1 1/2 teaspoons sea salt
1 teaspoon freshly ground white pepper
5 to 6 fresh bird chiles, or 5 serrano chiles, slivered
12 garlic cloves, thinly sliced
5 shallots, thinly sliced
4 krachai, or 12 slivers fresh ginger, thinly sliced
10 kaffir lime leaves, torn in half, or slivered zest of 2 limes
1 1/2 pounds large shrimp, peeled, deveined, and thoroughly dried
1 pound mussels, scrubbed, debearded, and thoroughly dried
1 pound Manila clams, scrubbed and thoroughly dried
1 1 1/2-pound lobster, chopped into bite-size pieces
2 cups Thai basil leaves, roughly torn
2 cups Arugula leaves, torn into bite-size pieces
1 lemon, thinly sliced
2 16-by-18-inch pieces banana leaves
Cooked jasmine rice, for serving (optional)

Steps:

  • Combine the salt, pepper, chiles, garlic, shallots, krachai, and kaffir lime leaves in a bowl, and mix well. Add the seafood, basil leaves, arugula, and lemon slices. Toss to mix well.
  • Heat a grill. Line a 16-by-18-inch double layer of aluminum foil with a banana leaf. Place the seafood mixture in center of leaf. Cover it with second banana leaf and another 16-by-18-inch double layer of aluminum foil. Roll edges of aluminum foil over tightly to form a pouch.
  • Place the pouch on the grill over medium-high heat. Cover, and grill-smoke for 20 minutes. Be sure to open air vents in top of grill cover. Carefully open pouch slightly to make sure the mussel shells are open and the lobster shell has turned pink. Remove pouch from the grill, and transfer seafood, along with the juices, to a platter. Serve with rice.

Salt and pepper
1 Bali lemon, or two regular limes
Betutu spice, recipe follows
Banana leaves, or tin foil
3 salam leaves, or substitute bay leaves
2 sliced green tomatoes
2 kaffir lime leaves
1/4 sweet basil leaves
1/2 cup peeled shallots
1/4 cup peeled garlic
2 tablespoons fresh turmeric
2 tablespoons fresh peeled ginger
2 tablespoons galangal
3 pieces lemongrass
2 tablespoons fresh hot chili peppers seeded and cleaned
2 tablespoons palm sugar chopped
4 tablespoons shrimp paste
1/4 cup coconut oil, for frying

Steps:

  • Tamarind water, to soften, or substitute with the juice of 2 lemons
  • In a bowl season the fish with salt, pepper, lime juice, and betutu paste.
  • On a sheet tray, lay down the banana leaf. Place a salam leaf on the banana leaf. Place the fish on the middle of the banana leaf over the salam leaf. Place sliced green tomatoes, lime leaf, sweet basil, and tamarind water on the fish. Season with salt and pepper.
  • Wrap the fish folding both ends together and secure with a bamboo skewer. Grill until cooked, approximately 4 to 5 minutes per side depending on the thickness of the fillets.
  • Grind shallots, garlic, tumeric, ginger, galangal, lemongrass, chili peppers, palm sugar, and shrimp paste in a food processor. Saute paste with coconut oil.

Viet-Cajun Shrimp Boil Wrapped in Banana Leaves image

Viet-Cajun seafood boils are a fixture in Houston, Texas, where you can find a thriving Vietnamese community that blends the bright, bold flavors of Vietnam with the fresh-as-can-be seafood found throughout the Gulf Coast and the many surrounding lakes and rivers. Traditionally, the seafood and vegetables are boiled then tossed in a buttery sauce infused with garlic and spices, but for this take on the Houston favorite, we steam everything in banana leaves and serve the dish piping hot right off the grill.

2 pounds red skin baby potatoes
5 tablespoons Cajun seasoning, plus more to taste
2 pounds extra-large shell-on shrimp
2 1/2 sticks (1 1/4 cups) unsalted butter
10 cloves garlic, minced (about 1/4 cup)
One 2-inch knob ginger, peeled and finely grated (about 1 1/2 tablespoons)
3 tablespoons fish sauce
Grated zest and juice of 2 large limes, plus lime wedges for serving
1/2 teaspoon cayenne pepper (optional)
4 large banana leaves (each at least 34 inches long), thawed if frozen, rinsed
3 ears yellow corn, husks removed, cobs cut crosswise into 1-inch-thick rounds
1 pound andouille sausage, halved lengthwise and cut into 2-inch-long pieces
Toasted French bread, for serving
Hot sauce, for serving

Steps:

  • Fill a large saucepan halfway with cold water then add the potatoes and 2 tablespoons of the Cajun seasoning. Bring to a boil over medium-high heat, stirring occasionally, then continue to cook until the potatoes are fork-tender (but the skins are still fully intact), about 10 minutes. Drain the potatoes and set aside.
  • While the potatoes cook, use sharp kitchen shears to cut lengthwise through the shells along the back of the shrimp, stopping at the tails and making sure to cut through the edge of the flesh. Devein the shrimp while keeping the shells as intact as possible. Transfer the shrimp to a large bowl and refrigerate while you make the butter sauce.
  • Melt 1/2 stick of the butter in a medium saucepan over medium heat, 2 to 3 minutes. Add the garlic and ginger and cook, stirring frequently, until softened, about 5 minutes. Add the remaining 2 sticks butter and cook, stirring occasionally, until completely melted and starting to bubble, about 5 minutes. Remove from the heat and stir in the fish sauce, lime zest and juice, cayenne pepper if using, and the remaining 3 tablespoons Cajun seasoning. Stir to combine and add more Cajun seasoning if desired. The butter sauce should be very strongly seasoned. Cover with a lid and set aside.
  • Prepare a grill for medium-high indirect heat (for a gas grill, leave one or two burners on low or off; for a charcoal grill, bank the coals on one side of the grill). The ideal cooking temperature is 375 to 400 degrees F.
  • On a large rimmed baking sheet, lay out 2 extra-long pieces of heavy-duty aluminum foil with 8 inches of overhang on all sides of the baking sheet. Top with 3 of the banana leaves, overlapping them slightly to cover the foil completely. Moisten both sides of the banana leaves with a damp cloth (this will help prevent tearing). Cut the remaining banana leaf in half crosswise and set aside.
  • To the bowl of shrimp, add 1/4 cup of the butter sauce and toss to combine. Arrange the shrimp in the center of the banana leaves in a single layer. In the empty bowl (no need to clean it out), combine the cooked potatoes, corn, sausage, and 1/2 cup of the butter sauce (reserve the rest for serving) and toss gently to combine. Arrange the vegetables and sausage on top of the shrimp. Cover the shrimp mixture with the halved banana leaf. Gently fold the sides of the bottom banana leaves up and over the shrimp mixture. Use 2 long pieces of kitchen twine to tie the banana leaf packet together. Do not pull the twine too tight or it will rip the banana leaves. Fold the foil overhanging from the longer sides of the baking sheet over the banana leaves then fold over the foil from the shorter sides.
  • Transfer the foil packet to the grill. Cook for 45 minutes.
  • Use oven mitts or 2 large metal spatulas to transfer the packet back onto the baking sheet. Carefully open the foil, cut away the twine, and unwrap the banana leaves (discard the ones directly on top of the shrimp mixture). Drizzle the remaining butter sauce over the seafood boil and stir to combine. Serve immediately with warm toasted bread, lime wedges and hot sauce on the side.

1 tablespoon peanut oil
2 tablespoons fresh ginger, julienned
5 large (mild) red chile peppers, seeded and julienned
2 kaffir lime leaves, julienned
10 ounces large shrimp, peeled and deveined
4 scallions, white and pale-green parts, julienned
2 seedless English cucumbers, julienned
1/3 cup shredded fresh mint
2 tablespoons freshly squeezed lime juice
1 tablespoon Asian fish sauce
12 medium rice-paper wrappers
Soy sauce, for dipping
Sweet chili sauce, for dipping

Steps:

  • Heat oil in a medium skillet over medium heat. Add ginger and chile peppers, and cook until crisp, about 3 minutes. Add lime leaves and shrimp, and cook until the shrimp turn opaque, about 3 minutes more. Set aside to cool. Combine cooled shrimp with scallions, cucumber, mint, lime juice, and fish sauce.
  • Place a rice-paper wrapper in a bowl of warm water until soft and pliable, about 30 seconds. Remove, and pat dry with paper towels. Place a little of the chile salad down the center of the wrapper, and fold over one end to make a base. Roll over one side and then the second side to enclose the filling. Serve soy sauce and sweet chili sauce in bowls for dipping.

1/4 cup lemon juice
1/2 cup extra virgin olive oil
1 tablespoon fresh thyme leave, minced
salt, to taste
pepper, to taste
4 (8 ounce) red snapper or 4 (8 ounce) halibut fillets
16 lemon slices
8 sprigs fresh thyme
4 banana leaves, washed, soaked in water and cut into 10-by-12 inch rectangles
1 tablespoon extra virgin olive oil
1 garlic clove, minced
1 cup onion, sliced into thin strips
1 cup yellow pepper, sliced into thin strips
1 cup carrot, sliced into thin strips
1 cup tomatoes, sliced thinly

Steps:

  • Heat grill to medium.
  • In a small bowl, whisk the lemon juice with ½ cup olive; add thyme, salt and pepper.
  • Brush both sides of fillets generously with lemon mixture and place each in a banana leaf.
  • Place 4 lemon slices and a sprig of thyme on each fillet.
  • With the short side of the leaf facing you, fold bottom edge over fish; fold sides over fish, then fold package away from you to envelop the fish.
  • Secure each packet with 3 wet toothpicks or tie like a girtbox with a wet piece of string.
  • Cook the fish packets on grill, about 6 minutes per side ( the leaves will brown, which is OK).
  • While the fish grills, sauté garlic in 1 Tbs olive oil over medium-high heat about 1 minute.
  • Add the onions through tomatoes and sauté about 5 minutes until vegetables are tender; season with salt and pepper.
  • To serve, put a fish packet in the center of each plate, open the leaf and spoon vegetables around fillet.
