Strawberries and Wine image

Wonderful dessert that is light and refreshing. The strawberries marinate in the wine for hours producing a strawberry flavor wine at the bottom of the bowl that everyone will be fighting for. Adjust the amount of sugar depending on the sweetness of the berries you have. Great way to dress up not-too-sweet strawberries! Champagne may be substituted for the wine.

3 cups fresh strawberries, hulled and quartered lengthwise
¾ cup white sugar, or to taste
1 ½ cups white wine

Steps:

  • Place strawberries into a medium bowl. Dust with sugar, then pour the wine over them. Cover and refrigerate for 2 to 3 hours.
  • Let the strawberries stand at room temperature for 15 to 20 minutes before serving. Spoon berries into 6 dessert cups, and distribute the remaining wine over the berries.

2 cups fruity red wine such as Santa Maddalena, Barbera, Valpolicella, Merlot, or Zinfandel
1 teaspoon fresh lemon juice
About 1/2 cup sugar
1 lb strawberries (2 pt), trimmed, and halved if large

Steps:

  • Stir together wine, lemon juice, and sugar (to taste) in a bowl. Stir in strawberries and let macerate at room temperature 1 hour, then chill until cold, up to 1 hour but no longer. (Fruit will become too soft if it steeps for more than 2 hours.)
  • Serve berries in small bowls with some of their juices.

Roasted in white wine with orange and lemon juices, the flavor of the strawberries intensifies. This is a good technique to perk up less than stellar berries. Use the strawberries as a topping for a simple dessert like Citrus Cornmeal Cake.

1 small orange
1 small lemon
1/4 cup dry white or rose wine
1/4 cup pure maple syrup
2 quarts strawberries, hulled and halved (6 cups)
2 star-anise pods

Steps:

  • Preheat oven to 350 degrees. Peel three 2-inch-long strips of zest each from orange and lemon, then juice both (you should have 1/4 cup juice total). Stir wine and maple syrup into juice. Place strawberries in a 9-by-13-inch baking dish. Add juice mixture, zest strips, and star anise; stir to combine. Roast, stirring once, until sauce is slightly syrupy and strawberries turn bright red, 1 hour, 20 minutes to 1 hour, 30 minutes. Let cool completely. (Strawberries can be refrigerated in an airtight container up to 3 days.)

Make strawberry wine at home with only four ingredients. All you need is a crock, some bottles, and a year of time to ferment.

7 pounds whole strawberries
2 gallons boiling water
1 lemon , juiced
Optional: 2 teaspoons wine yeast
5 pounds sugar

Steps:

  • Gather the ingredients.
  • Wash and hull strawberries, removing any stem or bits of leaf.
  • In a large earthenware crock, mash strawberries.
  • Cover mashed berries with boiling water.
  • Add lemon juice and quickly stir for about 2 minutes.
  • If you want to add wine yeast, mix into strawberry mash once it has cooled to 85 F.
  • Cover the crock with a clean linen cloth. Let crock rest in a cool, dark place.
  • Give it a stir each day for one week.
  • After one week, strain mixture through a double layer of cheesecloth into a large, clean bowl, discarding strawberry pulp.
  • Combine strawberry liquid with sugar, stirring to dissolve sugar.
  • Pour liquid into a clean crock and let stand another week, stirring daily.
  • After the second week, pour strawberry liquid into 1-gallon glass wine bottles and cork loosely. If you have fermentation locks, you can use those instead of a loose cork.
  • Let bottles rest in a cool, dark place for three months.
  • When wine is clear and no longer fermenting (bubbling), pour it into individual bottles. Cork bottles and let them age for at least one year before drinking this delicious strawberry wine.

1 cup Beaujolais or another light, fruity red wine
3 cups ripe strawberries
Sprigs of herbs (basil, sage, savory or mint) for decoration, if desired Cookies, if desired

Steps:

  • Mix the jam and red wine together in a bowl.
  • Wash and hull the berries. Cut the smaller ones in half; quarter the larger ones. Add the berries to the bowl and mix gently but thoroughly.
  • Cover the bowl with plastic wrap, arranging the wrap so it touches the berries and helps keep them submerged in the wine mixture. Refrigerate until cold.
  • Serve the berries and surrounding liquid in wine goblets. If desired, garnish with herb sprigs and serve with cookies.

1 cup sugar
1 cup water
4 to 5 tarragon sprigs
2 tablespoons lime juice
1 teaspoon whole peppercorns
3 cups sweet white wine, such as Riesling, chilled
3 cups club soda, chilled

Steps:

  • In a small saucepan, bring the first 6 ingredients to a boil. Reduce heat; simmer 20 minutes. Remove from heat. Cool completely. Strain through a fine-mesh strainer into a small bowl (do not press berries). Refrigerate syrup until chilled. To serve, for each serving fill a tall glass with ice.   • Add the wine and let macerate for 45 minutes or up to 1 hour.
