Steps:

  • Place the butter and brown sugar in a heavy saucepan over low-medium heat; cook and stir until the sugar dissolves and the mixture boils. Stir in the cream, return to a boil, and boil for 1 minute. Remove from the heat and cool.
  • Beat in the powdered sugar until smooth.

3 tablespoons milk
½ cup packed brown sugar
1 cup confectioners' sugar
½ teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.
  • Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

2 cups packed brown sugar
½ cup milk
6 cups sifted confectioners' sugar
1 pinch salt

Steps:

  • Melt butter in a 2-quart saucepan over medium heat; stir in brown sugar. Bring to a boil, stirring constantly. Cook until thickened, about 1 minute. Let cool for 5 minutes.
  • Whisk milk into the saucepan until mixture is smooth.
  • Beat 3 cups confectioners' sugar and salt into the butter mixture with an electric mixer on low speed. Add remaining confectioners' sugar 1 cup at a time, beating until smooth.

1 egg, slightly beaten
1/2 cup butter
3/4 cup milk
1 teaspoon vanilla

Steps:

  • Melt 1/2 cup of sugar in iron skillet slowly, until brown and runny.
  • Mix egg, butter, remaining sugar, and milk in a saucepan and cook over low heat until butter melts.
  • Turn the heat up to medium and add the browned sugar.
  • Cook until it reaches the soft ball stage or until mixture leaves sides of pan. This takes about 10 minutes.
  • Remove from heat, let cool slightly, and add vanilla.
  • Beat until right consistency to spread.
  • If it gets too thick add a little cream.
  • This will ice a 2 layer cake.

1 cup brown sugar, packed
1/4 cup cream or 1/4 cup milk
4 tablespoons butter
1 teaspoon vanilla
1/8 teaspoon salt
2 cups powdered sugar

Steps:

  • In a small pot on low heat, cook brown sugar, cream, and butter until sugar is dissolved, about 3 minutes. Transfer to a mixing bowl.
  • Add vanilla, salt and powdered sugar. Blend on low speed with an electric mixer, until all ingredients are incorporated.
  • Then blend on high speed for about 3-4 minutes or until icing becomes light, fluffy and slightly thickened (it will also be lighted in color.) The more you blend, the lighter and thicker the icing becomes.
  • Spread over cookies, cake or cupcakes. Makes enough icing for one 9- x 13-inch sheet cake.
