ASPARAGUS AND CHICKEN STIR-FRY

- Freeze the chicken breasts for 20 to 30 minutes and then thinly slice the chicken against the grain into strips. Toss the strips with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, and the sherry in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the broth.
- Heat 1 tablespoon of the oil a large nonstick skillet over high heat. Add the asparagus, scallions, remaining garlic, ginger, 1/4 cup of water, and season with 1/4 teaspoon salt. Stir-fry until the asparagus is bright green but still crisp, about 3 minutes. Transfer to a bowl.
- Heat the same skillet until very hot, then add remaining 1 tablespoon oil. Add the chicken and stir-fry until it loses its raw color and gets a little brown, about 3 minutes. Return the asparagus to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a full boil to thicken. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.
QUICK ASPARAGUS STIR-FRY
One of my favorite quick recipes for green asparagus, stir-fried with garlic and olive oil. A squeeze of fresh lemon juice brightens the asparagus up at the end.

- Heat the oil in a skillet over medium heat. Mix the asparagus into the skillet, coating with the oil. Cook and stir 5 minutes, until tender but firm. Pour the broth mixture over the asparagus, and continue cooking 5 minutes, until thickened and heated through.

- In a small bowl, whisk the cornstarch, sugar, broth, soy sauce and ginger until blended; set aside. , In a small skillet or wok, stir-fry the asparagus, mushrooms, carrot and garlic in oil until crisp-tender. INDIAN ASPARAGUS
Don't be fooled by the strange sound of coconut with asparagus. Because of the spices and hot green chillies these ingredients combine to create a wonderful spicy asparagus treat. This is a popular preparation of asparagus in Southern parts of India. (Service with rice and rasam or saambaar, pappadum and yogurt.)

- Heat oil on medium high, add black mustard seeds, red chilli and cumin seeds.
- When the mustard seeds begin to crackle, add green chillies and salt.
- Next add the onions and garlic, fry for 2 minutes, then add the chopped asparagus pieces. Stir well, simmer the heat, add 1/4 cup of water, cover with lid and stir every 4 minutes. When the asparagus is tender, uncover and cook until water is gone.
- Add the fresh coconut, stir for 10 seconds, remove from heat. Keep covered until ready to use.
GINGER CHICKEN ASPARAGUS STIR FRY
This is a delicious stir-fry recipe and a really quick and easy dinner. Although the original recipe calls for asparagus, I have used fresh green beans (cut into 1-inch pieces) in place of the asparagus. The amounts for this recipe serves really only about 3 people, however all ingredients can easily be doubled to serve more. This is delicious!

- In a small bowl, combine the lemon juice, soy sauce, fresh ginger and garlic; mix/whisk to combine.
- Toss the chicken pieces well with about 3 tablespoons of the lemon/soy mixture; reserve the remaining mixture.
- Dissolve/whisk the cornstarch in chicken broth.
- Heat the oil in a wok or frying pan until hot.
- Add in mushrooms and chicken; stir over high heat until chicken looses the pink colour.
- Add in asparagus and green onions, continue to stir over high heat until veggies at crisp-tender.
- Add/stir in broth/cornstarch mixture and reserved soy sauce mixture until thickened.
- Sprinkle with toasted sesame seeds.
- Serve over rice or cooked pasta.

STIR-FRIED ASPARAGUS WITH PORK

- Break bottom inch or so off of each asparagus spear; cut stalks into inch-long pieces.
- Heat a large skillet over high heat for about 2 minutes. Immediately add half the peanut oil, chilies if you're using them and pork, crumbling it with your fingers. Cook, stirring only occasionally, until pork browns, about 2 minutes. Remove pork to a bowl, discard chilies and lower heat slightly.
- Add remaining oil and asparagus to skillet. Cook, stirring occasionally, until asparagus turns bright green and begins to become tender, 3 or 4 minutes. Add garlic and scallions and cook, stirring once or twice, for 30 seconds.
- Add stock or water and soy sauce; stir and cook for 15 seconds. Stir in pork, add sesame oil if you like and stir once more. Serve with white rice, if desired.

- Rinse the Asparagus spears under cool water to remove any sand or dirt. Snap off an inch or more from the bottom part using your fingers; the stems will naturally break where the tough woody part ends and the tender stem begins. If you want you can add idly milagaipodi at this time and fry for minutes so that asparagus gets coated with spice powder.Remove from the fire enjoy with rice and curry.

- Trim asparagus and discard the woody thick ends. Then cut into 1-inch pieces, if the asparagus is thick, slice it vertically down the middle to make thinner segments.
- Preheat a medium skillet over medium heat. Dry roast gram flour for 5 minutes, breaking any lumps and stirring frequently. Take out the roasted flour and reserve.
- Wipe the skillet with a dry towel and heat oil over medium heat. Add carom seeds, garlic, and hing and saute for 30 seconds to one minute or until aromatic.
- Add the asparagus, salt, and green chili. Mix well and cook covered for 5 to 10 minutes on medium heat until the asparagus starts to get tender. Do not overcook as you want to have a crunchy bite.
