Time 1h16m

Number Of Ingredients 5

3 cups granular sucralose sweetener (such as Splenda®)
1 cup evaporated milk
¼ cup unsweetened cocoa powder
¼ cup peanut butter
¼ cup butter

Steps:

  • Line an 8-inch baking pan with aluminum foil. Clip a candy thermometer to the side of a saucepan.
  • Combine sweetener, evaporated milk, and cocoa powder in the saucepan. Bring to a boil. Reduce heat to medium; cook and stir until the thermometer registers 234 degrees F (112 degrees C) or until a small amount of syrup dropped in cold water forms a soft ball, 5 to 10 minutes. Stir in peanut butter and butter until melted, about 1 minute.
  • Pour mixture into the prepared pan. Chill until set, 1 to 2 hours. Cut into squares.

DIVINITY CANDY

Divinity Candy image

This quick and easy Divinity Candy recipe will have you making tasty truffles for every occasion. These old-fashioned sweets come together with just 6 ingredients!

Provided by Shelly

Categories     Dessert

Time 35m

Yield 40

Number Of Ingredients 6

2 egg whites, room temperature
2 1/4 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
1 1/2 teaspoons vanilla extract
1/2 cup chopped pecans

Steps:

  • Line a large baking sheet with parchment or wax paper. Set aside.
  • In the bowl of your stand mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff peaks form. Replace the whisk attachment for the paddle attachment and set aside.
  • In a medium, heavy bottom saucepan, combine the sugar, corn syrup and water over medium heat. Stir frequently until the mixture comes to a boil. Place a candy thermometer onto the side of the pot and allow to boil without stirring until the mixture reaches 260°F (hard ball stage). This will take 10-15 minutes. The mixture will still be light in color.
  • Remove the mixture from the heat and turn the mixer back onto high speed. Slowly pour in the hot candy mixture in a steady stream until all is added. Add in the vanilla. Allow this to mix on high for 6-8 minutes, until the mixture is thick and just loses its glossiness and holds its shape. If the mixture doesn't hold its shape when you pull the paddle attachment out, continue mixing until it does. You can also test this by scooping out a spoonful of the candy and placing it on the parchment paper. If it holds into a ball, it's ready.
  • Using a wooden spoon or rubber spatula, hand-stir the chopped pecans into the mixture.
  • Drop by heaping tablespoonful onto the lined baking sheet. You can spray your spoon or scoop with nonstick spray to help the mixture come off the spoon easier. Alternatively, you can line an 8×8 pan with parchment, coat it with nonstick spray and spread into the pan using an offset spatula.
  • Allow the candy to set up completely before cutting and/or serving.

DIVINITY CANDY

Divinity Candy image

This easy divinity candy recipe is made in one big pan, like fudge, instead of using the drop candy method. Make homemade divinity the easier way. Perfect for gifting!

Provided by Emily Grace

Categories     Dessert

Time 30m

Number Of Ingredients 6

3 cups granulated sugar
3/4 cup water
1/2 cup corn syrup
2 egg whites
1/2 tsp salt
1 tsp vanilla extract

Steps:

  • Butter a 9x9-inch pan and line with a parchment paper sling for ease of removal. Butter the parchment paper as well; set aside.
  • Combine sugar, water, and corn syrup in a heavy saucepan over medium heat. Continue cooking this mixture until the syrup reaches the firm ball stage, about 250° to 265°F on a candy thermometer. (It should be firm to the touch but still able to be flattened slightly when a small ball of syrup is dropped in cold water.)
  • While syrup is cooking, beat egg whites with salt until stiff.
  • Gradually add half the syrup to the egg whites, beating constantly.
  • Return the remaining syrup to the stove until boiling again, then gradually beat the remainder into the egg whites until dry (no longer shiny).
  • Beat in the vanilla just until combined.
  • Pour into prepared pan and allow to cool. Cut into squares when firm with a sharp, thin-bladed knife sprayed with cooking spray to make clean cuts.

OLD-FASHIONED DIVINITY CANDY

Old-Fashioned Divinity Candy image

This is a soft white candy made with light corn syrup.

Provided by Lisa H.

Categories     Desserts     Candy Recipes     Divinity Recipes

Time 50m

Yield 18

Number Of Ingredients 6

2 cups white sugar
½ cup light corn syrup
½ cup hot water
¼ teaspoon salt
2 egg whites
1 teaspoon vanilla extract

Steps:

  • In a heavy, 2 quart saucepan, combine the sugar, corn syrup, hot water, and salt. Cook and stir until the sugar dissolves and the mixture comes to a boil. Then cook to hard ball stage without stirring, 250 degrees F (120 degrees C.) Frequently wipe crystals forming on the sides of the pan, using a pastry brush dipped in water. Remove from heat.
  • Just as the syrup is reaching temperature, begin whipping egg whites: In a large glass or stainless steel mixing bowl, beat egg whites until stiff peaks form. Pour hot syrup in a thin stream over beaten egg whites, beating constantly with the electric mixer at medium speed. Increase speed to high, and continue beating for about 5 minutes. Add vanilla; continue beating until the mixture becomes stiff and begins to lose its gloss. If it is too stiff, add a few drops hot water.
  • Immediately drop by teaspoonfuls onto waxed paper. For a decorative flair, twirl the top with the spoon when dropping. Let stand until set. Store in an airtight container at room temperature.

  • In a large saucepan over medium heat, combine the granulated sugar, water, and corn syrup together, stirring occasionally, until a candy thermometer reads 260 degrees F, about 7-10 minutes.
  • Just before the corn syrup mixture reaches temperature, whip your egg whites in the bowl of a stand mixer until stiff peaks form, about 3-5 minutes. Sprinkle in the Jell-O powder & salt and beat again until incorporated.
  • With the mixer running on medium-low, slowly drizzle in the hot corn syrup mixture. This should take you a good minute or two as you want to incorporate it very slowly. Once the hot corn syrup mixture is fully in the mixing bowl, increase the mixing speed to medium-high and continue beating until the candy is no longer glossy and the candy holds its shape, about 6-10 minutes. You can absolutely test one scoop of the candy onto the parchment paper - if it holds up, it's ready.

  • Add the sugar, corn syrup, water, and salt to the pot. Bring to a boil. Once boiling, lower the heat a little if needed and watch the thermometer. When it reaches 260 degrees, remove the pot from heat.
  • Meanwhile, set out a stand mixer. Place the egg whites and cream of tartar in bowl of the mixer. Using the whip attachment, whip on high until a stiff meringue forms. Turn off the mixer.
  • Once the sugar mixture reaches 260 degrees F, turn the mixer on high. Hold the saucepot carefully with potholders and VERY SLOWLY pour the sugar syrup into the egg whites. Take your time to pour a slow thin stream so the sugar beats gently into the whites. Once all the syrup is in the mixer, add the vanilla extract and continue to beat another 5-10 minutes, until the mixture is white, and stiff enough to hold its shape when you lift it with a spoon.

  • Line 3 baking sheets with wax paper and set aside. In a 3.5 quart saucepan fitted with a candy thermometer, whisk together sugar, corn syrup and water. Heat over medium heat until sugar has dissolved, stirring occasionally. Increase heat to high and stop stirring. Continue cooking until candy thermometer reads 250 degrees F.
  • While the syrup mixture is heating, beat egg whites in a stand mixer until stiff peaks form. Once syrup has reached 250 degrees, slowly and carefully stream mixture into egg whites while mixer is still beating. You should be streaming for about 2 minutes. Add vanilla extract.
  • Let mix on medium speed for another 15-20 minutes, or until mixture is no longer shiny. If mixer and divinity mixture are still hot, turn off mixer and let rest 2-3 minutes every five minutes to give the mixture a chance to cool.
  • Divinity is ready when the mixture is no longer shiny and holds its shape when spooned onto wax paper. The mixture should not spread. Test a spoonful, and if it spreads, continue mixing.

  • In a heavy-bottomed saucepan over high heat, combine granulated sugar, light corn syrup, and water. Stir constantly as the sugar melts and the mixture starts boiling (meanwhile start beating the egg whites, more on this in step 2), and wait until the temperature reaches 260°F (126°C) which is the hard-ball stage. Remove from heat immediately.
  • A few minutes before the sugar mixture reaches the desired temperature, beat egg whites in a stand-mixer stiff peaks form. So both the whipped eggs, and the sugar mixture are ready at the same time.
  • Pour the sugar mixture in the egg whites as the stand-mixer is on high speed, in a steady slow stream until all of the sugar mixture is mixed in with the egg whites.

  • Line 2 baking sheets with wax or parchment paper. Place 2 smaller spoons and a knife on top (so it’s all ready to go) or grab a medium cookie scoop if you have one. Set aside near by.
  • In a large bowl of an electric mixer, add the egg whites and vanilla. Add the beater attachment and plug in the mixer so it’s ready to go.
  • In a large sauce pan, combine the sugar, karo syrup and water over medium heat. Bring to a boil and stir constantly so it doesn’t burn. If the sugar starts to come up on the edges, use a pastry brush dipped in hot water to wipe it down. Clip a candy thermometer to the pan.
  • While the mixture is boiling, start whipping the egg whites with vanilla in the mixing bowl. Beat until a stiff peak forms. Leave the beaters on as we’ll add the sugar mixture into this bowl.
