8 ounces elbow macaroni, uncooked
2 cups shredded cheddar cheese
2 cups cottage cheese
8 ounces sour cream
1 cup diced cooked ham
3 tablespoons finely chopped onions
1 large egg, lightly beated
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup soft breadcrumbs
2 tablespoons butter or 2 tablespoons margarine, melted
1/4 teaspoon paprika

Steps:

  • Cook elbow macaroni accroding to package directions; drain wll and set aside.
  • Place macaroni and next 8 ingredients in a large bowl, stir gently to combine.
  • Spoon mixture into a lightly greased 2 quart baking dish.
  • Combine breadcrumbs, melted butter, and parika in a small bowl, stirring well.
  • Sprinkle breadcrumb mixture diagonally actoss top of casserole, making stripes.
  • Bake at 350 degrees for 30 to 40 minutes or until golden brown.

2 cups 4% cottage cheese
1 cup sour cream
1 large egg, lightly beaten
3/4 teaspoon salt
Garlic salt and pepper to taste
2 cups shredded sharp cheddar cheese
1 package (7 ounces) elbow macaroni, cooked and drained
Paprika, optional

Steps:

  • In a large bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper. Add cheddar cheese; mix well. Add macaroni and stir until coated. , Transfer to a greased 2-1/2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through. Sprinkle with paprika if desired.

3 tablespoons canola oil
1/4 cup minced shallots
1/4 cup minced celery
2 tablespoons instant flour
1 1/2 cups half-and-half, heated
1/2 cup dry white wine
1 cup mascarpone cheese
3/4 cup grated sharp white cheddar
1/2 cup grated Fontina
3/4 pound elbow or tube macaroni, cooked and well drained
Hot sauce
Coarse salt
1/4 cup freshly grated Parmesan, optional
3/4 cup bread crumbs

Steps:

  • Preheat oven to 350 degrees F. Generously grease a 2-quart casserole; set aside.
  • Heat the oil in a large nonstick saucepan over medium heat. Add the shallots and celery and saute for 5 minutes, or until the vegetables are very soft. Lower the heat and stir in the flour until well incorporated. Whisk in the hot half-and-half and then the wine. Cook, stirring constantly, for about 4 minutes, or until the mixture has begun to thicken. Remove from the heat and beat in the cheeses, stirring until they have melted into the sauce.
  • Stir in the macaroni and season, to taste, with hot sauce and salt. Pour the mixture into the prepared casserole.
  • If using the Parmesan, combine it with the bread crumbs in a small bowl. Sprinkle the bread crumbs over the macaroni. Bake for 15 minutes, or until the edges are bubbling and the top is golden. Serve hot.

to taste buttered bread crumb

Steps:

  • In a large bowl, combine the cottage cheese, sour cream, egg, salt, garlic salt and pepper.
  • Add cheddar cheese; mix well.
  • Add macaroni and stir until coated.
  • Transfer to a greased 2 1/2 quart baking dish.
  • Top with bread crumbs.
  • Bake, uncovered, at 350 for 25-30 minutes or until heated through.
  • Sprinkle with paprika if desired.

  • 2. BOIL MACARONI AS DIRECTED ON BOX,DRAIN PLACE IN BAKING DISH AND ADD SOUR CREAM STIR TILL MIXED
  • 3. PLACE 3TBS.BUTTER IN POT AND MELT, STIR IN THE FLOUR,COOK FEW MINUTES ADD SEASONING I USE CREOLE SEASONING.(PEPPER IS FINE)
  • 4. ADD 2CUPS MILK AND WHISK TILL FLOUR DISOLVES, REMOVE FROM HEAT AND ADD CHEESE FROM DELUXE MAC AND CHEESE RETURN TO HEAT AND WISK TILL CHEESE MELTS

2 cups elbow macaroni
2 1/2 quarts boiling water
1 tablespoon cooking oil (optional)
2 teaspoons salt
4 cups grated sharp cheddar cheese
10 ounces condensed cream of mushroom soup
10 ounces sliced mushrooms, drained
1 cup finely chopped onion
3/4 cup salad dressing (like mayo or Miracle Whip)
1/4 cup finely chopped green pepper
1/4 cup finely chopped red pepper (or pimiento)

Steps:

  • In large uncovered saucepan, cook macaroni in boiling water, oil, and salt until tender but firm, about 5-7 minutes. Drain and return macaroni to pot.
  • Add remaining ingredients. Mix and pour into a greased 2 1/2 quart casserole dish.
  • Bake uncovered at 350F for 30-40 minutes.
  • Note: top with more grated cheddar if you wish, or melted butter mixed with dry bread crumbs.
