STRAWBERRY BAKED OATMEAL
Steps:
- Preheat oven to 375° F (190 °C) and have an oven-proof dish, skillet or pan ready. One about 7 or 8inches in diameter. Anything ovenproof will do, such as a ceramic dish, skillet, 7 or 8-inch cake pan or an 8 x 8 cake pan. (can also be made in a muffin pan - see recipe notes)If you want to be able to turn the baked oatmeal out like I did in the photos use a 7 or 8-inch loose bottom cake pan with a circle of parchment paper in the bottom.
- Put the oats, ground flax, sugar and salt in a large bowl and stir together.
- Blend the milk, vanilla and nut butter, or mix by hand if you don't have a blender. If doing this by hand add the nut/seed butter to a bowl then gradually add the milk to work out the big lumps until it's mostly combined. Some small lumps are fine. Mashing with a fork makes it easier. Then add the vanilla.
- Pour the wet ingredients into the dry ingredients and stir together until you can't see any dry oats, then add the chopped strawberries and stir again to combine.
- Spoon the mixture into your pan/dish and bake for around 35 to 40 minutes. Cooking times vary slightly depending on what type of dish you are using but when done it should be starting to turn golden around the edges and feel pretty firm to the touch.
- Remove from the oven and leave it to cool in the pan/dish.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Cream brown sugar, oil, eggs, baking powder, and salt together in a bowl until smooth. Add oatmeal and milk and mix until combined.
- Layer blackberry pie filling and strawberries in the bottom of the prepared pan. Add oatmeal mixture over fruit.
- Bake in the preheated oven until top is golden brown, about 30 minutes.

STRAWBERRY KIWI SMOOTHIE

- Peel the kiwis and cut them into chunks.
- Put the kiwi chunks, strawberries, yogurt, milk and honey into a blender container. The blender is sharp inside. Watch your fingers!
- Cover the blender with the lid and blend on high speed until the mixture is smooth. Turn the blender off and on or pulse, if needed, to break up the strawberries.
- Pour into four glasses and serve with straws.

- Preheat oven to 375 degrees.
- In a large bowl, mix all ingredients together.
- Spray a muffin tin with non-stick cooking spray and scoop oatmeal mixture in using a large ice cream scoop (or a 1/4 measuring cup). The mixture will be a little watery, so it's important to mix the oatmeal well before each scoop to make sure you get an even combination of milk and oats.
- Bake oatmeal cups for 20 minutes, or until cooked through.
- Remove from oven and let cool for a few minutes. Enjoy immediately or let them cool completely and place them in a freezer-safe container. Pull out of the freezer as needed and heat them up in the microwave for about 60-90 seconds.

STRAWBERRY KIWI OATMEAL
I love coming up with new ways to eat my oatmeal in the mornings, and this is one that I've tried multiple times now. My roommate thinks it's weird to put kiwi in oatmeal, but then again, she thinks most of the things I eat are weird ;) This is kinda reminiscent of summer though :) I like to cut up the fruit at night, so I don't have to mess with it in the morning, since I like to hit the snooze button as many times as I possibly can before getting up...

- Put oats and water in good-sized microwave-safe bowl (big enough that the oatmeal won't overflow as it boils), and microwave on medium power (50%) for 3 1/2 minutes.
- Sprinkle with almonds. Don't worry about stirring them in, as they will get moved around as the oatmeal continues to cook. Microwave on medium power 1 1/2 minutes.
- Gently stir in desired amount of pre-cut fruit. I like a lot of fruit in my oatmeal, so I used about half of it. Microwave on medium for another 30 seconds.
- Stir and allow to cool; then eat up! The leftover fruit can just be eaten plain. This gives you about 2 servings of fruit (I think).
- The fruit adds enough sweetness for me, but you could probably drizzle this with a bit of honey for some added sweetness.
