This recipe comes from the 1998 Recipes of the Five Brothers: Volume I cookbook by Lipton. My mother made this once, and it was delicious. It is, however, very tart - so add more sugar to the cranberry filling if tart is not your thing. The recipe is for both the dough and the filling, and prep time includes 1 hour chill time.

1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
4 tablespoons cold unsalted butter, cut into cubes
1/2 teaspoon finely grated lemon rind
2 1/2 tablespoons ice water
2 cups fresh cranberries
1/2 chopped walnuts
3 tablespoons sugar
2 tablespoons brown sugar
confectioners' sugar

Steps:

  • In a food processor, combine flour, 2 tablespoons sugar, and salt. Pulse briefly to combine.
  • Add chilled butter and lemon rind, pulse 10-12 times or until butter mixture resembles coarse oatmeal.
  • With food processor running, add ice water all at once.
  • Process for about 10 seconds until a ball of dough forms.
  • Turn dough onto a sheet of plastic wrap. Flatten to form a 1-inch circle. Wrap dough tightly and refrigerate at least one hour.
  • Roll dough into an 11-inch circle on a lightly floured surface. Place dough on a baking sheet.
  • In a large bowl, thoroughly combine cranberries, walnuts, 3 tablespoons of sugar, and brown sugar.
  • Spoon cranberry mixture over crust, leaving about a 1-inch border around the outside edge. Fold dough over cranberries, pinching as necessary to keep it in place.
  • Bake 15-18 minutes, or until crust is golden and berries are juicy.
  • Cool on a rack about 10 minutes. Dust with sifted confectioners sugar.
  • Serve warm.

4 large eggs
1 cup white sugar
1 cup mashed strawberries
1 cup mashed bananas
1 cup strawberry yogurt
½ cup rolled oats
½ cup canola oil
½ cup applesauce
½ teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 8.5x4.5-inch loaf pans and one 5.75x3-inch mini loaf pan with butter.
  • Lightly beat eggs in a large bowl with an electric mixer. Add sugar, strawberries, bananas, yogurt, oats, oil, applesauce, and vanilla and beat until well combined. Let sit for 5 minutes to soak oats.
  • Add flour, baking soda, cinnamon, salt, and nutmeg to the strawberry-banana mixture, beating just until combined. Stir in walnuts. Pour batter into the prepared pans.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes for mini loaf and 1 hour for larger loaves.

2 cups all-purpose flour, plus some additional for rolling out the dough
1/4 cup granulated sugar
1/2 teaspoon kosher salt
1 lemon, zest of
3/4 cup unsalted butter, cubed and chilled
3 -4 tablespoons ice water
1 tablespoon unsalted butter
2 pints strawberries, hulled and split
1/4 cup plus 1 teaspoon granulated sugar, divided
1 teaspoon grated lemon zest
1 tablespoon fresh lemon juice
1 tablespoon cornstarch
3/4 cup Fisher® Walnut Halves, coarsely chopped

Steps:

  • Dough: In the food processor, combine flour, sugar, salt and lemon zest. Pulse to blend. Add the butter and pulse until crumbly. Pour the cold water through the hole in the top of the machine and pulse only to combine. Form into an 8-inch long cylinder (about 2 inches in diameter) and refrigerate for at least 1 hour.
  • Filling: Heat a large sauté pan over high heat. Place a baking sheet next to the stove. When the sauté pan is fairly hot, add the butter for the filling. When it melts and foams slightly, add the strawberries. Toss to coat with the butter and add 1/4 cup sugar, lemon zest and juice. Toss to blend and allow some of the liquid to escape from the berries and reduce. After 2 minutes, sprinkle with cornstarch, reduce heat to medium and cook, stirring for an additional 2 minutes. Transfer to the baking sheet. Spread the strawberry mixture out so it cools faster and refrigerate until very cool.
  • Preheat the oven to 375°F.
  • Remove the dough from the refrigerator and cut into 8 equal pieces. Press each disk with your hand to flatten and using a rolling pin, roll each piece into a circle that is about 6-inches in diameter and about 1/8 inch thick. Make sure you flour lightly under and on top of the dough as you roll it. Trim edges with a sharp paring knife or circular pizza cutter if you want a cleaner edge on the crostata.
  • Meanwhile, remove strawberry mixture from refrigerator and transfer to a fine strainer placed over a bowl. Strain strawberries so that almost no liquid remains with the berries, being sure not to crush the fruit.
  • Arrange the tart rounds in a single layer on a baking sheet. Place 1 tablespoon walnuts onto the center of each round. Divide the cooked strawberries evenly among the dough circles. Fold the sides up tightly around the fruit to form a purse, making the fruit the center, they will open slightly during baking. Cover the opening left after folding with a few more walnuts. Refrigerate circles if they become too soft to handle.
  • Place the baking sheet in the center of the oven and bake until golden brown, 20 to 25 minutes. Top with any remaining walnuts. Sprinkle with sugar for added texture. Let cool on baking sheet for 5 minutes then transfer to serving plates using a wide spatula. Serve immediately.
  • Note: Use strained thickened strawberry liquid as a sauce with the tarts or with ice cream. Stir in 1 teaspoon Grand Marnier, if desired.

APPLE WALNUT CROSTATA - CALIFORNIA WALNUTS
Preparation. Preheat oven to 400°F. Coat two 12-inch x 14-inch pieces of parchment paper with nonstick cooking spray. Combine flour, walnuts, salt and nutmeg in food processor. Whirl until walnuts are finely ground. Add in cubed butter and pulse until the butter is the size of peas. Add milk over flour mixture.
