What better way to show your patriotism than with this beautiful dessert parfait. The lightly sweetened whipped cream with the fresh berries are wonderfully complimented by the crisp topping.

1 c. rolled oats
1/3 c. brown sugar
1/2 c. flour
1/2 tsp. cinnamon
1/4 c. softened butter
1 1/4 c. heavy cream
2 tsp. powdered sugar
1/2 tsp. vanilla
Strawberries (washed, stems removed & quartered)
Blueberries (washed)

Steps:

  • Mix together the topping: oats, sugar, flour, cinnamon, and butter, until crumbly. Bake at 350 F for 10-15 minutes or until golden brown. Remove from oven & cool.
  • Prepare your fresh whipped cream by whipping the cream, powdered sugar, and vanilla together until stiff peaks form.
  • Layer parfait with strawberries, fresh whipped cream, blueberries, and top with crisp topping. Serve immediately.

1/2 cup granulated sugar
2 tablespoons all-purpose flour
4 egg yolks
1 1/4 cups whole milk
1 vanilla bean, split and scraped
3 ounces marzipan
1/3 cup granulated sugar
Nonstick spray
1 3/4 cups slivered almonds, lightly toasted
Kosher salt
12 ounces fresh strawberries, hulled washed and quartered
1 tablespoon light brown sugar
1/2 cup heavy cream, lightly whipped

Steps:

  • In a medium bowl, whisk together sugar, flour and egg yolks until thick and smooth, 3 to 5 minutes.
  • In a medium pot, bring the milk and vanilla bean to a gentle boil. Pour about half of the milk mixture over the eggs whisking constantly. Pour the whole mix back into the pot and place the pot back over low heat, stirring with a wooden spoon, until the mixture thickens, 3 to 5 minutes. Note: you must stir this mixture constantly, scraping the bottom as you stir, so the flour doesn't stick to the bottom and burn.
  • Remove the pot from the stove and whisk in the marzipan. Pour the mixture onto a baking sheet lined with plastic wrap and cover it with a coating of plastic wrap. Place the tray in the refrigerator to cool.
  • In a medium skillet over low heat, melt the granulated sugar. Spray a tray with a light coating of nonstick spray. Spray the end of a wooden spoon as well. When the sugar turns light brown, add the almonds and stir to coat them with the sugar. Spoon the almonds on to the baking sheet and sprinkle lightly with salt.
  • When the almond cream has cooled, remove and discard the vanilla bean and place the pastry cream in a medium bowl. Whisk until it is smooth. In another medium bowl, toss the strawberries and brown sugar together.
  • Place 4 to 6 glasses on a flat surface. Begin by spooning a thin layer of almond cream in the bottom of each. Sprinkle with a few almonds. Add a layer of the whipped cream. Top with a layer of strawberries. Repeat the layers until the glasses are full. Refrigerate for a while before serving or enjoy immediately.

This is all about strawberries with raspberries as a backup singer. I love them both but raspberries can make a strawberry come to life. The tang of the cream cheese mixed with the rich cream and sweetened condensed milk makes such an easy pie filling. It's like a distant cousin of the key lime pie and this one is frozen so it doesn't need the ice cream or even whipped cream to go with it.

4 tablespoons (1/2 stick) unsalted butter, melted, plus additional for greasing
1 1/2 cups graham cracker crumbs (from about 10 full sheets of graham crackers)
2 tablespoons granulated sugar
1/2 teaspoon ground ginger
2 cups heavy cream
4 ounces cream cheese, softened
1 (14-ounce) can sweetened condensed milk
2 large lemons, 1 zested, both juiced
1 teaspoon kosher salt
1 pint raspberries, lightly crushed
1 pint strawberries, hulled and quartered
1 tablespoon dark brown sugar
1 teaspoon apple cider vinegar

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 10-inch pie dish and set side.
  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, ginger and melted butter. The texture should resemble wet sand. Press the crumbs into an even layer in the bottom and up the sides of the pie dish. Use the bottom of a measuring cup or glass to pack the bottom crust firmly. Bake until the crust firms up and browns lightly, 10 to 12 minutes. Remove from the oven and set aside on a rack to cool completely.
  • For the filling: In the bowl of an electric mixer fitted with the whisk attachment, whip the heavy cream to stiff peaks. Transfer to a medium bowl and refrigerate.
  • In the same mixing bowl of the electric mixer fitted with the paddle attachment, beat the cream cheese on medium speed until smooth. Slowly pour in the condensed milk and continue to mix until incorporated and smooth. Add the lemon zest and juice and salt and beat on medium-high speed until combined, 1 to 2 minutes. If necessary, transfer the mixture to a large bowl to allow for the whipped cream. Use a rubber spatula to fold the raspberries into the filling mix, then fold in the whipped cream.
  • To assemble: Spoon the filling into the completely cooled crust. Freeze the pie for at least 6 hours, up to 12 hours.
  • For the topping: In a medium bowl, toss the strawberries with the brown sugar and vinegar. Remove the pie from the freezer, top with the strawberry mixture and serve.

1 tsp vanilla extract
¼ cup fresh strawberries, (pureed)
2 cups fresh strawberries, (diced)
2 cups fresh blueberries
1 cup granola

Steps:

  • To make the whipped cream, add heavy cream, sugar, vanilla to a medium bowl and beat on high until stiff peaks form.
  • Fold in pureed strawberries until combined.
  • Add a heaping spoonful, or two, of the whipped cream into individual cups.
  • Next, add diced strawberries, followed by another spoonful, or two, of whipped cream, then followed by fresh blueberries.
  • The final layer is whipped cream and then topped with your favorite granola.
  • Cover with plastic wrap and place in the fridge until ready to serve.

I take this to work with me and it has fruit, cereal and yogurt in it. Sweet, yet good for you and a quick thing to grab on the way out the door. For brown bagging, you can pack the cereal, berries and yogurt seperate and put a plastic glass and a long dessert spoon in the bag. This can also easily be breakfast. My friends always drool over this when I bring it to work.

5 -7 large frozen strawberries, slightly defrosted
1/4-1/2 cup frozen wild blueberries, slightly defrosted
1 -2 teaspoon Splenda sugar substitute or 1 -2 teaspoon powdered artificial sweetener, of choice
1 cup fat-free lemon yogurt or 1 cup non-fat vanilla yogurt (lemon is best, Vegans use soy yogurt, Wholesoy is the best)
1/2-1 cup blueberry almond cereal (I use Kroger Brand, you can get Blueberry Moring form Post, Vegans use your favorite flaked cereal w)

Steps:

  • Mix berries with Splenda in seperate bowls.
  • Layer yogurt, berries, cereal.
  • Repeat layers.
  • If using different berries, layer yogurt, strawberries, cereal then yogurt, blueberries then cereal.
