6 ounces cream cheese, softened
3/4 cup sliced fresh strawberries
1/3 cup confectioners' sugar
1 loaf (1 pound) French bread, cut into 1-inch slices
10 large eggs
2/3 cup half-and-half cream or heavy whipping cream
1 teaspoon vanilla extract
STRAWBERRY SAUCE:
4 cups sliced fresh strawberries
1/2 cup sugar
2 tablespoons water
Maple syrup, optional

Steps:

  • In a large bowl, beat the cream cheese, strawberries and confectioners' sugar until blended. Spread about 2 tablespoons on one side of half the bread slices; top with remaining bread. , Place sandwiches in an ungreased 13x9-in. baking dish. In a large bowl, beat the eggs, cream and vanilla. Pour over bread. Turn each sandwich. Cover and refrigerate for 8 hours or overnight. , With a slotted spatula, transfer sandwiches to a greased 15x10x1-in. baking pan. Discard any remaining egg mixture. Bake at 375° for 15 minutes; turn and bake 10 minutes longer or until golden brown. , Meanwhile, for the sauce, combine the strawberries, sugar and water in a large saucepan. Cook over medium heat for 5 minutes, stirring occasionally. Serve French toast with strawberry sauce and maple syrup if desired.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease or spray a 9x13-inch baking dish with cooking spray.
  • Slice the bread into 16 slices using a sharp knife. Save the ends to use in another dish, or discard. Arrange the bread slices in the prepared baking pan. Tuck strawberry slices between and around the bread.
  • Whisk eggs, milk, cream, sugar, lemon zest, almond extract, and salt together until well combined.
  • Pour the egg mixture over the bread slices. Press down on the top of the bread to help the egg absorb; it's okay if a little is in the bottom of the pan. Let stand for 15 to 20 minutes.

½ cup sliced almonds
1 (10 ounce) package frozen strawberries - thawed, drained, and juice reserved
water as needed
½ cup white sugar
2 tablespoons cornstarch
1 (8 ounce) package cream cheese, softened

1 cup milk
3 eggs, beaten

  • Slice bread at 1 1/2-inch intervals about 3/4 of the way through. Cut a slit in the center of each slice to form a pocket, and fill each pocket with 1 rounded tablespoon of the cream cheese mixture. Separate slices from loaf by cutting each slice the rest of the way through the loaf.
  • Dip bread slices in egg mixture to coat completely.

3 large eggs
1/2 cup whole milk
1 tablespoon ground cinnamon
4 tablespoons salted butter
8 slices basic white bread
Strawberry Syrup for serving, recipe follows
1 cup sliced strawberries (about 6 large whole)
1/2 cup sugar
1/2 teaspoon vanilla extract

Steps:

  • Crack the eggs into a blender and add the milk and cinnamon. Blend until the yolks and whites are incorporated. (This step can be accomplished in a shallow dish with a whisk or fork as well.) Pour the mixture into a shallow dish or wide-bottom bowl.
  • Heat a large nonstick skillet or griddle over medium heat. Add 2 tablespoons of the butter and swirl it around the pan; when melted, place 1 piece of bread in the egg mixture to soak in for about 10 seconds. Turn over and let soak on other side. This is a quick process don't let bread soak too long as it will get too soggy. Drain off excess egg and place the bread in the hot pan. Immediately soak 3 more bread slices, taking care not to over-crowd the pan.
  • Cook until golden brown, turning once, about 2 minutes per side.
  • Repeat with remaining butter and bread slices. Serve with Strawberry Syrup spooned over or on the side at the table.
  • Place the strawberries, sugar, vanilla and 2 tablespoons water into a wide saucepan or skillet large enough to hold the strawberries in a single layer. Bring the mixture to a simmer over medium-low heat and cook gently until the strawberries are very soft and ruby red in color throughout., but still hold their shape, about 5 minutes .
  • Serve warm over French toast or on the side at the table.

10 slices brioche bread
4 eggs, divided
16 oz strawberry, chopped
⅓ cup milk
2 teaspoons granulated sugar
1 teaspoon cinnamon
maple syrup, for serving
⅓ cup powdered sugar, for serving

Steps:

  • Make the filling: In a large bowl, use a spatula to combine the cream cheese, powdered sugar, and the vanilla extract. Mix together until fluffy and smooth.
  • Lay out a piece of plastic wrap and arrange 4 rows of 2 whole slices of brioche bread. Cut 2 pieces of brioche bread in half and add to the end of each row.
  • Beat 1 egg in a small bowl. Brush egg wash on the left side of each piece of bread, except for the farthest left pieces in each row. Overlap the right edges over the egg wash and press to adhere. When my favorite ice cream brand marketed its ice cream as five ingredients, I always thought as a kid, "that's pretty much what I use to soak bread when I make French toast." It's just how you think it would be - amazing! It's melted ice cream with a dash of cinnamon, all soaked up by a thick slice of brioche and topped with a fast and flavorful strawberry sauce. Oh yeah, and also that store-bought whipped cream. This gets the stamp of approval for "eat this whenever you want!" It's tempting to eat it all but try to share!

1 pound strawberries, quartered
1/4 cup granulated sugar
1 teaspoon lemon juice
1/2 teaspoon pure vanilla extract
1 pint vanilla ice cream, preferably Haagen-Dazs
2 large eggs
1 teaspoon ground cinnamon
1 loaf brioche, cut into 8 slices, about 1 1/2 inches thick
4 tablespoons unsalted butter
Confectioners' sugar, for serving
Store-bought or homemade whipped cream, for serving

Steps:

  • Arrange a rack in the center of the oven and preheat to 275 degrees F.
  • Put the strawberries, granulated sugar, lemon juice and vanilla in a medium saucepan and cook, stirring occasionally, over medium heat until the sauce coats the back of a spoon, 10 minutes.
  • Microwave the ice cream in its paper container until softened, 2 minutes. Transfer the ice cream to a 9-by-13-inch baking pan. Whisk in the eggs and cinnamon.
  • Preheat a large griddle pan or large nonstick skillet over medium heat.
  • Place 4 slices of the bread in the ice cream mixture and let sit for 30 seconds, then flip and let sit 30 seconds.
  • Melt 2 tablespoons of the butter on the griddle pan. Add the soaked bread and cook until golden brown, about 2 minutes per side. You may have to alternate between medium and medium-low heat if the bread browns too quickly or not fast enough. Cut each French toast on a diagonal with a metal spatula. Place each triangle cut-side down on the griddle and cook for 30 seconds. Transfer to a rimmed baking sheet and keep warm in the oven while you cook the next batch. Wipe off the griddle pan or skillet with a paper towel. Repeat with the remaining 4 slices of bread, ice cream mixture and 2 tablespoons of butter.
  • To serve, transfer the French toast to a platter and top with confectioners' sugar, the fresh and easy strawberry sauce and your favorite whipped cream.
