STICKY RIBS WITH ROAST POTATO SALAD
When the kids have friends over, this stack of ribs and spuds is a cheap, crowd-pleasing, prepare-ahead option

- Heat oven to 150C/130C fan/gas 2. Put the ribs in a roasting tin in a single layer and just cover with water. Cover with foil and cook for 1½ hrs. Drain well. If you are not finishing these straight away, cover and chill until ready to cook.
- Meanwhile, fry the onion in the oil in a pan until soft. Add the garlic, smoked paprika and chilli powder and fry for 1 min. Add the passata, purée, vinegar and sugar and bring everything to a simmer. Cook for 10 mins. If you are not using this sauce straight away, cool and chill.
- Heat oven to 220C/200C fan/gas 7. Brush the ribs all over with the sauce and lay on a baking sheet. Mix the potatoes with the oil, rosemary and seasoning in a large roasting tin. Roast for 40 mins on a middle shelf, with the ribs on the shelf above. Turn the ribs and potatoes halfway, until both are nicely browned all over. Tip the potatoes into a large bowl sprinkle with the vinegar and serve hot, warm or cold. Slice the ribs to serve and put any extra sauce into bowls for dipping.

SWEET-TEA RIBS WITH LEMONY POTATO SALAD

- Empty 3 tea bags into a bowl and combine the loose tea with 1/4 cup brown sugar, 2 teaspoons salt and 1/4 teaspoon pepper. Grate in the orange zest. Pat the ribs dry and trim the membrane from the underside. Rub the tea mixture over the ribs; place in a roasting pan, meat-side up, and bring to room temperature, about 20 minutes.
- Preheat the oven to 275 degrees F. Steep the remaining 3 tea bags in 2 cups boiling water, about 5 minutes. Discard the bags and stir in the remaining 2 tablespoons brown sugar and the juice of half the orange. Pour the mixture around the ribs in the pan. Cover with foil and roast until tender, about 1 hour 30 minutes.
- Meanwhile, put the potatoes in a pot of salted water; bring to a simmer and cook until tender, about 5 minutes. Drain and cool slightly. Mix the mayonnaise and parsley in a large bowl. Grate in the zest of half the lemon; add the juice of the lemon half. Fold in the potatoes and add 11/2 teaspoons salt, and pepper to taste; refrigerate until ready to serve.
- Remove the ribs from the oven and increase the temperature to 450. Pour the cooking liquid into a saucepan and bring to a simmer over medium-high heat. Baste the ribs with some of the liquid, then return to the oven and cook, uncovered, basting a few times, until the ribs are dark and glazed, 20 to 30 minutes.
- When the remaining liquid in the saucepan is syrupy, add lemon juice to taste. Brush the ribs with the glaze. Cut the racks into pieces and serve with the potato salad.

IDAHOAN POTATO CRUSTED RIB ROAST
Idahoan Potato Crusted Rib Roast is a special dish for a special occasion and developed for us by a special lady, Chef Casey Thompson of Top Chef fame.

Steps:
- Preheat oven to 375 degrees .
- For the mashed potato crust:
- Make Buttery Homestyle Flavored Mashed Potatoes to package directions substituting boiling milk for the water.
- When the milk is incorporated, add the mayonnaise and the Parmesan. Season with the salt and pepper to taste. Cool for 5 minutes.
- Once cooled, add the eggs, and the flour. Mix until blended - the potatoes should appear thick and dry.
- For the crispy outer potato crust:
- Combine the 3 ingredients and set aside.
- For the Roast:
- Season the rib roast generously with salt and black pepper. Dust the outside with the all-purpose flour.
- Heat a cast iron or a large heavy saute pan over med-high heat. Add the canola oil and allow it to heat until simmering.
- Add the rib roast carefully bone-side up or fat side down. Sear until golden in color.
- Remove the roast and place on a sheet tray. Allow it to cool for 10 minutes.
- Once cooled, brush the mustard onto the fat side of the roast and the under side. Coat the roast with the potato and egg mixture. Then coat the potato mixture with the crispy crust mix.
- Place the roast in the preheated oven and roast for 1 hour.
- Turn off the oven and making sure to keep the oven door closed, leave the roast in the oven for 3 hours.
- After 3 hours, turn the oven back on to 375 degrees to reheat the roast - about 10 minutes.
- Remove the roast and let it rest for 15 minutes. Slice and serve.
