1 1/4 cups halved strawberries
3 tablespoons butter, melted
2 teaspoons grated orange rind
2 large eggs
1 1/2 cups all-purpose flour
1 1/4 cups sugar
1 teaspoon baking powder
1/2 teaspoon salt
cooking spray
2 teaspoons sugar
jam or preserves

Steps:

  • Preheat oven to 400
  • Combine the first 4 ingredients in a blender and process just until mixture is blended.
  • Lightly spoon flour into dry measuring cups and level with a knife.
  • Combine flour, 1 1/4 cups sugar, baking powder, and salt.
  • Add strawberry mixture to flour mixture stirring just until mixture is moist.
  • Spoon batter into 12 muffin cups coated with cooking spray.
  • Sprinkle batter evenly with 2 teaspoons sugar.
  • Bake at 400 for 20 minutes or until muffins spring back when touched lightly in center.
  • Remove muffins from pan immediately and serve with jam if desired.
  • ** NOTE: set timer for 15 minutes because muffins tend to cook fast.

1 pound fresh strawberries, hulled, medium dice (about 3 cups)
2/3 cup granulated sugar
1 tablespoon orange-flavored liqueur
1 cup cold heavy cream

Steps:

  • Blend 2 cups of the strawberries, and 1/2 cup of the sugar in a blender or food processor until smooth. Transfer to medium saucepan and cook over medium heat until bubbling and just thickened. Set aside to cool, then refrigerate and chill for about 1 hour. Stir in remaining 1 cup strawberries.
  • In a medium clean, cold bowl, beat cream with the remaining 2 tablespoons of the sugar and liqueur until stiff peaks form. Fold the whipped cream into strawberry mixture. Chill fool until beginning to set, about 30 minutes.

3/4 cup sugar
1/2 cup milk
1/2 cup sour cream
1/3 cup vegetable oil

1 tablespoon orange zest
1 cup thinly sliced fresh strawberries
1/3 cup strawberry jam

Steps:

  • Grease muffin tins or use paper liners.
  • In a large bowl, stir the flour, baking powder, baking soda and salt together and set aside.
  • In another bowl, whisk the sugar, milk, sour cream, oil, egg and orange zest together until well mixed; stir in the strawberries. Add to the flour mixture and stir until just combined.
  • Preheat oven to 400º. Place a spoonful of batter in each prepared tin or paper liner. Top each with a scant teaspoon of jam. Spoon the remaining batter over the jam, filling each cup about 2/3 full.
  • Bake 15 to 18 minutes or until a toothpick inserted in the middle of a muffin comes out clean. Cool in the tins for 5 minutes then remove to a rack to cool completely.

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, sugar, baking powder, baking soda and salt. In another bowl, whisk egg, orange juice and oil until blended. ¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
1 egg
⅓ cup milk, or as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease 5 cups of a muffin tin or line with paper liners.
  • Whisk flour, sugar, baking powder, and salt together in a bowl until evenly blended. Pour vegetable oil in a 1-cup measuring cup. Add egg and enough milk to fill the cup; stir to combine. 1 teaspoon baking powder
½ teaspoon baking soda

1 cup powdered sugar
1 tablespoon orange juice, or more as needed
1 pinch grated orange zest

1 cup orange juice

3 to 4 cups fresh blueberries
TOPPING:
1/2 cup finely chopped nuts

Steps:

  • Mix oats, orange juice and zest. Blend in oil and eggs; set aside. Stir together flour, sugar, baking powder, salt and baking soda. Add oat mixture; mix lightly. Fold in blueberries.
