- Preheat the oven to 475 degrees F.
- Roll and stretch out the risen dough on a floured work surface into a rope about 31 inches long. Press a rolling pin into the dough to create a trench and roll it to a rectangle about 3 inches wide.
- Keeping a 1/2-inch border on each long side of the dough, smear the remaining dough with the olive oil and sprinkle with salt. Spread the surface with a nice thin layer of the Arrabbiata Sauce, then sprinkle with the Parmesan, mozzarella and pepperoni. Arrange the string cheese pieces on top in a double line. Fold the long sides of the dough up over the center (over the string cheese) and pinch the edges together well so there's no leakage. Bring the ends together to form a circle.
- Drizzle a baking sheet with olive oil. Carefully transfer the dough circle to the prepared baking sheet, flipping it over before putting it on the sheet so the seam side is down. Brush the egg wash over the surface of the dough. Bake until the edges of the crust are golden brown and the cheese is melted and bubbly, about 15 minutes. Transfer to a board to rest for 10 minutes before cutting.
- Arrange the tomato slices and basil leaves in concentric circles in the middle of the pizza crust ring and serve with a dish of the remaining Arrabbiata Sauce on the side for dipping.
- Heat a pan over medium-high heat until hot and add the olive oil. Throw in the red pepper flakes and onions, give them a stir and cook until softened, 2 to 3 minutes. Add the garlic and cook for 30 seconds. Add the wine, whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt. Bring to a simmer, reduce the heat to low and simmer for 30 minutes.

- Preheat the oven to 350 degrees F.
- Whisk the first 7 ingredients in a large bowl to blend. Stir in the Parmesan and bread crumbs. Mix in the beef, pork, and veal. Pack half of the meat mixture into a 9 by 5 by 3-inch loaf pan. Spoon the stuffing over the meat in the pan, leaving a 1-inch border around the edges. Top with the remaining meat mixture, enclosing the stuffing completely and pressing firmly. Spoon the marinara sauce over the meatloaf, then sprinkle with the provolone cheese.
- Bake, uncovered, until the meat loaf is firm to the touch in the center and has pulled away from the sides of the pan, about 45 minutes. Cut crosswise into slices and serve.
- Preheat oven to 350 degrees F.
- Butter a 15 by 10 by 2-inch glass baking dish. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the pancetta and saute until crisp and golden, about 10 minutes. Using a slotted spoon, transfer the pancetta to a large bowl. Melt the remaining butter in the same skillet over medium-high heat. Add the onions, carrots, celery, rosemary, and garlic. Saute until the onions are very tender, about 12 minutes. Gently stir in the chestnuts and parsley. Transfer the onion mixture to the large bowl with the pancetta. Add the bread and Parmesan and toss to coat. Add enough broth to the stuffing mixture to moisten. Season the stuffing, to taste, with salt and pepper. Mix in the eggs.
- Transfer the stuffing to the prepared dish. Cover with buttered foil, buttered side down, and bake until the stuffing is heated through, about 30 minutes. Uncover and continue baking until the top is crisp and golden, about 15 minutes longer.

- Preheat oven to 350 degrees F (175 degrees C).
- Thoroughly mix beef, pasta sauce, bread crumbs, onion, ketchup, egg, garlic, oregano, salt, and ground black pepper together using your hands in a large bowl.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together ground beef, bread crumbs, egg, 1/2 a chopped onion, milk, Worcestershire sauce in a bowl; season with garlic, Italian seasoning, dry mustard, salt, and black pepper. Transfer the meat mixture to a piece of waxed paper or aluminum foil and flatten to a 1/2-inch thick rectangle.
- Melt butter in a skillet over medium heat. Cook and stir yellow onion and mushrooms in melted butter until the onion is translucent and mushrooms soft, about 5 minutes. Remove from heat to cool.
- Spread filling mixture into center of meat rectangle. Sprinkle Cheddar cheese over filling, leaving a bit of space at one end for easier rolling and sealing. Pick up the edge of the waxed paper or foil to roll the flattened meat into a log around the filling. Seal the ends and seam and place the loaf into a 9x5-inch loaf pan.

- Heat oven to 450°F. Grease rectangular baking dish,13x9x2 inches. Cook sausage and ground beef in 10-inch skillet over medium heat, stirring occasionally, until brown. Drain; set aside.

- Prepare dough: In large bowl, stir yeast and sugar into 1/4 cup warm water (105 to 115 degrees F). Let stand until yeast mixture foams, about 5 minutes.
- With wooden spoon, stir in oil, salt, and 1 cup warm water. Gradually add 3 1/2 cups flour, stirring until a stiff dough forms.
- Turn dough onto floured surface and knead until smooth and elastic, 7 to 10 minutes, working in more flour (about 1/2 cup) while kneading.
- Shape dough into a ball; place in greased large bowl, turning dough over to grease top. Cover bowl with plastic wrap and let rise in warm place (80 to 85 degrees F) until doubled, about 1 hour. (If making ahead, place covered bowl of unrisen dough in refrigerator for 24 hours to rise. When ready to use, follow recipe from Step 5 to complete.)
- Punch down dough. Turn dough onto lightly floured surface; cover and let rest 15 minutes for easier shaping.
- Grease large cookie sheet (17-inch by 14-inch). On lightly floured surface, with floured rolling pin, roll dough into a 16-inch by 12-inch rectangle.
- Prepare filling: Arrange cheese slices on dough up to 1/2 inch from edges, overlapping slices slightly if necessary. Repeat with salami and ham. Sprinkle with grated cheese. From a long side, roll up dough jelly-roll fashion. Pinch seam and ends to seal, and tuck ends under slightly. Place loaf, seam side down, diagonally on cookie sheet. Cover with greased plastic wrap; let rest 15 minutes. Meanwhile, preheat oven to 375 degrees F.
- In cup, with fork, beat egg slightly. Brush loaf with egg. With knife, make 5 long diagonal slashes in top of loaf, about 1/4-inch deep. Bake loaf 30 to 35 minutes, until browned. Loosen bottom of loaf with wide metal spatula and slide onto wire rack. Cool slightly to serve warm, or cool completely to serve later. To reheat, place on cookie sheet in preheated 375 degrees F oven 10 to 15 minutes, until warm.

- Mix well.

STUFFED PIZZA DOUGH

- Preheat oven to 400 degrees F. Line two baking sheets with parchment.
- Heat the olive oil in a large skillet. When the oil is hot, add the garlic and the sausage. Cook over medium heat, breaking up the sausage with a wooden spoon, until browned, about 4 minutes. Toss in the chopped spinach or escarole, and cook, stirring, until tender and wilted, about 7 minutes. Remove from heat, and scrape into a bowl to cool. When the sausage mixture is cooled, stir in the ricotta.
- Roll out the dough on a floured work surface to a rectangle about 1/4 inch thick. Using a 4 1/2-inch round, cut out as many circles as you can, rerolling the dough to get more circles. You should have about eighteen.
- Fill each circle with about 2 tablespoons of the filling. Brush the edges of the dough with water, then fold over and crimp edges together with a fork. Poke holes in the top of each calzone. Place on the baking sheets, and brush the tops of the calzones lightly with olive oil. Set the baking sheets with the calzones in the oven, rotating the pans front to back halfway through baking, until calzones are golden brown, about 25 minutes.

- In a bowl, combine ground beef, sausage, stuffing, egg, 3 tablespoons ketchup and 2 tablespoons steak sauce. Mix well., Pat half of the meat mixture into a 9x5-in. loaf pan. - Prep the bread first. Cut lines into the bread, two thirds of the way down and every 1cm. Turn the bread and cut across these lines to form a criss cross. This can be a bit tricky, so do take your time.
