PARSLEY CHIMICHURRI
This chimichurri recipe is full of bright, garlicky flavor! This classic Argentinian sauce is ideal with steak, fish, vegetables and more.

Steps:
- Combine water and kosher salt in a small saucepan and heat until dissolved. Remove from heat and allow to cool.
- In a large bowl, stir together the minced garlic, finely chopped Italian parsley, finely chopped oregano and red pepper flakes. Whisk in red wine vinegar, followed by olive oil and then the salt water. Taste and add additional red pepper flakes if desired. Serve immediately. Store refrigerated for 2 to 3 weeks.
STUFFED TILAPIA/SOLE WITH LOW FAT PARSLEY SAUCE
This fish dish is so easy to make and taste so good. It takes about 30 minutes to get to your table. Been a favorite with the family many, many years. My wife would never eat fish till she tried this. Now it's a fight to see who will get the last piece. Try it, you will love it. We use Tilapia all the time, but sole also is very good.

Steps:
- Heat oven to 350°F.
- Heat oil in medium pan. Sauté onions and chopped spinach until tender. Spoon 2-3 tbsp of onion and spinach mixture into fillet and roll up. Put toothpick through to hold together if you like. Place down in baking dish of the right size. Pour chicken broth over fillets and bake 25 minutes, or until flaky.
- When in the oven make the sauce. Heat milk over medium heat in a small saucepan until bubbles occur around the edge. Add cornstarch mixture and stir until thickened, add the fine chopped parsley and pepper.
- When fish is done, remove from oven and plate. Spoon about 3 tbsp over each fillet. ENJOY.

SPAGHETTI WITH PARSLEY OLIVE OIL SAUCE
Steps:
- In a large pot bring water to a full rolling boil. Meanwhile, rinse, pat dry, and mince the parsley. Peel and mince the garlic. When the water is ready, add your pasta. Remember start your cooking time when the water returns to a boil, not when you add the pasta. Cook your pasta according to package directions, drain in a colander and transfer to a serving dish To make the sauce; in a skillet heat olive oil. Add garlic and cook until fragrant. Then add the parsley and remove from heat. Season to taste with salt and pepper. Add sauce to the past and toss to combine.
GARLIC RAVIOLI WITH PARSLEY GARLIC SAUCE

- Preheat oven to 400 degrees F.
- Place all the garlic cloves on a piece of aluminum foil and drizzle with olive oil. Wrap the garlic in foil and bake in the oven for 45 minutes. Remove the garlic from the oven, and when cool enough to handle, squeeze the roasted garlic from the skins.
- To make the ravioli, place the white wine, chicken stock, lemon juice, fennel, red onions, and carrots in a medium pan, add salt, and simmer for 10 minutes. Add the artichokes, cover the pot, and simmer until the artichokes are tender.
- Once the artichokes are tender, remove the pot from heat and let the mixture cool. Remove all of the vegetables and mix with the ricotta in a large bowl.
- Spread out the pasta sheets onto a working surface. Using a tablespoon, spoon the vegetable mixture onto the pasta leaving approximately 2-inches between each ravioli. Top the ravioli with another layer of pasta, and using a 4-inch cookie cutter, cut out the shapes, and seal each ravioli.
- In a large pot with boiling water, cook the raviolis for approximately 6 minutes.
- To make the sauce, place the garlic and chicken stock in a pan and simmer until garlic is soft. Add the cream and reduce to a thick sauce consistency. Add the parsley to the sauce and place in a blender until sauce is smooth.
- In a hot skillet, sear each fillet for approximately 1 minute on each side. Season with salt and pepper.
- To serve, place the raviolis on the center of the plate. Top the ravioli with the seared bass and drizzle the parsley garlic sauce around the plate.
EASY HOLLANDAISE SAUCE
Hollandaise sauce in a blender.

- Melt butter in a small saucepan over medium heat until bubbly; do not let brown.
- Combine egg yolks, water, lemon juice, salt, and cayenne in a blender; blend until frothy. With blender running, pour in hot butter in a very thin stream and blend until sauce is thick and emulsified. Promptly pour sauce into a serving bowl.

PASTA WITH PARSLEY SAUCE

- Drop the pasta into boiling water and cook according to package directions.
- While the pasta is cooking, melt the butter in a saucepan, stir in the garlic and simmer until the butter turns a bit darker. Combine the parsley, Parmesan and pepper, mix well and reserve.
- When the pasta is done, drain it and put it into a bowl. Pour on the butter and toss lightly to mix. Add the parsley-Parmesan-pepper mixture and toss to mix again. Serve immediately.

VELOUTE OF PARSLEY WITH TRUFFLE OIL

- Place the chicken stock and ham in a saucepan and bring to a boil. Remove from heat, let cool, then strain, discarding the ham.
- Meanwhile, bring a large kettle of salted water to a boil. Add the parsley and cook for 1 minute. Drain and immediately plunge the parsley into very cold water to cool. Drain again and pat dry.
- Process the parsley in a blender with 1/4 cup of water until liquefied. Strain through a fine-mesh sieve, using the back of a spoon to push as much of the puree through as possible. Discard the solids and set the puree aside.
- Bring the chicken stock back to a boil. Whisk in the cream, adjust the heat and simmer gently, uncovered, for 15 minutes. Remove from the heat, whisk in 4 tablespoons of the parsley puree and the truffle oil and season with salt and pepper if necessary.
- Before serving, reheat the sauce and use a whisk or hand-held immersion blender to froth it up. Serve with poached eggs, vegetables or fish.
