BROOKLYN'S CORNIEST HOT DOGS

Ingredients

3 slices thick cut bacon, cut into small lardons
2 large onions, finely chopped
1 teaspoon kosher salt, divided
2 tablespoons canola oil
3 ears corn, kernels removed
1/2 teaspoon sugar
Freshly ground black pepper
1 tablespoon finely chopped fresh cilantro leaves
4 hot dogs (recommended: Boar's Head natural casing)
1 tablespoon piri-piri hot sauce (recommended: Mazi)
4 potato buns (recommended: Martin's)
4 tablespoons salted butter, melted
2 tablespoons mayonnaise (recommended: Kewpie)
2 tablespoons whole-grain mustard
1/4 cup grated Cotija cheese
Pinch cayenne pepper
1/2 lime, quartered

Steps:

Bacon:
Saute the lardons in a frying pan over medium heat until the fat is rendered and the bacon is crispy. Reserve the bacon lardons for garnish and reserve bacon fat for cooking the onions.
Caramelized onions:
Put the onions into the bacon fat, season with a 1/2 teaspoon of salt to draw out moisture and cook gently over medium heat until caramelized, about 20 minutes. Reserve.
Corn:
Put 2 tablespoons of canola oil in a hot pan over medium heat. When the oil starts to smoke, add the corn kernels 1/2 teaspoon of sugar, 1/2 teaspoon of kosher salt and freshly ground pepper, to taste. Saute over high heat until the corn starts to caramelize, stirring frequently. Remove from heat and add 1 tablespoon cilantro. Reserve for later.
Hot dogs:
Heat a grill to high. Put the hot dogs on the grill and sear until slightly charred. Brush lightly with hot sauce while still on the grill. Meanwhile, brush the inside of the buns with melted butter and arrange, butter side down, on the grill. Grill until lightly golden brown, about 30 seconds.
Assembly:
Thinly spread the mayonnaise and mustard on each bun. Put the hot dogs into the buns and sprinkle with a tablespoon of caramelized onions. Top with a tablespoon of lardons and 2 tablespoons of corn mixture. Sprinkle each with 1/2 tablespoon of Cotija cheese and a pinch of cayenne pepper. Squeeze a little lime on each hot dog and serve.

1 cup yellow cornmeal
1 cup all-purpose flour
¼ cup white sugar
4 teaspoons baking powder
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 cup whole milk
1 large egg
16 large hot dogs
4 cups vegetable oil for frying
16 skewers

Steps:

Combine cornmeal, flour, white sugar, baking powder, salt, and pepper in a bowl; stir in milk and egg until batter is smooth. Refrigerate until batter is chilled.
Bring a large pot of water to a boil; cook hot dogs until heated through, about 7 minutes. Let hot dogs rest for 10 minutes and dry hot dogs on a paper towel.
Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Insert 1 skewer into each hot dog.
Pour batter into a large drinking glass. Dip hot dogs into the batter until well coated.
Fry 2 to 3 hot dogs at a time in the hot oil until lightly browned, about 3 minutes. Drain on paper towels.

4 sausages (Classic Pork and Herb, Truffle and Mushroom)
2 tablespoons yellow mustard
1 1/2 cups apple juice
5 tablespoons cider vinegar
1 onion
3 tablespoons flour
1 teaspoon cayenne
2 teaspoons garlic powder
1 pinch salt
1 teaspoon cracked pepper
4 brioche hotdog buns
1 tablespoon mayonnaise
1 teaspoon raw horseradish
1 teaspoon Worcestershire sauce
1/2 lemon, juice of
1 teaspoon cracked black pepper

Steps:

Combine mustard, apple juice and 4 tablespoons of cider vinegar in a large bowl, as the marinade.
Slightly score the sausages, creating more surface area for the marinade. Marinade the sausages until coated or leave them overnight.
Set up the BBQ so it has hot heat on one side, medium heat in the middle then indirect heat on the other side.
Once they have marinated, place the hot dogs over the hot heat first and bunch them together so they hold each other in the same place. Wait until they have coloured (5 minutes), then place them over the indirect heat, close the lid and turn the outdoor grill into an outdoor oven and cook them all the way through (10-15 minutes).
Add vegetable oil to pan then thinly slice the onion. Add flour, a teaspoon of garlic granules, cayenne pepper, cracked pepper and some salt to a bowl and mix in the onions to coat.
Place the onions into the pan to fry.
For the Alabama white sauce, add mayonnaise, horseradish, Worcestershire sauce and remaining garlic and vinegar into a bowl and stir.
Toast the buns then assemble and serve.
