- After removing the bacon, add the potatoes (make sure that you drain most of the water off before adding to the skillet). Scrape up the bacon drippings from the bottom of the pan. It should just take a minute or so.
- Add the sour cream, water and pepper to taste. Do not add any salt that this time, as the bacon's salt level may vary from brand to brand.
- Bring the mixture up to a gentle boil. Let it boil for 17 - 19 minutes, or until the potatoes are done.
- THE SAUCE WILL BE THIN. After the potatoes are cooked, turn the heat to low, and allow the sauce to thicken, in about 3 - 5 minutes.
- When the sauce is thicken, add the bacon and mix inches Taste to see if the potatoes need more salt after adding the bacon.
- Serve topped with a generous portion of green onion.
