This vegetable lasagna recipe is a reader favorite! Tender vegetables, a light tomato sauce, and lots of cheese make this the best veggie lasagna ever. We really do not miss the meat. Feel free to add or substitute your favorite veggies. We have given suggestions in the article above.

14 lasagna noodles, see notes
2 tablespoons extra-virgin olive oil
1 cup (140 grams) chopped onion
1 tablespoon minced garlic, 3 to 4 cloves
1/8 teaspoon crushed red pepper flakes, or more to taste
2 medium zucchini, cut into 1/2-inch pieces
2 medium yellow squash, cut into 1/2-inch pieces
One (12-ounce) jar roasted red peppers, drained and cut into 1/2-inch pieces, 1 heaping cup
1 (28-ounce) can crushed tomatoes
Generous handful fresh basil leaves, chopped
One (15-ounce) container ricotta cheese or cottage cheese
2 large eggs
2 ounces (60 grams) parmesan cheese, grated, about 2/3 cup
8 ounces (230 grams) low-moisture mozzarella cheese, shredded, about 2 cups
Salt and fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil, then cook lasagna noodles according to package directions. To prevent the noodles from sticking after they are drained, add two teaspoons of olive oil to the pasta water. Drain, then lay flat on a sheet of aluminum foil.
  • Heat the oven to 350° Fahrenheit. Lightly oil a 13-inch by 9-inch baking dish or spray with non-stick cooking spray.
  • Heat the olive oil in a wide skillet with sides over medium heat.
  • Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
  • Add the garlic, red pepper flakes, zucchini, yellow squash, and a pinch of salt. Cook, stirring occasionally, until the veggies are softened but still have some crunch, another 5 to 8 minutes.
  • Stir in the roasted red peppers and crushed tomatoes. Bring to a low simmer and cook until the liquid has thickened and reduced by half, 5 to 8 minutes. Add the basil and season to taste with additional salt and pepper.
  • While the sauce cooks, stir the ricotta cheese, eggs, and a 1/2 teaspoon of salt in a medium bowl until blended.
  • Toss the parmesan cheese with the mozzarella. Set aside.
  • Spoon enough vegetable mixture into the baking dish to lightly cover the bottom (about 1 cup). Arrange four noodles lengthwise and side-by-side to cover the bottom. If the noodles are short on one end, you may need to cut an extra noodle and place it into the dish to cover where the other noodles have not.
  • Spread half of the ricotta cheese mixture over the noodles, then sprinkle a third of the parmesan and mozzarella cheeses on top of the ricotta. Finally, scatter a third of the vegetable sauce on top.
  • Add another layer of four noodles and spread the remaining ricotta cheese over them. Scatter half of the parmesan and mozzarella cheeses over the ricotta. Spread half of the remaining vegetable sauce on top.
  • Finish with a third layer of noodles and the remaining vegetable sauce. Finally, finish with the remaining cheese sprinkled all over the top.
  • Cover the lasagna with aluminum foil and bake for 20 minutes; uncover, then bake for 15 minutes until the cheese is crusty around the edges.
  • To make the cheese golden brown on top, slide the pan under the broiler and set to high heat for 1 to 2 minutes. Let rest 10 to 15 minutes before serving.

Roasted Spaghetti Squash with Red Pepper-Tomato Sauce image

1 medium spaghetti squash
3 large or 4 small red bell peppers
3 tablespoons olive oil
1 large red onion, chopped
3 cloves garlic, minced
1 - 28 oz. can diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 or 2 tablespoon(s) sherry vinegar
Pinch of red pepper flakes
Kosher salt
Freshly ground black pepper
Fresh basil, for garnish (optional)

Steps:

  • Place red bell peppers on a baking sheet and brush with 1 tablespoon of olive oil. Put in oven under broiler on low. Roast for about 10 - 15 minutes, turning occasionally, until peppers are charred all over. Remove from oven and place in a bowl covered with plastic wrap for at least 10 minutes. This will loosen the skins, making peeling the peppers a lot easier. Peel the peppers, remove seeds, and chop.
  • Preheat oven to 400°F. Cut your spaghetti squash in half with a large, sharp knife. Remove seeds and stringy guts, and brush the cut sides of the squash with 1 tablespoon of olive oil. Season with Kosher salt and freshly ground black pepper. Place spaghetti squash, cut side down, on a baking sheet and roast until tender, about 45-60 minutes.
  • To test if your squash is done, scrap the flesh with a fork. If the strands come off easily, it's done. Let the cooked spaghetti squash cool for about 5 minutes, then scrape all the flesh into a beautiful pile of spaghetti strands. Taste and season with some more Kosher salt and pepper if needed.
  • Meanwhile, in a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add onion and sauté until softened and slightly caramelized, about 5-7 minutes. Season with Kosher salt and a pinch of red pepper flakes. Add the garlic and cook for about 1 minute, stirring occasionally. Add in chopped roasted peppers, can of diced tomatoes, oregano, and basil. Season with Kosher salt and freshly ground black pepper. Simmer for about 10 minutes. Let cool a bit, then pour into a food processor or blender. Add a splash of sherry vinegar and purée until smooth. Taste and see if it needs more Kosher salt or sherry vinegar. Once you are happy with the sauce, return it to the pan, and keep warm over low heat until ready to serve.
  • When ready to serve: place roasted spaghetti squash strands in bowls and top with Roasted Red Pepper - Tomato Sauce. Garnish with some fresh basil, which although optional, I highly recommend.

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • On a baking sheet lined with parchment paper, add carrots, potatoes, yellow squash, and zucchini.
  • Drizzle with olive oil and season with salt, pepper, oregano, and garlic, and mix to evenly coat the coat the vegetables. *Note: You may need to quarter the potatoes if they are too thick so they roast faster.
  • Bake for 25-30 minutes, until the vegetables are golden brown.
  • Make the chimichurri dressing: combine the cilantro, parsley, garlic, salt, pepper, olive oil, lime juice, and red wine vinegar in a food processor and blend until smooth.
  • Add a large handful of greens to a large bowl. Top with the roasted vegetables and sliced radishes.
  • Pour over the chimichurri dressing and toss until evenly distributed.

1 package (16 ounces) pappardelle or tagliatelle pasta
1/4 cup olive oil
2 small zucchini, cut into thin ribbons
2 small yellow summer squash, cut into thin ribbons
4 garlic cloves, thinly sliced
2 cans (14-1/2 ounces each) diced tomatoes with roasted garlic, undrained
1/3 cup loosely packed basil leaves, torn
1 tablespoon coarsely chopped fresh rosemary
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, heat oil over medium-high heat. Add zucchini and yellow squash; cook and stir until crisp-tender, 3-4 minutes. Add garlic; cook 1 minute longer. Add tomatoes, basil, rosemary, salt and pepper flakes; heat through. Drain pasta; serve with zucchini mixture. If desired, top with additional basil.

2 red bell peppers
½ tablespoon olive oil
2 shallots, finely chopped
4 cloves garlic, minced
1 large yellow squash
2 large zucchinis
salt, to taste
pepper, to taste
1 ½ tablespoons cornstarch
red pepper flake, to taste
1 ½ cups milk
1 bunch fresh basil, roughly chopped

Steps:

  • Heat oven to 500°F (260°C).
  • Spiralize the yellow squash and zucchinis into a large bowl.
  • Bring a large skillet over medium heat and add olive oil.
  • Sauté shallots and garlic until golden brown and soft, about 2-3 minutes. Season with salt and pepper and stir. Remove from heat and set aside.
  • Quarter and deseed the red bell peppers and arrange onto a parchment paper-lined baking sheet.
  • Roast the red peppers until black and charred bits appear, about 25-30 minutes.
  • Carefully remove the red peppers from the oven and remove the charred black bits.
  • Transfer the roasted peppers to a blender and add salt, pepper, cornstarch, red pepper flakes, sautéed shallot and garlic, and milk. Blend on high speed until creamy. Set aside.
  • Heat a large skillet over medium heat.
  • Pour the pepper sauce in the skillet to thicken and simmer, about 2-3 minutes. Reduce heat to low and continue simmering.
  • Add the spiralized veggies and stir to coat, cooking for 2-3 minutes.
  • Add basil and stir, 2-3 minutes.
  • Serve with red pepper flakes and basil.
  • Enjoy!

3 c tomatoes diced (or 1 large can diced) with juice
1 bell pepper, diced
1 small onion, diced
1 medium yellow summer squash, diced
2 clove garlic, fine diced
1 large bay leaf
1 tsp Italian seasoning, dried
1/2 tsp oregano, dried
1/4 - 1/2 tsp crushed red pepper
1/8 tsp celery seed
1 jar(s) sliced mushrooms, drained (6 oz)
1/2 tsp parsley
3 - 4 Tbsp olive oil
salt & pepper, to taste
1/2 lb pasta shells, cooked and drained

Steps:

  • 1. Heat a large skillet until hot. Add olive oil.
  • 2. Then add diced onions and peppers. Sautee 2-3 minutes.
  • 3. Next, add garlic, diced squash, Italian seasonings, oregano, bay leaf, celery seed, crushed red pepper, salt, and pepper. Sautee 5-7 minutes until squash is tender.
  • 4. Add mushrooms; stir for a minute.
  • 5. Then add in tomatoes and juice.
  • 6. Bring to a boil, taste to see if you need more salt or pepper, then cover and reduce heat. Simmer 20 minutes.
  • 7. Add in a little of the pasta water and parsley. Bring to boil, stirring uncovered for 2-3 minutes.
  • 8. Toss with a hearty pasta like shells, penne, or ziti.
  • 9. Top with fresh grated Parmesan, if desired.
