2 1/2 cups shredded zucchini (about 2 medium)
1 cup unsweetened applesauce
1/2 cup canola oil
3/4 cup fat-free egg product or 3 eggs
2 teaspoons vanilla
1 1/2 cups sugar
1 1/2 cups Gold Medal™ all-purpose flour
1 1/2 cups Gold Medal™ whole wheat flour
3 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped walnuts or pecans

Steps:

  • Heat oven to 350°F. Spray bottoms only of 2 (8x4-inch) loaf pans with cooking spray.
  • In large bowl, mix zucchini, applesauce, oil, egg product, vanilla and sugar until well blended. Stir in all remaining ingredients except walnuts until well blended. Stir in walnuts. Spoon batter evenly into pans.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling racks. Cool completely, about 1 hour.

2 cups whole wheat flour
3/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 cup cholesterol-free egg substitute
3/4 cup applesauce (can use unsweetened, but I prefer sweetened applesauce)
1 cup shredded zucchini (approx 1 medium, you could also use 1 cup of caned pumpkin instead of zucchini)

Steps:

  • Preheat oven to 350 degrees.
  • Spray a small loaf pan with nonstick cooking spray.
  • In a large bowl, combine flour, sugar, baking soda, baking powder, salt, cinnamon and nutmeg.
  • In another small bowl, combine the liquid egg product, applesauce and zucchini.
  • Add the wet ingredients to the dry ingredients and using an electric mixer, mix until well blended.
  • Pour mixture into loaf pan and spread evenly- can sprinkle a little sugar and cinnamon on top if desired.
  • Bake 45-50 minutes, or until a toothpick comes out clean.

nonstick cooking spray
6 tablespoons oat milk
2 tablespoons ground flax seeds
1 ½ medium zucchini
½ cup packed brown sugar
½ cup vegetable oil
⅓ cup honey
1 teaspoon vanilla extract
1 ⅔ cups all-purpose flour
⅓ cup unsweetened cocoa powder
1 teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray an 8 1/2x4 1/2-inch loaf pan with nonstick cooking spray.
  • Whisk together oat milk and ground flax seeds in a small bowl until well combined, then place in the refrigerator for 15 minutes to set.
  • Shred zucchini and gently press out moisture. Set aside.
  • Beat the oat milk/flax seed mixture, brown sugar, oil, honey, and vanilla extract in a large bowl with a hand mixer until smooth. Add flour, cocoa powder, salt, baking soda, and baking powder, and mix until well combined. Stir in zucchini. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes. Cool in the pan for 15 minutes before removing the bread from the pan to cool on a wire rack completely before slicing.

2 teaspoons baking powder
1/3 cup demerara sugar
1/2 cup plain fat-free yogurt
1 cup zucchini, shredded (about 1 medium)
1 tablespoon fresh ginger, chopped (optional)

Steps:

  • Preheat oven to 375°F.
  • Grease a mini 3"x6" loaf pan.
  • In a large bowl, sift dry ingredients together.
  • Gently stir yogurt into the dry mix.
  • Combine shredded zucchini into the mixture with gentle strokes.
  • Spoon batter into loaf pan.
  • Bake for about 30 minutes, or until top is golden brown and toothpick comes out clean after inserted.
