STRAWBERRY PANCAKE SKEWERS
Pancakes on a stick? Of course! This clever presentation will enliven any weekend brunch. Simply skewer silver-dollar pancakes with fresh strawberries, sausage or other fruit, then dip the kabobs in a side of whipped cream.

Steps:
- Brush griddle or skillet with vegetable oil, or spray with cooking spray. Heat over medium-low heat.
- In medium bowl, stir Bisquick mix, milk and eggs with whisk until blended.
- Pour onto griddle by tablespoonfuls to make silver dollar-size pancakes. Cook until edges are dry. Turn; cook until golden.
- Thread pancakes and strawberries onto skewers. Serve with whipped topping for dipping.

- In a large mixing bowl combine the dry ingredients by sieve.
- Beat together the egg, milk and butter in a separate bowl, then combine with the dry ingredients.
- Gently whisk the mixture just enough to moisten the flour to be sure not to over mix. Transfer the batter into a larger squeeze bottle.
- On a non-stick pan, squeeze a quarter-sized amount of the batter. Flip when bubbles rise and the bottom has browned.
- When the pancakes are done, start assembly from bottom to top with a pancake, strawberry, banana. Repeat twice finishing with a pancake on the top and a skewer down the center. NOTE: Feel free to use any fruit combinations to your liking.
- Finish with powdered sugar and maple syrup.
- Enjoy!

- Prepare a grill for medium-high heat. Toss the pound cake, strawberries and 1 1/2 cups sugar in a large bowl until the cake and berries are coated well on all sides with sugar (they can be a little lumpy and unevenly coated). Thread a piece of cake and a strawberry onto a skewer; repeat 3 times on the skewer. Repeat with the remaining skewers and ingredients. Set the skewers on a rimmed baking sheet.
- Whisk together the cream, the remaining 2 tablespoons sugar and the vanilla in a medium bowl. Beat with a hand or stand mixer until soft peaks form. Cover and refrigerate.
- Lightly oil the grill grates. Put the skewers on the grill, and grill, covered, until they are lightly marked, about 1 minute. Use a spatula to gently loosen them, and use tongs to flip them over. Continue to grill, covered, until the cake and strawberries are toasted with grill marks and the sugar starts to bubble and harden, 2 to 3 minutes. Serve with the whipped cream on the side.

STRAWBERRY BANANA PANCAKE KEBABS
It only takes 30 minutes to whip up our Strawberry Banana Pancake Kebabs. Spear yummy pieces of pancakes, strawberries, and bananas and drizzle with strawberry jam. They're the perfect wake-up call for slumber parties.

- Heat large skillet or griddle over medium-high heat.
- In large bowl, beat Bisquick mix, milk and eggs with whisk.
- For each pancake, pour quarter-size amount of batter onto hot griddle. Cook until bubbly on top and set on edges. Turn, and cook on other side until golden.
- Cut tops and bottoms off strawberries, and cut each strawberry into 2 pieces. Cut each banana into 12 slices.
- To assemble pancakes, thread 1 pancake on each skewer. Add strawberry slice, banana slice, another strawberry slice and then another pancake.
- When ready to serve, heat jam in microwave just until thin enough to drizzle. Drizzle small amount of jam over top of each of the pancake stacks.

- Stir rice vinegar into milk. Set aside to "sour", about 5 minutes.
- Combine milk mixture, flour, butter, eggs, sugar, baking soda, baking powder, and salt in a large mixing bowl. Whisk until lumps are gone.
- Heat a nonstick pan over medium heat. Add oil. Pour 1/2 tablespoon of batter for each pancake. Cook until bottom side is golden brown, 1 to 2 minutes. Flip and cook until other side is golden brown, 1 to 2 minutes more. Transfer to a plate. Repeat with remaining batter.
- Place 3 to 5 mini pancakes on each skewer. Top with raspberries, blueberries, and strawberries, drizzle with some syrup, and sprinkle with some powdered sugar.

- Whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt in a bowl. Whisk milk, egg, butter, and amaretto extract together in a second bowl. Pour wet ingredients into the flour mixture, and mix until batter is well combined and smooth.
- Heat a large nonstick skillet or griddle over medium heat. Drop teaspoonfuls of batter onto the hot skillet to form 1-inch diameter pancakes. Cook for about 1 to 2 minutes, flip, and continue cooking until golden brown, about 1 more minute. Transfer cooked pancakes to a plate and repeat with remaining batter.
- Stack ingredients on a work surface as follows: pancake, banana, pancake spread with cream cheese, pancake, strawberry, and pancake. (Each skewer will use 4 pancakes.) Insert a skewer through the center of the stack and repeat to make remaining skewers.
- Dust with confectioners sugar, and serve.
