STRAWBERRY BLUEBERRY POPPY SEED BRUSCHETTA



Strawberry Blueberry Poppy Seed Bruschetta image

1 baguette
4 Tablespoons of butter
4 ounces of plain Greek yogurt
1 cup of strawberries, diced
1 cup of blueberries
1/2 cup of fresh spinach, chopped
1/4 cup of poppy seed dressing (your favorite brand)

Steps:

  • Preheat oven to 250*F Slice baguette into 1 inch pieces. Lay flat on a cookie sheet and lightly butter the top of each baguette. Bake baguette for 5 minutes or until butter is melted and bread is beginning to get crusty. Remove and set aside. After baguettes cool to room temperature, smear Greek yogurt over one side of baguette pieces. In a medium bowl, mix together strawberries, blueberries, spinach & poppy seed dressing. Spoon 1 - 2 Tablespoons of mixture on to each baguette. Serve immediately.

This is so easy and so delicious. I love cream cheese and strawberries, so when I saw this I had to try it. Instead of using store-bought jelly, I had made some sugar-free strawberry freezer jam earlier and that's what I used. Deeelightful! This would be great for a tea party or just a bunch of gals getting together to chat.

1 (8 ounce) baguette-style French bread
1 (8 ounce) container cream cheese
1 tablespoon honey
2 cups strawberries, sliced
1/4 cup strawberry jelly

Steps:

  • Heat oven to 375 degrees.
  • Cut bread into 24 slices about 1/4-inch thick. Place in a single layer on an ungreased cookie sheet. Bake about 10 minutes or until lightly brown, turning once.
  • Stir together cream cheese and honey; spread on one side of each bread slice.
  • Arrange strawberry slices on the cheese.
  • Heat jelly in a custard cup in a microwave oven on high power for 30 seconds; stir (or heat and stir in a small saucepan until melted). Brush jelly over strawberries.
  • Serve with a few whole berries to decorate the tray.

2 to 3 tablespoons unsalted butter
10 strawberries, sliced
3 to 5 teaspoons sugar

Steps:

  • Heat a grill pan over medium-high heat. Grill the bread until golden brown, about 2 minutes per side. Spread the butter over the toasts. Arrange the sliced strawberries over the toasts. Sprinkle the strawberries with the sugar. Broil until the sugar begins to caramelize, about 2 minutes.
