Strawberry Poppy Seed Salad with Chicken image

In this healthy copycat of a takeout salad favorite we combine precooked (or leftover) chicken and poppy seed dressing with fresh greens, strawberries and goat cheese for an easy throw-together meal that's ready in 10 minutes.

4 cups mixed salad greens
1 cup diced cooked chicken
4 large strawberries, hulled and sliced
1 ounce goat cheese, crumbled (1/4 cup)
3 tablespoons poppy seed dressing (see Tip)
¼ cup chopped toasted pecans

Steps:

  • Place greens, chicken, strawberries and goat cheese in a large bowl. Add dressing and toss to coat. Sprinkle with pecans, if desired.

Wrapped in a crisp lettuce leaf, Strawberry Chicken Poppy Seed Salad makes for an easy Whole30-friendly lunch that's tasty and fresh.

2 cups cooked chicken, cubed (rotisserie chicken also works great)
1/2 cup diced strawberries
2 Tbsp. fine diced red onion
1/4 cup fine diced celery
1/4 cup sliced almonds, toasted
1-2 Tbsp. chopped fresh basil
1/4-1/3 cup mayonnaise (we recommend Primal Kitchen Mayo)
2 Tbsp. lemon juice
1 tsp. poppy seeds
Salt & pepper to taste
Leaf lettuce or butter lettuce
Chopped green onion

Steps:

  • In a medium bowl, combine the chicken, strawberries, onion, celery, toasted almonds and fresh basil.
  • To toast almonds: place almonds in a small pan over medium heat. Toast until slightly browned tossing occasionally. This only takes a few minutes so watch closely.
  • In a small bowl, combine the mayonnaise, lemon juice, and poppy seeds. Gently stir into the chicken mixture. Salt and pepper to taste.
  • Serving option: scoop into a lettuce leaf or scoop onto a bed of greens and top with green onions and a few toasted almonds.

2 cups cooked and diced boneless skinless chicken breasts
1/2 cup diced strawberries
2 tablespoons toasted sliced or slivered almonds
1 tablespoon minced chives
1/3 cup plain non fat Greek yogurt
1 tablespoon honey
2 teaspoons poppy seeds
1 teaspoon white wine vinegar
Kosher salt and fresh ground black pepper to taste
2 English cucumbers

Steps:

  • In a medium sized bowl whisk together the Greek yogurt, honey, poppy seeds, vinegar, salt and pepper.
  • Add in the remaining ingredients, except the cucumbers, and stir everything together until it's coated in the dressing.
  • Cut the cucumbers into approximately 1-1 1/2 inch thick slices then use a teaspoon or melon baller to scoop out some of the center. Be careful not to go all the way through the cucumber slice, just make a well for the chicken salad to sit in.
  • Fill the cucumbers with the chicken salad and top with extra sliced almonds and chives. Serve.

Steps:

  • Combine sliced strawberries, olive oil, white vinegar, honey, poppy seeds, onion, mustard, salt, and pepper in a food processor and process dressing until smooth.
  • Combine diced chicken, sliced strawberries, and pecans in a large bowl. Drizzle dressing over salad and toss gently to coat.
