3 cups uncooked elbow macaroni
4 cups fresh broccoli florets
1/2 cup butter, cubed
3 tablespoons all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon salt
2 cans (12 ounces each) evaporated milk
2-1/2 cups shredded cheddar cheese, divided
1/2 cup crushed cornbread-flavored crackers (about 6 crackers)

Steps:

  • Cook macaroni according to package directions, adding broccoli during the last 3-4 minutes; drain. , In a large saucepan, melt butter. Stir in the flour, garlic powder, onion powder, pepper and salt until smooth; gradually stir in evaporated milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; stir in 2 cups cheese., Place half of the macaroni and broccoli in a greased 13x9-in. baking dish. Top with half of the cheese sauce. Repeat layers. Sprinkle with cracker crumbs and remaining cheese. , Bake, uncovered, at 375° until bubbly, 20-25 minutes.

8 ounces whole wheat pasta (about two cups uncooked pasta)
1 small red bell pepper, coarsely chopped (about 1 cup)
1 (24 ounce) bag frozen cut broccoli in cheese sauce (Green Giant frozen broccoli and three cheese sauce)
2 cups cooked boneless skinless chicken breasts, cubed
1/4 cup nonfat milk
1/8 teaspoon cayenne pepper (or more)
1/3 cup plain breadcrumbs
3 tablespoons parmesan cheese, shredded
1/2 teaspoon italian seasoning
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees.
  • Grease a 13-inch x 9-inch baking dish. Cook the pasta as directed on the package, adding the bell pepper during the last three minutes of cook time. Drain the pasta and return it to the saucepan.
  • Meanwhile, cook the broccoli and cheese sauce as directed on the package. Stir the cooked broccoli mixture, chicken, milk and cayenne pepper into the pasta. Pour the pasta mixture into the baking dish.
  • In a small bowl, stir together the bread crumbs, Parmesan cheese and Italian seasoning; stir in the olive oil using a fork. Sprinkle the bread crumb mixture over the top of the pasta mixture.
  • Bake for 15-20 minutes, or until the top is golden brown and the pasta is hot.

2 cups whole milk
1 cup chicken or vegetable broth
1/4 cup half-and-half
2 1/2 cups grated sharp Cheddar

1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a baking dish.
  • Bring a pot of water to a boil. Cook the macaroni according to the package instructions until still firm. Drain and set aside.
  • Meanwhile, melt the butter in a pot over medium heat. Add the celery, broccoli and onion and cook, stirring, until the vegetables soften, 4 to 5 minutes. Use a wooden spoon to mash some of the broccoli. Sprinkle on the flour and dry mustard and stir to coat the vegetables. Pour in the milk, broth and half-and-half and cook, stirring, to allow it to warm up.
  • Add the Cheddar, processed cheese, 1/2 cup of the Parmesan and some salt and pepper and stir to melt the cheese. Add the macaroni and stir. Taste and check for seasoning. Pour into the prepared baking dish. Combine the breadcrumbs and remaining 1/2 cup Parmesan in a small bowl and sprinkle over the dish. Bake until bubbly, about 25 minutes.
