- Let eggs stand at room temperature for 30 minutes. In a large bowl, cream shortening and sugar. Add egg yolks, one at a time, beating well after each addition. Beat in coffee and vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with buttermilk. In another bowl , beat egg whites on high speed until stiff peaks form; fold into batter., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, combine confectioners' sugar and cocoa. In another large bowl, cream butter and sugar mixture. Beat in coffee and vanilla. Spread between layers and over top and sides of cake.

- Microwave 4 ounces chopped bittersweet chocolate with 1/4 cup water on 50 percent power until melted, 2 minutes, stirring halfway through. Divide among 4 small mugs and top each with a spoonful of condensed milk and a shot of hot espresso.
TRIPLE CHOCOLATE MOCHA CAKE
This is just as easy as any cake from a box and much more flavourful. I needed to use up some pantry ingredients and this recipe is what I came up with. The Beau bought some Hershey's SPECIAL DARK Cocoa by mistake, he thought it was hot cocoa mix, otherwise it might not have been a product I would have ever purchased. If you don't have it you could probably substitute another dutch-processed cocoa but your results might not be quite the same as mine. I made cupcakes so I could portion them out to freeze some and they were rich enough to not really need frosting but please frost as you like. They came out as black as night, my co-workers asked what food colouring I added to get them like that, to which I happily replied "None!". The Beau said they were "Too chocolatey and too moist" so count yourself warned, lol. The recipe made 24 cupcakes and would make two 8" round or square cakes, or a 9x13. Adjust your time slightly according to which units you're baking.

Steps:
- Butter 2 8" cake pans or muffin pans, etc, and coat evenly with cocoa powder (I began using my new silicone pans with this recipe and did not need to pre-treat my pans with butter or cocoa).
- In large bowl mix together well first 8 ingredients with a wire whisk.
- Add eggs, chocolate milk, hot fudge topping, butter and vanilla; beat on medium for 2 minutes.
- In a small bowl, mix together hot water and instant espresso, stirring well to dissolve.
- Add espresso carefully to cake mix and beat until mixed well, batter will seem thin.
- Pour evenly into the prepared pans.
- Bake in pre-heated oven at 350º for about 40 minutes or until toothpick comes out clean; it's a dense cake and won't rise as high as you might expect.
- Cool in pans 10 minutes, then turn out onto wire racks to cool completely.
- Frost or dust with powdered sugar as desired.
TRIPLE-MOCHA BROWNIES
Instant coffee adds rich flavor and a heavenly aroma to these nutty glazed triple-layer mocha brownies.

- Heat oven to 350ºF.
- Line 13x9-inch pan with foil, with ends of foil extending over sides. Grease foil. Microwave 3/4 cup (1-1/2 sticks) butter and unsweetened chocolate in large microwaveable bowl on HIGH 2 min. or until butter is melted. Stir until chocolate is completely melted. Add granulated sugar, 4 eggs, 2 Tbsp. coffee granules and 1 tsp. vanilla; mix well. Stir in flour until well blended; pour into prepared pan. Bake 25 min.
- Meanwhile, microwave brown sugar and 1/4 cup (1/2 stick) of the remaining butter in small microwaveable bowl 1 min. or until butter is melted. Add 1 Tbsp. of the remaining coffee granules and remaining egg and vanilla; mix well. Chop 6 oz. semi-sweet chocolate. Add to brown sugar mixture with nuts; mix well.
- Spread nut mixture over warm brownies. Bake 20 min. or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely.
- Microwave remaining semi-sweet chocolate, butter and coffee granules in microwaveable bowl 1 min. or until butter is melted. Stir until chocolate is completely melted and mixture is well blended. Drizzle over brownies; let stand until firm.

- Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Securely wrap foil around pan. , In a small bowl, mix cookie crumbs and butter; press onto the bottom of prepared pan. In another bowl, mix the coffee granules, hot water and cinnamon; set aside. , In a large bowl, beat the cream cheese, sugar, flour and vanilla until smooth. Add eggs; beat on low speed just until combined. , Divide batter in half. Stir melted chocolate into one portion; pour over crust. Stir coffee mixture into the remaining batter; spoon over chocolate layer. Place springform pan in a large baking pan; add 1 in. of hot water to larger pan. , Bake at 325° for 60-65 minutes or until center is just set and top appears dull. Remove springform pan from water bath; remove foil. Cool cheesecake on a wire rack for 10 minutes; loosen sides from pan with a knife. Cool 1 hour longer. Refrigerate overnight., Remove rim from pan. For glaze, in a microwave, melt chocolate chips and butter; stir until smooth. Spread over cheesecake. Top with coffee beans if desired.

- Preheat oven to 350 degrees.
- Line the bottom of the spring form pan with wax paper; grease.
- Add the melted butter to the Graham cracker crumbs and press into the bottom of the prepared pan.
- Prepare the brownie mix according to the package directions.
- Spread the batter into the prepared pan. Bake until firm, approximately 35-50 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from oven, transfer to a wire rack, and let cool completely.
- Meanwhile, prepare the mocha frosting: whisk the egg whites and sugar together over simmering water until the sugar is dissolved.
- Remove from heat and, using an electric mixer, beat until cooled.
- Add the butter, one nugget at a time, while continuing to beat.
- Dissolve the instant espresso in 2 tablespoons of warm water.
- Beat the espresso into the butter cream.
- Frost the top and sides of the cake with the butter cream mixture.
- Snip a small corner of a resealable plastic bag and place the whipped cream inside.
- Pipe 8 rosettes around the outside edges of the cake.
- Place an unwrapped DOVE® Brand Rich Dark Chocolate Heart on top of each rosette.
- When ready to serve, place 8 unwrapped DOVE® Brand Rich Dark Chocolate Hearts in a small resealable plastic bag.
- Microwave until melted, about 15 seconds.
- Cut a corner of the bag, and randomly drizzle the chocolate on the dessert plates.
- Place a cake wedge on each plate and serve.

- Beat cake mix, dry pudding mix, eggs, sour cream, oil and 1/2 cup each flavored instant coffee and water in large bowl with mixer on low speed just until moistened, stopping frequently to scrape bottom and side of bowl. Beat on medium speed 2 min. or until well blended. Chop 4 oz. chocolate; stir into batter. Pour into 2 greased and floured 9-inch round pans.

- Prepare brownies according to package directions. Bake and cool completely. Cut into 1 inch cubes.
