SUGARY APPLE FRITTERS
My kids love these fritters year-round, but I get even more requests in the fall when there are plenty of apples in season. I like to serve them as a special breakfast treat when they host friends for sleepovers. -Katie Beechy, Seymour, Missouri

Steps:
- In a large bowl, combine first five ingredients. Whisk eggs and water; add to dry ingredients just until moistened. Fold in apples. , In an electric skillet, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, in hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels. Roll warm fritters in sugar. Serve warm.

- In a large bowl, mix flour, salt and sugar. Pour in milk, a little at a time, stirring to make a smooth batter. Beat in eggs and lemon zest.
- Core and peel apples, then cut in wedges. Cut each wedge crosswise into thin slices. Toss apples in batter to coat.
- In a large skillet over medium heat, heat oil and butter. Drop fritter mixture by spoonfuls into pan and cook, turning once, until golden brown. Plate and sprinkle with sugar. Serve warm.

Best served warm, these fragrant, golden Apple Fritters are by turns tender, crisp, and fruity. A simpler (no-yeast) alternative to sufganiyot-the traditional jam-filled Jewish doughnut served during Hanukkah-the fritters are studded with diced sweet apples and generously dusted with confectioners' sugar. - In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, butter, and vanilla. Gently fold milk mixture into flour mixture until just combined. Fold in apples.
- Meanwhile, heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until a thermometer registers 350 degrees. Set a wire rack in a rimmed baking sheet.
- Working in batches, drop heaping tablespoons of dough into oil. (A small ice cream scoop works especially well for creating uniform-size fritters.) Cook, turning once, until puffed and golden, 3 to 4 minutes. Transfer to rack with a slotted spoon. Let cool slightly, dust with confectioners' sugar, and serve.
SWEET APPLE FRITTERS

- Whisk together the flour, confectioners' sugar, baking powder, cinnamon, allspice, salt and nutmeg in a large bowl. Pour in the cider and vanilla extract, and whisk to make a smooth batter.
- Preheat the oven to 200 degrees F.
- Pour enough oil into a heavy-bottomed soup pot so it comes about a third of the way up the sides. Heat the oil over medium heat until a deep-frying thermometer inserted in the oil registers 360 degrees F.
- Peel, core and slice the apples into rounds, about 1/3-inch thick. Put some flour in a shallow bowl. Working in batches, dust the apple slices in the flour, then dip in the batter to evenly coat. Carefully add to the oil. Fry, turning once, until golden and crisp, about 5 minutes. Transfer to a rack set on a baking sheet, and keep warm in the oven. Repeat the process until all of the apples are cooked, allowing the oil to return to 360 degrees F between batches.
- Dust with confectioners' sugar or cinnamon sugar and serve immediately.
SWEET APPLE FRITTERS
I grew up eating these apple fritters. They are shaped like a pancake and sprinkled in cinnamon-sugar. We always had this with dinner as a side dish. They are also easy to make for a crowd since you can fry them up in advance and then pop them into the oven just before dinner.

- In a large bowl, beat eggs with milk, salt and sugar.
- Add flour and baking powder to egg mixture and mix until smooth.
- Preheat oven to 325 degrees.
- Peel and core apples.
- Slice 1/4 to 1/2" thick so that they are shaped liked doughnuts with the core hole in the center of each slice.
- Squeeze lemon juice over apples.
- Heat oil in large skillet.
- Dip apples in batter and let excess drip off, then brown on each side in skillet.
- Lay on a cookie sheet in a single layer.
- Sprinkle with cinnamon sugar.
- Bake for 30 minutes or until soft.
