SKILLET PORK CHOP DINNER
Pork chops, potatoes, bell pepper and onion simmered with seasoned diced tomatoes

Steps:
- Heat oil in large skillet over medium-high heat. Sprinkle pork chops evenly with salt and pepper; cook 3 to 4 minutes on each side or until browned on both sides. Remove from skillet.
- Stir together undrained tomatoes and paste in skillet; add potatoes. Top with pork chops, bell pepper and onion. Bring to a boil. Reduce heat to low; cover skillet with lid.
- Cook 20 to 25 minutes or until potatoes are tender and pork chops are slightly pink in centers (160°F).

PAN ROASTED PORK CHOPS
Steps:
- Preheat an oven to 375 degrees F.
- In a large skillet over medium high heat, add olive oil. Season pork chops with salt, pepper, and Essence. Add pork chops to skillet and cook for 3 minutes per side. Place skillet in oven for 10 minutes or until pork chops are cooked to 150 degrees F. Serve with sauteed cabbage.
- Combine all ingredients thoroughly.
- Recipe from "New New Orleans Cooking", by Emeril Lagasse and Jessie Tirsch, published by William Morrow, 1993.
- Heat oil in large skillet. Add bacon and cook until fat is rendered. Add shallots and cabbage and cook until wilted. Add the sherry and heat through.
PORK CHOP AND PASTA DINNER
This is a recipe I have been making ever since the kids could chew meat. It's from one of my favorite cookbooks Better Homes and Gardens Low-Cost Cooking.

Steps:
- Cook macaroni according to the package directions.
- Place in 12x7 1/2x2 inch baking dish.
- Brown chops in oil or shortening on both sides. Drain off fat.
- Season with salt and pepper and arrange on top of noodles.
- Combine remaining ingredients except cheese and pour over the chops.
- Sprinkle with cheese.
- Bake covered at 350 degrees for 45 minute.
- Serve with additional cheese if desired.

SLOW COOKER FRENCH ONION PORK CHOPS
A lighter version of a wonderful main dish. Easy to prepare and add some quick sides to. Yummy!

Steps:
- Spray a skillet with cooking spray and heat over medium-high heat. Quickly brown pork chops in the skillet, seasoning with garlic salt, 5 to 7 minutes total. Transfer to a slow cooker and pour French onion soup on top.
- Cover and cook on Low for 8 hours.
- Remove the chops and keep warm. Add sour cream and flour to the slow cooker, mix well, and warm until slightly thickened, 10 to 15 minutes. Serve sauce over the chops.

STEFANO'S PORK SCHNITZEL
Stefano Faita on the Canadian station is fun to watch and cooks some good recipes. This is a particular favorite of mine.

Steps:
- Slice pork into 8 pieces. Pound pork between 2 plastic sheets with meat mallet to about 1/4-inch thickness.
- Prepare a breading station by arranging 3 shallow bowls with the following: Flour seasoned with salt and pepper in the first, beaten eggs in the second, and bread crumbs mixed with parsley and paprika in the third.
- Dredge pork slices first in flour, dip in beaten egg, and lastly coat in the bread crumb mixture.
- Heat a large frying pan over medium heat. Add 3 Tablespoons butter and 2 Tablespoons olive oil. When oil is hot, add pork in batches to avoid overcrowding the pan, adding more butter and oil if pan is dry. Cook until golden brown on each side, about 2 to 3 minutes per side.
- Remove schnitzel from pan. Transfer to paper towel to drain. Keep warm.
- Wipe pan with paper towel, if needed. Add 2 more Tablespoons butter and capers and fry until golden, about 1 to 2 minutes.
- Serve schnitzel with capers and lemon wedges. Serve 1 to 2 schnitzel per serving, depending on appetite.
